Originating from the Indian subcontinent, it is sometimes compared with the Parsi dish akuri. The Parsi dish Akoori or Akuri is very similar to egg bhurji with a few differences. Just like bhurji, akuri is filled with many aromatics like ginger, onion and other spices. However, bhurji eggs are cooked until dry, whereas akoori eggs are cooked less while still runny. The difference lies in its preparation and addition of sautéed chopped onions, chilies and optional spices. Ful medames , or simply fūl, is a stew of cooked fava beans served with olive oil, cumin, and optionally with chopped parsley, garlic, onion, lemon juice, chili pepper and other vegetables, herbs, and spices. Ful medames is traditionally made in and served out of a large metal jug. It is notably a staple food in Sudan and Egypt and is considered a national dish, especially in the northern cities of Cairo and Gizah.[citation needed] Fava beans can also sometimes be found in other cuisines in the Middle East, and Africa, though cooked differently. The name of this culinary dish is transcribed fūl medammis, ful medammes, foul mdammes, etc. Some modern dictionaries suggest that its Coptic name is ⲫⲉⲗ phel or fel, but this is a term derived from Arabic (after the Arabization of Egypt). Masala dosa is a dish of South India originating in the town of Udupi, Karnataka. While there is variation in the recipe from town to town, the basic recipe typically starts with a fermented batter of parboiled rice, poha, and various legumes (black gram, pigeon peas, chickpeas), and incorporates various spices for flavour, such as fenugreek and dry red chilli. Traditionally served with potato curry, chutneys, and sambar, it is a common breakfast item in South India, though it can also be found in many other parts of the country and overseas. One common variant is the paper masala dosa, which is made with a thinner batter, resulting in a crisper, almost paper-thin final product. The dosa is made by soaking rice and lentils overnight in water and then grinding them into a batter. The batter is fermented overnight. References to paratha have also been mentioned by Nijjar (1968), in his book Panjāb under the Sultāns, 1000–1526 AD when he writes that parathas were common with the nobility and aristocracy in the Punjab.

Pongal is a South Indian and Sri Lankan dish of rice cooked in boiling milk. Its preparation is the main custom associated with the Pongal festival. It is also eaten as a breakfast food. A part of Tamil cuisine, varieties include venn (hot) pongal, sakkarai (sweet) pongal, kozhi (chicken) pongal, and sanyasi pongal. It has been described as "very dear to (the) Tamil people." Pongal is associated with the Pongal festival, whose name means "to boil over" or "overflow." The festival thanks the Sun deity for the sunlight that makes the rice harvest possible. Therefore, the tradition calls for offering the fresh harvest of rice cooked in boiling milk to the deity. While the pongal is cooking, onlookers sometimes shout with joy, "Pongalo pongal!" ('Let the pongal rise up!').

Shakshouka , also spelled shakshuka or chakchouka, is a Maghrebi dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion, and garlic, commonly spiced with cumin, paprika and cayenne pepper. Shakshouka is a popular dish throughout North Africa and the Middle East. Shakshuka is a word for "mixture" in Algerian Arabic and "mixed" in Tunisian Arabic. The Oxford English Dictionary describes it as being of multiple origins, an onomatopoeic Maghribi Arabic word, related to the verb shakshaka meaning "to bubble, to sizzle, to be mixed up, to be beaten together," and the French word Chakchouka, which was borrowed into English in the nineteenth century. Chakchouka was borrowed into French from Algerian Arabic. Gil Marks, while noting some similarities with the Ottoman dish menemen, suggests that shakshouka evolved from şakşuka which spread to the Maghreb through the influence of the Ottoman Empire. Anthony Buccini noted similarities between a wider range of vegetable stews. He and Noam Sienna conclude that both shakshouka and menemen, among other dishes like piperade and ratatouille, are members of a wider family of vegetable stews of common ancestry appearing throughout the western Mediterranean.

Athrasa in Kannada , or Adhirasam (Tamil: அதிரசம்), kajjaya ariselu in Telugu, anarasa in Marathi, Airsa in Chhattisgarhi or Arisa pitha in Odia) is a type of Indian sweet made out of rice, jaggery, ghee and sometimes coconut and with spices like cardamom, sesame, pepper and ginger powder from Tamil cuisine, Karnataka cuisine, Telugu cuisine, Marathi cuisine and Odia cuisine. The doughnut-like fried dough has a long history of popularity in Kannada, Telugu, Maharashtra, Chhattisgarh, Odisha, and Tamil civilization. They are similar in shape to vada, but are not savoury and are eaten as a sweet. Athrasa is a popular as an offering to the relatives during Deepavali and Ganesha Chaturthi festivals, both at home and in temples in Tamil Nadu and Karnataka.

The ensaïmada is a pastry product from Mallorca, Balearic Islands, Spain, commonly found in southwestern Europe, Latin America and the Philippines. The ensaïmada de Mallorca is made with strong flour, water, sugar, eggs, mother dough and a kind of reduced pork lard which gives the pastry its name. The handmade character of the product makes it difficult to give an exact formula, so scales have been established defining the proportion of each ingredient, giving rise to an excellent quality traditional product. The first written references to the Mallorcan ensaïmada date back to the 17th century. A falooda is a Mughlai cold dessert made with vermicelli. It has origins in the Persian dish faloodeh, variants of which are found across West, Central, South and Southeast Asia. Traditionally it is made by mixing rose syrup, vermicelli, and sweet basil seeds with milk, often served with ice cream. The vermicelli used for preparing falooda is made from wheat, arrowroot, cornstarch, or sago. The origin of falooda goes back to Iran , where a similar dessert, faloodeh, is still popular. The dessert came to late Medieval India with the many Central Asian dynasties that invaded and settled in South Asia in the 16th to 18th century. The present form of falooda was developed in the Mughal Empire and spread with its conquests. The Persianate rulers who succeeded from the Mughals patronized the dessert with their own adaptations, specifically in Hyderabad Deccan and the Carnatic areas of present-day India. This beverage is now a part of Pakistani cuisine, Afghan cuisine, Burmese cuisine, Indian cuisine, Bangladeshi cuisine and Sri Lankan cuisine and is served on weddings and other occasions. In Sri Lanka, Falooda (ෆලුඩා / ஃபலூடா) is often consumed as a popular dairy refreshment.

The Turkish name for the dish, lokma, is derived from the Arabic, as is the Greek name loukoumádes (λουκουμάδες). The recipe for Luqmat al-Qadi, yeast-leavened dough boiled in oil and doused in honey or sugar syrup with rosewater, dates back to at least the early medieval period and the 13th-century Abbasid Caliphate, where it is mentioned in several of the existent cookery books of the time. It is also mentioned in the One Thousand and One Nights, in the story The Porter and the Three Ladies of Baghdad. The explorer and scholar Ibn Battuta in the 14th century encountered the dish he knew as Luqaymat al-Qadi at a dinner in Multan, during his travels in medieval India, where his hosts called it al-Hashimi.

The earliest known recipe for the dish comes from a 10th-century Arabic cookbook and was originally made by pouring the batter through a coconut shell. The earliest known recipes for zalabiya comes from the 10th century Arabic cookbook Kitab al-Tabikh. In the old Al-Baghdadi book of recipes of the Arabs; the dough was poured through a coconut shell. This style of fritter is similar to the Indian jelabi and a 16th-century recipe from German cuisine for strauben made using a funnel.

Om Ali, Omali, Umm Ali, or Oumm Ali , meaning "Mother of Ali", is a traditional Egyptian dessert, and is a national dessert of Egypt. There are numerous variations with different composition. The dish, which is traced back to as far as Medieval Egypt, is named after the wife of the Sultan of Egypt. It is commonly eaten during Ramadan as part of the iftar or sunset feast. There multiple versions of the origin of the dish. The most often cited version is that it originated as a celebration of the death of Shajar al-Durr, who had been married to Egypt's final Sultan from the Ayyubid dynasty, As-Salih, and subsequently to the first of Egypt's Mamluk Sultans, Izz al-Din Aybak. Shajar al-Durr plotted the murder of Aybak, after which she became ruler of Egypt. Ultimately, she was herself killed in retribution, whereafter Aybak's first wife, who was known as Om Ali, asked to have a dessert prepared in celebration. The dessert was popularised throughout the country, and was named after Om Ali. Another version is that Om Ali celebrated the death of her husband, Aybak, and asked the cooks to come up with the most delicious dessert. The cooks used what was at hand: bread, milk and sugar.

Qatayef or qata'if is an Arabic dessert. It is a type of sweet dumpling filled with cream or nuts, or a folded pancake, similar to a Scottish crumpet. The Arabic word qaṭaːyif (Arabic: قطايف) is derived from the Arabic root q-ṭ-f, meaning to pick up or to pluck. Qatayef is believed to be of Fatimid origin. Some believe that qatayef are the creation of the Fatimid Dynasty, however, their history dates back to the Abbasid Caliphate, 750–1258 CE. Qatayef was mentioned in a tenth century Arabic cookbook dating back to the Abbasid Caliphate by Ibn Sayyar al-Warraq called Kitab al-Ṭabīḫ (Arabic: كتاب الطبيخ, The Book of Dishes). The book was later translated by Nawal Nasrallah under the name Annals of the Caliphs' Kitchens. The traditional stuffing of Qatayef, as evident in a number of Medieval Arabic cookbooks, is crushed almond and sugar. In these recipes, once the pancake was stuffed, it would sometimes be fried in walnut oil or baked in the oven. Qatayef was traditionally prepared by street vendors as well as households in Egypt and the Levant. It is usually filled with akkawi cheese, crushed walnuts, as well as crushed pistachios. Tulumba or Bamiyeh is a deep-fried dessert found in Egypt, Turkey and the regional cuisines of the former Ottoman Empire. It is a fried batter soaked in syrup, similar to jalebis or churros. It is made from unleavened choux pastry dough (usually about 3 cm long) piped with a pastry bag using an open star or similar tip. It is first deep-fried to golden colour and then sugar-sweet syrup is poured over it when still hot. It is eaten cold. Tulumba literally means 'pump' in Turkish, deriving from the Italian tromba. The dessert is called pomba in Cypriot Greek and bombacık in Cypriot Turkish. In Armenian cuisine it may be called either pomp or tulumba (Armenian: թուլումբա). Tulumba features in Albanian, Serbian, Bosnian, Bulgarian, Macedonian, Greek (Greek: τουλούμπα), Azeri (Azerbaijani: Ballıbadı) and Turkish cuisines. The sweet is also found in Persian cuisine as bamiyeh (Persian: باميه), after the vegetable of the same Persian name (okra), due to its shape. Dried lime tea, also known as chai noomi basra, noomi basra tea or loomi tea, is a type of herbal tea made from dried limes that is traditional to Iraq and the Arabian Peninsula. Loomi tea is made by seeding the dried limes where they are cracked into several pieces, or just pricked, and their peels are simmered in water for 15 to 30 minutes until boiled. Afterwards, they are drained and the tea is sweetened with sugar. At times, honey may be preferred instead and saffron threads may also be added. Served hot, the drink is also consumed as a remedy to aid indigestion, upset stomach, diarrhea, and nausea. Qamar al-Din[fn 1] is an apricot fruit leather, which is popularly made into apricot juice or a nectar beverage from Arab cuisine famously consumed during the Muslim holy month of Ramadan. It originates from Syria and was first produced in the Ghouta, where the variety of apricots most suitable for qamar al-din was first grown. Qamar al-din is enjoyed across the Middle East and North Africa as well as in Somalia, though Syrian qamar al-din is still believed to be the best because the variety of apricots most suitable for making qamar al-din grows only in Syria and southwestern Turkey. Several theories have been proposed for the origin of qamar al-din's name. One theory holds that it was named for its inventor, a Syrian man named Qamar al-Din. He was said to have been so handsome that he resembled the moon (qamar, Arabic: قمر), hence his name. Another theory holds that apricot season coincided with the sighting of the new moon marking the beginning of Ramadan in the year when qamar al-din was invented. A similar theory, widespread in Egypt, traces the name's origin to a Caliph who was known to celebrate with qamar al-din upon seeing the crescent moon during Ramadan.

Salep, also spelled sahlep or sahlab,[note 1] is a flour made from the tubers of the orchid genus Orchis . These tubers contain a nutritious, starchy polysaccharide called glucomannan. Salep flour is consumed in beverages and desserts, especially in the cuisines of the former Ottoman Empire, notably in the Levant where it is a traditional winter beverage. An increase in consumption is causing local extinctions of orchids in parts of Turkey and Iran. The word salep ultimately comes from Arabic saḥlab (سَحْلَب), through French and Turkish salep in the mid 18th century. The Arabic word is perhaps shortened from ḵuṣā aṯ-ṯaʕlab (Arabic: خُصَى الثَعْلَب, lit. 'fox's testicles'). The Ancient Romans used ground orchid bulbs to make drinks, which they called by a number of names, especially satyrion and priapiscus. As the names indicate, they likewise considered it to be a powerful aphrodisiac. Of salep, Paracelsus wrote: "behold the Satyrion root, is it not formed like the male privy parts? No one can deny this. Accordingly, magic discovered it and revealed that it can restore a man's virility and passion".

Produced domestically by Nichols plc, it is available in cans and bottles in carbonated, still, cordial , and energy forms and it has also been made into a sweet, ice lolly and other items. Vimto is traditionally most popular in the north of England and is also sold globally under license, and enjoys high popularity in the Persian Gulf countries and in The Gambia and Senegal. Vimto was created in 1908 in Manchester by John Noel Nichols (1883–1966), a wholesaler of herbs, spices and medicines. Abalone is a common name for any small to very large marine gastropod mollusc in the family Haliotidae, which once contained six genera but now contains only one genus, Haliotis. Other common names are ear shells, sea ears, and, now rarely, muttonfish or muttonshells in parts of Australia, ormer in the United Kingdom, perlemoen in South Africa, and pāua in New Zealand. The number of abalone species recognized worldwide ranges between 30 and 130 with over 230 species-level taxa described. The most comprehensive treatment of the family considers 56 species valid, with 18 additional subspecies. The shells of abalone have a low, open spiral structure, and are characterized by several open respiratory pores in a row near the shell's outer edge. The thick inner layer of the shell is composed of nacre, which in many species is highly iridescent, giving rise to a range of strong, changeable colors which make the shells attractive to humans as ornaments, jewelry, and as a source of colorful mother-of-pearl.

Aloo gobhi, aloo gobi or alu gobhi is a vegetarian dish from the Indian subcontinent made with potatoes (aloo), cauliflower (gobhi), and Indian spices. It is popular in Indian cuisine. It is yellowish in color due to the use of turmeric, and occasionally contains black cumin and curry leaves. Other common ingredients include garlic, ginger, onion, coriander stalks, tomato, peas, black pepper, asafoetida and cumin. There are a number of variations and similar dishes. A traditional dish with origins in Northern India, it is very popular throughout the country and is also well known in the cuisines of Nepal, Bengal and Pakistan.

Aloo mutter is a North Indian dish from the Indian subcontinent which is made from potatoes (Aloo) and peas (mattar) in a mildly spiced creamy tomato based gravy. It is a vegetarian dish. The gravy base is generally cooked with garlic, ginger, onion, tomatoes, cilantro (coriander), cumin seeds, red chilli, turmeric, garam masala, and many other spices. It can also be made without onion or garlic. Aloo mutter is also available commercially in ready-to-eat packets, which need to be heated and served. It is also used as a filling in some variations of dosa. It is served in most North Indian restaurants and is one of the most iconic dishes of North Indian cuisine featured in the West.

Baigan bharta, also spelled baingan bharta or baigan chokha [a] is an Indian dish prepared by mashing or mincing grilled eggplant (baigan) with tomato, onion, herbs and spices, with variations being common from chef to chef.[b] Traditionally, cooking the eggplants over charcoals, inside of a tandoor, barbecue grill or oven, or even directly applying flame to the outside of the fruit infuses the dish with a smoky flavour; the blackened skin is then easily peeled and the eggplant may be further prepared. Baigan bharta is most often grilled, minced eggplant stewed with chopped tomato, browned onion or shallots, ginger, garlic, cumin, and topped with lime or lemon juice, fresh cilantro (coriander leaves) and sliced fresh green chili pepper. Depending on region and personal tastes, ghee (clarified butter) may be used in preparation of the dish. In some regions where mustard oil is popular, this may be used, though it possesses a powerful flavour and aroma. Most chefs use a neutral, high-smoking-point vegetable oil like canola or sunflower oil. Traditionally, the dish is eaten by hand with flatbread (specifically roti, naan or paratha), and can also be served with a variety of rice dishes, like biryani, khichdi or pulao. The meal will usually be rounded-out with various pickles (mango, lime, lemon, etc) as well as raita, a palate-cooling yogurt dish/condiment (similar to Greek tzatziki) with many forms, including mint, mango or cucumber preparations. In Bihar and Uttar Pradesh, it is served hot with litti or baati.

Biryani is one of the most popular dishes among the South Asian diaspora, although the dish is often associated with the region's Muslim population in particular. Similar dishes are also prepared in Iran, Iraq, Myanmar, Thailand, and Malaysia. Biryani is the single most-ordered dish on Indian online food ordering and delivery services, and has been labelled as the most popular dish overall in India.

Brik or burek is the north African version of borek, a stuffed malsouka pastry which is commonly deep fried. The best-known version is the egg brik, a whole egg in a triangular pastry pocket with chopped onion, tuna, harissa and parsley. With a slightly different shape, but with identical ingredients and method of preparation, the brik is known in Algeria and Libya as bourek (بوراك). It is often filled with a raw egg and herbs or tuna, harissa and olives and is sometimes served in a pita. This is also known as a boreeka. It is also widespread in Eastern Algeria in the cities of Annaba and Costantina. Brik pastry is made by slapping a sticky lump of dough onto a hot non-stick surface in overlapping circles to produce the desired size and cooked for a short amount of time. The brik dough sheets are called malsouka or warka. Typical fillings include tuna, ground meat, raw egg, chicken, or anchovies garnished with harissa, capers, or cheese. Although the food's origins are hard to trace directly, it dates back at least 500 years in the past. In addition to its unclear origins, it is also not known by a singular name; across the Middle East even now, the popular food can be referred to as bric, börek, burek, warqa or malsouka. The common ingredients in every brik – regardless of what it is called – include the deep fried pastry crust and proteins (like tuna or egg) encased within the wrapping, such as the common French spin known as brik a l'oeuf.

A camel from Ancient Semitic: gāmāl) is an even-toed ungulate in the genus Camelus that bears distinctive fatty deposits known as "humps" on its back. Camels have long been domesticated and, as livestock, they provide food (camel milk and meat) and textiles (fiber and felt from camel hair). Camels are working animals especially suited to their desert habitat and are a vital means of transport for passengers and cargo. There are three surviving species of camel. The one-humped dromedary makes up 94% of the world's camel population, and the two-humped Bactrian camel makes up 6%. The wild Bactrian camel is a distinct species that is not ancestral to the domestic Bactrian camel, and is now critically endangered, with fewer than 1,000 individuals. The word camel is also used informally in a wider sense, where the more correct term is "camelid", to include all seven species of the family Camelidae: the true camels (the above three species), along with the "New World" camelids: the llama, the alpaca, the guanaco, and the vicuña, which belong to the separate tribe Lamini. Camelids originated in North America during the Eocene, with the ancestor of modern camels, Paracamelus, migrating across the Bering land bridge into Asia during the late Miocene, around 6 million years ago.

The flavour of the dish can be attributed to red chillies, but the exact set of ingredients for the recipe can vary. It is prepared using boneless chicken and is usually served with an onion and lemon garnish. Vegetarian variants like "Paneer 65" or "Gobhi 65" use paneer or cauliflower instead. While the name "Chicken 65" is universally used to refer to the dish, there are many different theories claiming its origins. Although Chicken 65 is well established as being the invention of A. M. Buhari of the Buhari Hotel chain, its popularity as a dish has spawned several myths about its origin and name. One account claims that the dish emerged as a simple meal for Indian soldiers in 1965. Another account claims that it is a dish containing 65 chili peppers devised by an enterprising hotelier. It is also claimed to relate to a requirement for the meat to be from 65-day-old chickens. Still others claim that it means 65 pieces of chicken.

A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce, and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

Chicken tikka is a chicken dish popular in India, Bangladesh, Pakistan and the United Kingdom. It is traditionally small pieces of boneless chicken baked using skewers on a brazier called angeethi or over charcoal after marinating in Indian spices and dahi —A flavorful and tender, essentially a boneless version of tandoori chicken. The word tikka (tike in Turkish, and tikə in Azerbaijani) is a Persian word, meaning "bits" or "pieces". It is also a chicken dish served in Punjabi cuisine. The Kashmiri version of the dish, however, is grilled over red-hot coals, and does not always contain boneless pieces. The pieces are brushed with ghee (clarified butter) at intervals to increase its flavour, while being continuously fanned. It is typically eaten with green coriander and tamarind chutney served with onion rings and lemon, or used in preparing an authentic chicken tikka masala. A chicken tikka sizzler is a dish where chicken tikka is served on a heated plate with onions. The dish is also popular in Afghanistan, though the Afghan variant (like many other Persian, Turkish, and Arab dishes) is less spicy compared to the variants in the Indian subcontinent and uses beef and lamb in addition to chicken.

Chitranna , also known as Lemon rice, is a rice-based dish widely prepared in South India. It is prepared by mixing cooked rice with a special seasoning called Oggarane or Gojju. Characteristic for the seasoning are mustard seeds, fried lentils, peanuts, curry leaves, chillies, lemon juice and other optional items such as scrapes of unripe mango. Added turmeric powder gives Chitranna its yellow color. Garlic and onions are also used in the seasoning by some, although traditionally they do not form part of the recipe. The dish is especially popular in the south Indian state of Karnataka, where it has become a part of the daily diet. Chitranna rice dish finds its mention in medieval Indian cookbooks Manasollasa (1130 CE) and Pakadarpana (1200 CE) as "Chitrapaka".

Crabs are decapod crustaceans of the infraorder Brachyura , which typically have a very short projecting tail-like abdomen, usually hidden entirely under the thorax.[a] They live in all the world's oceans, in freshwater, and on land. They are generally covered with a thick exoskeleton. They generally have five pairs of legs, and they have pincer claws on the ends of the frontmost pair. They first appeared during the Jurassic period, around 200 million years ago. Crabs are generally covered with a thick exoskeleton, composed primarily of highly mineralized chitin. Behind their pair of chelae (claws) are six walking legs and then two swimming legs. The crab breathes through gills on its underside; gills must be at least moist to work.

Curry is a dish with a sauce or gravy seasoned with spices, mainly derived from the interchange of Indian cuisine with European taste in food, starting with the Portuguese, followed by the Dutch and British, and then thoroughly internationalised. Many dishes that would be described as curries in English are found in the native cuisines of countries in Southeast Asia and East Asia. The English word is derived indirectly from some combination of Dravidian words such as the Tamil kaṟi meaning 'sauce' or 'relish for rice'.

Hainanese curry rice is a Singaporean dish consisting of steamed white rice smothered with curries and gravy, characteristically accompanied by curry chicken, pork chop, chap chye and kong bak (braised pork). It originates in Singaporean cuisine and is not thought of as part of the cuisine of Hainan, China although it was created by Hainanese people. Hainanese curry rice developed during British colonial rule in Singapore. It was started by Hainanese living in Singapore, who were often employed by the British as well as the wealthy Peranakans (Straits-Chinese) as chefs in their homes. Pork chop was adapted from British cuisine and the rest of the ingredients, such as curry chicken, babi pongteh and chap chye, were from Peranakan cuisine. These were adapted for Hainanese curry rice. Loo's, one of the most well-known and popular Hainanese curry rice vendors in Singapore, started operations in 1946 and is situated opposite Tiong Bahru Market. Traditionally, steamed white rice forms the base of this dish. In recent years, some outlets, for example Jin Soon Fa Curry Rice, offer brown rice as an option.

Eggah is an egg-based dish in Egyptian cuisine that is similar to a frittata. It is also known as Egyptian omelet. Eggah is commonly seasoned with spices such as pepper, cinnamon, cumin, coriander seeds, turmeric, nutmeg and fresh herbs. It is generally thick, commonly filled with vegetables and sometimes meat and cooked until completely firm. Fasolada is made by simmering beans with tomatoes and other vegetables such as carrots, onion, parsley, thyme, celery, and bay leaf. Lima beans are sometimes used instead of white beans. Recipes vary considerably, often including meat like bastırma and olive oil. Its counterparts are Italian fagiolata, the Portuguese and Brazilian feijoada, Romanian fasole, Albanian fasule, and Spanish fabada. A similar dish in Turkish cuisine is called kuru fasulye.
