It is named for that molten center, and it is also known as mi-cuit au chocolat, chocolat coulant , chocolate lava cake, or simply lava cake. It should not be confused with fondant au chocolat, a recipe that contains little flour, but much chocolate and butter, hence melting on the palate (but not on the plate). French chef Michel Bras said that he invented the cake in 1981, after two years of experimentation, with his original inspiration being a family group warming themselves up after a skiing trip by drinking hot chocolate. French chef and chocolatier Jacques Torres confirms that such a dessert existed in France in the 1980s. French chef Jean-Georges Vongerichten, for his part, said that he invented the dish in New York City in 1987. There are several myths concerning the tart's origin, but the most common is that Stéphanie Tatin, who did most of the cooking, was overworked one day. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples and quickly finishing the cooking by putting the whole pan in the oven. Damoiseau is a rhum agricole distillery located in Le Moule, Guadeloupe. It is one of five distilleries in the Guadeloupe archipelago, and the only one in the Grande-Terre region. It has roots back to the 19th century and was originally founded as an agricultural estate. Damoiseau is the leading rum producer in Guadeloupe, producing more than 8 million litres per year and exported to more than 40 countries worldwide. The Bellevue estate, upon which the Damoiseau distillery is built, was originally founded as a sugar plantation by the Rimbaud family of Martinique at the end of the 19th century, after the emancipation of slaves in the French colonies. The estate was purchased by Roger Damoiseau in 1942 and transformed into a rhum agricole distillery, and is currently run by Roger's grandson, Hervé Damoiseau. Damoiseau rhums are produced from sugar cane that is harvested and crushed on the same day before fermenting for 24–36 hours. It is distilled in a continuous column still to between 86% and 88% alcohol, and then aged in charred oak barrels previously used for aging bourbon. After aging for six months or more than six years, the rum is diluted with local spring water to a consistent commercial proof and bottled.

The drink was introduced from the Indian subcontinent to England by employees of the East India Company in the late 17th century. Punch is usually served at parties in large, wide bowls, known as punch bowls. In the United States, federal regulations provide the word "punch" to describe commercial beverage products that do not contain fruit or fruit juice. The term is used to label artificially flavored beverages, with or without natural flavorings, which do not contain fruit juice or concentrate in significant proportions. Thus a product labeled as "fruit punch" may contain no fruit ingredients at all. The Guadeloupe Bonifieur is a variety of coffee grown in Guadeloupe. Guadeloupe Bonifieur is the ancestor of Jamaican Blue Mountain Coffee[citation needed] and is very rare. The fresh air, high altitude, and abundance of rain create ideal conditions for growing this Arabica variety. The variety is called Guadeloupe Bonifieur because of its high quality and great taste[citation needed], and because, in the past, it was used to enhance lower quality blends. Connoisseurs consider it one of the best coffees in the world, even though it is only available from a few distributors. The name Bonifieur comes from the French "to improve", and is derived from the coffee's enhancing qualities[citation needed]. The Guadeloupe Bonifieur is considered by connoisseurs as "one of the best coffees in the world"[citation needed]. Nevertheless, there is no official definition of the Bonifieur[citation needed]. Producers refuse to establish a product characterisation[citation needed] because of the extreme diversity of cultural techniques and inconsistent quality[citation needed]. Some historians even have different version of the name's origin[citation needed]. According to some, the producers would keep the Guadeloupe Habitant, of superior quality[citation needed], for themselves and the rest, of lesser quality was exported. According to others, the “café bonifieur” was of better quality, therefore was exported.[citation needed] Guadeloupe Bonifieur is notorious for its mystery, as some claim it to be mythical. The French Revolution, and coffee diseases decreased the plantation[citation needed]. In 1859, only 2009 hectares remained[citation needed]. The Grande Riviere valley only accounted for 6 great estates then: Loiseau, Vitalis, Sainte – Anne, Beausejour, La Grivelière, Barthole[citation needed]. The French colony used to export 6000 tons of coffee to mainland France at the end of the 17th century under the name “cafe bonifieur”[citation needed]. However, the increase in taxes due to the Blocus in early 18th century reduced the export to 1000 tons[citation needed]. Heavy competition damaged the coffee industry, and the production decreased to 225 tons during the 18th century[citation needed]. Coffee still dominated the landscape in the early 20th century, but new diseases like the yellow rust, and a 1928 hurricane, destroyed this failing production[citation needed]. The banana tree, primarily used to protect the coffee trees, recovered quicker and developed at the expense of coffee trees.[citation needed] After the war, the rural exodus broke the growth that took place where the export volume increased by 25%[citation needed]. Altitude plantations were progressively abandoned[citation needed], the plots were concentrated in the piedmonts, and coffee was not mentioned in the agricultural statistics after 1965[citation needed]. Some dynamic producers revived the culture, with economic plans and identity assertion in the zone[citation needed]. They leaned on the patrimonial value of the “cafe bonifieur”: its reputation, typicality and history.[citation needed]

Mauby, also known as madi, maví, mobi, mabi, and maubi, is a tree bark-based beverage grown, and widely consumed, in the Caribbean. It is made with sugar and the bark and/or fruit of certain species in the genus Colubrina including Colubrina elliptica and Colubrina arborescens, a small tree native to the northern Caribbean and south Florida. Recipes usually include other ingredients as well, spices such as aniseed being very common. Mauby was traditionally a fermented beverage made in small batches, but is now predominantly a commercial non-fermented soft drink. Haiti and the Dominican Republic are two of the largest Caribbean exporters of the bark and leaves. Often the drink is fermented using a portion of the previous batch, while sometimes it is consumed unfermented. Mauby is often bought as a pre-made syrup and then mixed with water to the consumer's taste, but many make it themselves at home or purchase it from neighbourhood producers or street sellers. Its taste is initially sweet, somewhat like root beer, but changes to a prolonged, but not astringent bitter aftertaste. To many, it is an acquired taste, and has been known to cause an initial laxative reaction unexpected to many first-time drinkers. In Puerto Rico the drink is also called mavi champán (champagne mauby) because the drink is fermented, causing it to foam. This process is made by mixing an older batch with a new batch. Mauby bark and leaves are boiled with ginger, avocado leaves, brown sugar and other spices. The drink is then placed in a tight sealed bottle and left out in the sun for 6-8 hours. The drink is then placed in a dark cool place left to ferment up to a week. Ginger has a significant role in the fermentation process.

Planter's punch is an IBA Official Cocktail made of Jamaican rum, fresh lime juice, and sugar cane juice. The cocktail originated in Jamaica. The September 1878 issue of the London magazine Fun listed the recipe as follows:

Rum is a liquor made by fermenting and then distilling sugarcane molasses or sugarcane juice. The distillate, a clear liquid, is often aged in barrels of oak. Rum originated in the Caribbean in the 17th century, but today it is produced in nearly every major sugar-producing region of the world. Rums are produced in various grades. Light rums are commonly used in cocktails, whereas "golden" and "dark" rums were typically consumed straight or neat, iced , or used for cooking, but are now commonly consumed with mixers. Premium rums are made to be consumed either straight or iced.

The term punch refers to a wide assortment of drinks, both non-alcoholic and alcoholic, generally containing fruits or fruit juice. The drink was introduced from the Indian subcontinent to England by employees of the East India Company in the late 17th century. Punch is usually served at parties in large, wide bowls, known as punch bowls. In the United States, federal regulations provide the word "punch" to describe commercial beverage products that do not contain fruit or fruit juice. The term is used to label artificially flavored beverages, with or without natural flavorings, which do not contain fruit juice or concentrate in significant proportions. Thus a product labeled as "fruit punch" may contain no fruit ingredients at all. The word is commonly said to come from from Hindi पाँच , meaning "five", as the drink was frequently made with five ingredients: alcohol, sugar, juice from either a lime or a lemon, water, and spices, or milk, curd, butter, honey, sugar. That etymology traces to John Fryer's A New Account of East India and Persia, in Eight Letters (1698), but there is no evidence of a drink called pāñch in India, or elsewhere, before the English word. Besides, the English word is now known to have been in use before the British became regulars to India.

In terms of mixed drinks, shrub is the name of two different, but related, acidulated beverages. One type of shrub is a fruit liqueur that was popular in 17th and 18th century England, typically made with rum or brandy and mixed with sugar and the juice or rinds of citrus fruit. The word shrub can also refer to a cocktail or soft drink that was popular during America's colonial era, made by mixing a vinegared syrup with spirits, water, or carbonated water. The term can also be applied to the base, a sweetened vinegar-based syrup from which the cocktail is made; that syrup is also known as drinking vinegar. Drinking vinegar is often infused with fruit juice, herbs and spices, for use in mixed drinks. The early English version of the shrub arose from the medicinal cordials of the 15th century. The drink gained popularity among smugglers in the 1680s trying to avoid paying import taxes for goods shipped from mainland Europe: To avoid detection, smugglers would sometimes sink barrels of spirits off-shore to be retrieved later; the addition of fruit flavours aided in masking the taste of alcohol fouled by sea water. [unreliable source?] An early Rum Shrub recipe from The English and Australian Cookery Book called for almonds, cloves, cassia, and the peel of oranges, "infused in the best rum," with the addition of a thread of ambergris and vanilla. "Good shrub is very delicious, and were it fashionable it would obtain rank as a liqueur."

Ti' punch literally meaning "small punch", is a rum-based mixed drink that is especially popular in Martinique, Guadeloupe, Saint Martin, Haiti, French Guiana, Réunion, and other French-speaking Caribbean islands. It is also the national cocktail of Martinique and Guadeloupe. It is very similar to the daiquiri, which is usually identified with Cuba, and the caipirinha, identified with Brazil. The ti' punch is distinguished from these by its use of rhum agricole, and by typically having less lime juice. The drink is traditionally made with white rhum agricole, lime, and cane syrup. While aged rhum agricole can be used in place of white rhum agricole, other fruit flavors may be added on top of the lime, and sugar may be substituted for cane syrup, a Ti' punch can only be made with rhum agricole. Ti' punch is usually served as an apéritif. A popular tradition is that of chacun prépare sa propre mort ("each prepares their own death"), in which the bartender or host provides glassware, syrup, limes, and rum but does not prepare the drink so that each drinker may build their own to their taste. Ti' punch predates the wide availability of ice in the Caribbean, and both the traditional neat and contemporary iced preparation are prevalent today.

Blanquette de veau is a French veal stew. In the classic version of the dish the meat is simmered in a white stock and served in a sauce velouté enriched with cream and egg. It is among the most popular meat dishes in France. The Oxford Companion to Food describes "blanquette" as "a French and to some extent international culinary term indicating a dish of white meat (veal, poultry, also lamb) served in a white sauce". In Larousse Gastronomique, Prosper Montagne's definition is "the French term for a ragout of white meat (veal, lamb or poultry) cooked in a white stock or water with aromatic flavourings".[n 1] Simone Beck, Louisette Bertholle and Julia Child in their Mastering the Art of French Cooking describe blanquette de veau, as "a much-loved stew in France … veal simmered in a lightly seasoned white stock … served in a sauce velouté made from the veal cooking stock and enriched with cream and egg yolks". In 2007 Anne Willan wrote that French television had recently conducted a poll of favourite meat dishes in which "Blanquette de veau was in the top five, with steak frites and gigot d'agneau [leg of lamb]".

Beef bourguignon or bœuf bourguignon ( UK: /ˌbɜːf ˈbɔːrɡɪn.jɒ̃/; French: [bœf buʁɡiɲɔ̃]), also called beef Burgundy, and bœuf à la Bourguignonne, is a French beef stew braised in red wine, often red Burgundy, and beef stock, typically flavored with carrots, onions, garlic, and a bouquet garni, and garnished with pearl onions and mushrooms. A similar dish using a piece of braised beef with the same garnish is pièce de bœuf à la bourguignonne. "Bourguignon" is, since the mid-nineteenth century, a culinary term applied to various dishes prepared with wine or with a mushroom and onion garnish. It is probably not a regional recipe from Burgundy. When made with whole roasts, the meat was often larded.

Bokit is a Guadeloupean sandwich fried in a saucepan with hot sunflower oil. It is essentially composed of flour, water, salt and bicarbonate or yeast. This typical Guadeloupean food started to develop in the mid-19th century after the abolition of slavery. At this time, the poorest workers could not even buy some of the basic products such as bread. As they were good observers and resourceful, they had the idea to adapt and produce a bread by themselves, without yeast at this time, and cooked in a saucepan with hot oil that they used to call "kettle bread" because of the vapor going out of it.

Bouillon is a Haitian soup. This name comes from the French verb bouillir, meaning to boil. It is made with sliced meat, potatoes, sliced plantains, yam, spinach, watercress, cabbage, and celery (other ingredient variations exist), and cooked as a mildly thick soup.

Callaloo is a plant used in popular dishes in many Caribbean countries, while for other Caribbean countries, a stew made with the plant is called callaloo. Cuisines, including the plant callaloo or dishes called callaloo, vary throughout the Caribbean. In countries such as Trinidad and Tobago or Grenada, the dish itself is called callaloo and uses taro leaves (known by many local names such as 'dasheen bush', 'callaloo bush', or 'bush') or Xanthosoma leaves (known by many names, including cocoyam and tannia). Since the leaf vegetable used in some regions differs, some confusion can arise among the vegetables with the dish itself. This, as is the case with many other Caribbean dishes, is a remnant of West African and Taino cuisine. There are two possible etymological origins for the word. The first deriving from Tupi caárurú, meaning thick leaf. The other being from Kimbundu kalulú referring to okra, similar to the present use of the word in Haitian Creole and São Tomean Portuguese.

An octopus is a soft-bodied, eight-limbed mollusc of the order Octopoda (/ɒkˈtɒpədə/, ok-TOP-ə-də). The order consists of some 300 species and is grouped within the class Cephalopoda with squids, cuttlefish, and nautiloids. Like other cephalopods, an octopus is bilaterally symmetric with two eyes and a beaked mouth at the centre point of the eight limbs.[b] The soft body can radically alter its shape, enabling octopuses to squeeze through small gaps. They trail their eight appendages behind them as they swim. The siphon is used both for respiration and for locomotion, by expelling a jet of water. Octopuses have a complex nervous system and excellent sight, and are among the most intelligent and behaviourally diverse of all invertebrates. Octopuses inhabit various regions of the ocean, including coral reefs, pelagic waters, and the seabed; some live in the intertidal zone and others at abyssal depths. Most species grow quickly, mature early, and are short-lived. In most species, the male uses a specially adapted arm to deliver a bundle of sperm directly into the female's mantle cavity, after which he becomes senescent and dies, while the female deposits fertilised eggs in a den and cares for them until they hatch, after which she also dies. Strategies to defend themselves against predators include the expulsion of ink, the use of camouflage and threat displays, the ability to jet quickly through the water and hide, and even deceit. All octopuses are venomous, but only the blue-ringed octopuses are known to be deadly to humans.

The chicken is a large and round short-winged bird, domesticated from the red junglefowl of Southeast Asia around 8,000 years ago. Most chickens are raised for food, providing meat and eggs; others are kept as pets or for cockfighting. Chickens are common and widespread domestic animals, with a total population of 26.5 billion as of 2023[update], and an annual production of more than 50 billion birds. A hen bred for laying can produce over 300 eggs per year. There are numerous cultural references to chickens in folklore, religion, and literature.

The coconut crab is a terrestrial species of giant hermit crab, and is also known as the robber crab or palm thief. It is the largest terrestrial arthropod known, with a weight of up to 4.1 kg (9 lb). The distance from the tip of one leg to the tip of another can be as wide as 1 m (3 ft 3 in). It is found on islands across the Indian and Pacific Oceans, as far east as the Gambier Islands, Pitcairn Islands and Caroline Island and as far west as Zanzibar. While its range broadly shadows the distribution of the coconut palm, the coconut crab has been extirpated from most areas with a significant human population such as mainland Australia and Madagascar. The coconut crab is the only species of the genus Birgus, and is related to the other terrestrial hermit crabs of the genus Coenobita. It shows a number of adaptations to life on land. Juvenile coconut crabs use empty gastropod shells for protection like other hermit crabs, but the adults develop a tough exoskeleton on their abdomens and stop carrying a shell. Coconut crabs have organs known as branchiostegal lungs, which they use for breathing instead of their vestigial gills. After the juvenile stage, they will drown if immersed in water for too long. They have an acute sense of smell which they use to find potential food sources, and which has developed convergently with that of insects.

Conch is a common name of a number of different medium-to-large-sized sea snails. Conch shells typically have a high spire and a noticeable siphonal canal (in other words, the shell comes to a noticeable point on both ends). Conches that are sometimes referred to as "true conches" are marine gastropods in the family Strombidae, specifically in the genus Strombus and other closely related genera. For example, Lobatus gigas, the queen conch, is a true conch. True conch are identified by their long spire.

In cooking, a consommé is a type of clear soup made from richly flavoured stock or broth that has been clarified, a process that uses egg whites to remove fat and sediment. Consommé has three English pronunciations: traditionally in the UK, the stress is on the middle syllable; in modern UK English, the stress is on the first; and in the US the stress is on the last. A large amount of meat only yields a small amount of consommé; in some recipes, as much as 500 grams of meat can go into a single 250-millilitre (9 imp fl oz; 8+1⁄2 US fl oz) serving. This low yield is part of what has traditionally given consommé its refined reputation as an expensive dish.[citation needed]

Court-bouillon or court bouillon is a quickly-cooked broth used for poaching other foods, most commonly fish or seafood. It is also sometimes used for poaching vegetables, eggs, sweetbreads, cockscombs, and delicate meats. It includes seasonings and salt but lacks animal gelatin. Court bouillon loosely translates from French as "short broth" because the cooking time is brief in comparison with a rich and complex stock, and generally is not served as part of the finished dish. Because delicate foods do not cook for very long, it is prepared before the foods are added. Typically, cooking times do not exceed 60 minutes. Although a court bouillon may become the base for a stock or fumet, in traditional terms it is differentiated by the inclusion of acidulating ingredients such as wine, vinegar, or lemon juice. In addition to contributing their own flavor, acids help to draw flavors from the vegetable aromatics during the short preparation time prior to use. Court bouillon also includes salt and lacks animal gelatin.

Crabs are decapod crustaceans of the infraorder Brachyura , which typically have a very short projecting tail-like abdomen, usually hidden entirely under the thorax.[a] They live in all the world's oceans, in freshwater, and on land. They are generally covered with a thick exoskeleton. They generally have five pairs of legs, and they have pincer claws on the ends of the frontmost pair. They first appeared during the Jurassic period, around 200 million years ago. Crabs are generally covered with a thick exoskeleton, composed primarily of highly mineralized chitin. Behind their pair of chelae (claws) are six walking legs and then two swimming legs. The crab breathes through gills on its underside; gills must be at least moist to work.

A crêpe or crepe is a dish made from unleavened batter or dough that is cooked on a frying pan or a griddle. Crêpes are usually one of two varieties: sweet crêpes (crêpes sucrées) or savoury galettes (crêpes salées). They are often served with a wide variety of fillings such as cheese, fruit, vegetables, meats, and a variety of spreads. Crêpes can also be flambéed, such as in crêpes Suzette. The French term "crêpe" derives from crispa, the feminine version of the Latin word crispus, which means "curled, wrinkled, having curly hair."

Chicken curry or curry/curried chicken is a South Asian dish originating from the Indian subcontinent. It is common in the cuisine of the Indian subcontinent, Caribbean, Southeast Asia, Great Britain, and South Africa. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce, and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

Daube is a French slow-cooked stew, usually of beef, but other meat is sometimes used. The best-known is the bœuf en daube à la provençale, a Provençal stew made with cheaper cuts of beef braised in wine, with vegetables, garlic and herbs, and traditionally cooked in a daubière–a braising pot. The Oxford English Dictionary defines a daube as "A braised meat (usually beef) stew with wine, spices, etc". In The Oxford Companion to Food, Philip and Mary Hyman note that the word is a French culinary term indicating both a method of cooking and a type of dish. The Dictionnaire de l'Académie française dates the word to the 16th century, and says that it derives from the Occitan dobba, a marinade. In the 18th century, daubes were a specialty of the French town of Saint-Malo. The Hymans comment that there were many different types: "artichokes en daube, celery, pork cutlets, goose— all these and many other foodstuffs besides were prepared en daube". Most were made to be eaten cold. Daubes remained popular in 19th-century France, but by then, they were nearly always meat dishes, usually beef, eaten hot. By the end of the 20th century, the term was largely confined to bœuf en daube. The dish came to be seen as rustic and old-fashioned, and the copper pots—daubières—in which it was traditionally cooked became "a curiosity in antique markets".

Flammekueche , Flammkuchen (Standard German), or tarte flambée (French), is a speciality of the region of Alsace, German-speaking Moselle, Baden and the Palatinate. It is composed of bread dough rolled out very thinly in the shape of a rectangle or oval, which is covered with fromage blanc or crème fraîche, thinly sliced onions and lardons. The name of the dish varies in local dialects; it is called Flàmmeküeche, or Flàmmaküacha in Alsatian, or Flammkuche in Lorraine Franconian – compare (Standard) German Flammkuchen. All these names translate as "pie baked in the flames". Contrary to what the direct translation would suggest, tarte flambée is not flambéed but is cooked in a wood-fired oven.

Fricassee or fricassée /ˈfrɪkəsiː/ is a stew made with pieces of meat that have been browned in butter then served in a sauce flavored with the cooking stock. Fricassee is usually made with chicken, veal or rabbit, with variations limited only by what ingredients the cook has at hand. Fricassee is first attested in English in the mid-16th century. It is a word of French origin, although the exact etymology is unclear. It is theorized to be a compound of the French frire and casser or quasser (to break in pieces). By the general description of frying and then braising in liquid, there are recipes for fricassee as far back as the earliest version of the medieval French cookbook Le Viandier, circa 1300. In 1490, it was first referred to specifically as friquassée in the print edition of Le Viandier.

Game or quarry is any wild animal hunted for animal products , for recreation ("sporting"), or for trophies. The species of animals hunted as game varies in different parts of the world and by different local jurisdictions, though most are terrestrial mammals and birds. Fish caught non-commercially (recreational fishing) are also referred to as game fish. The range of animal species hunted by humans varies in different parts of the world. This is influenced by climate, faunal diversity, popular taste and locally accepted views about what can or cannot be legitimately hunted. Sometimes a distinction is also made between varieties and breeds of a particular animal, such as wild turkey and domestic turkey. The flesh of the animal, when butchered for consumption, is often described as having a "gamey" flavour. This difference in taste can be attributed to the natural diet of the animal, which usually results in a lower fat content compared to domestic farm-raised animals. In some countries, game is classified, including legal classifications with respect to licenses required, as either "small game" or "large game". A single small game licence may cover all small game species and be subject to yearly bag limits. Large game are often subject to individual licensing where a separate permit is required for each individual animal taken (tags).

Goat meat is the meat of the domestic goat . The term 'goat meat' denotes meat of older animals, while meat from young goats is called 'kid meat'. In South Asian cuisine, goat meat is called mutton, along with sheep meat. The culinary name "chevon", a blend of chèvre "goat" in French and mouton "sheep" in French, was coined in 1922 and selected by a trade association; it was adopted by the United States Department of Agriculture in 1928,: 19  however the term never caught on and is not encountered in the United States. "Cabrito", a word in Spanish and Portuguese, is the meat of a young, milk-fed goat. It is also known as chivo meat. Goat meat is both a staple and a delicacy in the world's cuisines. The cuisines best known for their use of goat include African cuisine, Middle Eastern, Indian, Indonesian, Nepali, Bangladeshi, Pakistani, Abruzzese, Mexican, Caribbean (Jamaica), Haitian cuisine, Dominican cuisine and Ecuadorian. Cabrito, which is baby goat, is a typical food of Monterrey, Nuevo León, Mexico; in Italy it is called "capretto". Goat meat can be prepared in a variety of ways, such as being stewed, curried, baked, grilled, barbecued, minced, canned, fried, or made into sausage. Goat jerky is another popular variety.

Okra , Abelmoschus esculentus, known in some English-speaking countries as lady's fingers, is a flowering plant in the mallow family native to East Africa. Cultivated in tropical, subtropical, and warm temperate regions around the world for its edible green seed pods, okra is featured in the cuisines of many countries. The species is a perennial, often cultivated as an annual in temperate climates, often growing to around 2 metres (6 ft 7 in) tall. As a member of the Malvaceae, it is related to such species as cotton, cocoa, and hibiscus. The leaves are 10–20 centimetres (4–8 in) long and broad, palmately lobed with 5–7 lobes. The flowers are 4–8 cm (1+5⁄8–3+1⁄8 in) in diameter, with five white to yellow petals, often with a red or purple spot at the base. The pollen grains are spherical and approximately 188 microns in diameter. The fruit is a capsule up to 18 cm (7 in) long with pentagonal cross-section, containing numerous seeds.
