Fried bake is a Caribbean dish. Many West Indian nations including Trinidad and Tobago, Guyana, Saint Lucia, Saint Vincent and the Grenadines, Dominica and Grenada eat this dish. The main ingredient in fried bake is flour. It can be served in a multitude of ways. This dish is usually served with salt fish and steamed vegetables.

Humans and their hominid relatives have consumed eggs for millions of years. The most widely consumed eggs are those of fowl, especially chickens. People in Southeast Asia began harvesting chicken eggs for food by 1500 BCE. Eggs of other birds, such as ducks and ostriches, are eaten regularly but much less commonly than those of chickens. People may also eat the eggs of reptiles, amphibians, and fish. Fish eggs consumed as food are known as roe or caviar. Hens and other egg-laying creatures are raised throughout the world, and mass production of chicken eggs is a global industry. In 2009, an estimated 62.1 million metric tons of eggs were produced worldwide from a total laying flock of approximately 6.4 billion hens. There are issues of regional variation in demand and expectation, as well as current debates concerning methods of mass production. In 2012, the European Union banned battery husbandry of chickens.

In botany, a fruit is the seed-bearing structure in flowering plants that is formed from the ovary after flowering . Fruits are the means by which flowering plants (also known as angiosperms) disseminate their seeds. Edible fruits in particular have long propagated using the movements of humans and other animals in a symbiotic relationship that is the means for seed dispersal for the one group and nutrition for the other; humans and many other animals have become dependent on fruits as a source of food. Consequently, fruits account for a substantial fraction of the world's agricultural output, and some (such as the apple and the pomegranate) have acquired extensive cultural and symbolic meanings.

An ontbijtkoek , peperkoek (pepper cake) or kruidkoek (spice cake) is a Dutch and Flemish spiced cake. Rye and dark brown basterdsuiker are its most important ingredient, coloring the cake light brown. It is often spiced with cloves, cinnamon, ginger, succade and nutmeg. Several parts of the Netherlands have their own local recipe, of which the most famous is oudewijvenkoek (old woman's cake), which is mostly eaten in the northern regions, and is flavored with aniseed. Ontbijtkoek is traditionally served at breakfast with a thick layer of butter on top, as a replacement for bread, however, due to its sweet taste it is also served as a snack. It is best eaten the day after it is baked, but has a shelve life of several weeks at room temperatures, without it spoiling, due to the pH, sugar content and used spices. Ontbijkoek resembles somewhat a soft gingerbread cake, but then with much less ginger, hardly any fat and more sugar. The sugar used is the typical Dutch basterdsuiker, an aromatic, moist and fine sugar, which gives a baking product its typical brown color and smooth texture. Basterdsuiker is protected by the EU and acknowledged as a Traditional speciality guaranteed. Ontbijtkoek is also found in Indonesia due to its historical colonization by The Netherlands.

An empanada is a type of baked or fried turnover consisting of pastry and filling, common in Spain, other Southern European countries, Latin American countries, and the Philippines. The name comes from the Spanish empanar , and translates as 'breaded', that is, wrapped or coated in bread. They are made by folding dough over a filling, which may consist of meat, cheese, tomato, corn, or other ingredients, and then cooking the resulting turnover, either by baking or frying. The origin of empanadas is unknown, but they are thought to have originated in 7th century Galicia, a region in northwest Spain.

Yogurt is a food produced by bacterial fermentation of milk. Fermentation of sugars in the milk by these bacteria produces lactic acid, which acts on milk protein to give yogurt its texture and characteristic tart flavor. Cow's milk is most commonly used to make yogurt. Milk from water buffalo, goats, ewes, mares, camels, and yaks is also used to produce yogurt. The milk used may be homogenized or not. It may be pasteurized or raw. Each type of milk produces substantially different results. Yogurt is produced using a culture of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus bacteria. Other lactobacilli and bifidobacteria are sometimes added during or after culturing yogurt. Some countries require yogurt to contain a specific amount of colony-forming units (CFU) of bacteria; for example, in China the requirement for the number of lactobacillus bacteria is at least 1 million CFU per milliliter.

A rum cake or black cake is a type of dessert cake which contains rum. In most of the Caribbean, rum cakes are a traditional holiday season dessert, descended from the holiday puddings . Traditionally, dried fruit is soaked in rum for months and then added to dough prepared with sugar which has been caramelized by boiling in water. The result, also known as "black cake", is similar to a fruitcake, with a lighter texture. In Guyana, Trinidad and Tobago, Jamaica and other parts of the Caribbean, fruits are preserved in cherry brandy or rum to be used in the making of black cake. Black cake is traditionally associated with Christmas and weddings in Guyana, Jamaica, and Trinidad and Tobago. On the mainland United States, rum cakes have been popular since at least the 1970s. While many island travelers go out of their way to pick up a Caribbean variety, more and more small U.S. companies are competing, much the way that craft beers are competing with the large beer manufacturers. Some offer baked-to-order rum cakes. Some infuse the rum directly into their cakes (instead of glazing). Many appear to have a decades-old special recipe. In Puerto Rico, rum cake is called Bizcocho de Ron, and is a sponge cake, so as to absorb the rum. If fruit is added to it, it is fresh or dried. Raisins and sultanas may be soaked in rum for one day or one night. Bizcochos de Ron are given as gifts during the holiday season.[citation needed]

An upside-down cake is a cake that is baked "upside-down" in a single pan, with its toppings at the bottom of the pan. When removed from the oven, the finished upside-down preparation is flipped over and de-panned onto a serving plate, thus "righting" it, and serving it right-side up. An upside-down cake is a cake that is baked "upside-down" in a single pan—usually a skillet—with the eventual toppings placed in the bottom of the pan. When removed from the oven, the finished upside-down preparation is flipped over and de-panned onto a serving plate. Flipping the cake before serving puts the right-side up, so that the ingredients that were in the bottom of the pan are the toppings. Usually chopped or sliced fruits—such as apples, cherries, peaches, or pineapples—butter, and sugar are placed on the bottom of the pan before the batter is poured in, so that they form a baked-on topping after the cake is inverted. A simple cottage pudding cake batter may be used. The first American recipes for upside-down cake, using prunes, appeared in newspapers in 1923.

The history of chocolate cake goes back to the 17th century, when cocoa powder from the Americas was added to traditional cake recipes.

A tres leches cake , dulce de tres leches, also known as pan tres leches (lit. 'three-milk bread') or simply tres leches, is a sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and whole milk. The cake is popular throughout Latin America as of recent years but its origins trace to Nicaragua. Tres leches is a very light cake, with many air bubbles. This distinct texture is why it does not have a soggy consistency, despite being soaked in a mixture of three types of milk. Its Macedonian variety is referred to as trileče. Its Albanian and Turkish varieties are referred to as trileçe.

Cheesecake is a dessert made with a soft fresh cheese , eggs, and sugar. It may have a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake. Cheesecake may be baked or unbaked, and is usually refrigerated. Vanilla, spices, lemon, chocolate, pumpkin, or other flavors may be added to the main cheese layer. Additional flavors and visual appeal may be added by topping the finished dessert with fruit, whipped cream, nuts, cookies, fruit sauce, chocolate syrup, or other ingredients.

Cocada are a traditional coconut confectionery found in many parts of Latin America and Europe. They are particularly popular in Argentina, Bolivia, Brazil, Colombia, Chile, the Dominican Republic, Cuba, Spain, Mexico, Panama, Venezuela Ecuador And Goa Former Estado da Índia Portuguesa. They are oven baked but are served at room temperature to provide their chewy and soft texture. Made with eggs and shredded coconut, cocadas come in a variety of colors due to the modern use of food coloring, however the traditional variations are golden brown. They are often garnished with almonds, either whole or chopped. There are hundreds of cocadas recipes, from the typical hard, very sweet balls to cocadas that are almost the creamy texture of flan. Other fruit, often dried, can be added to the cocadas to create variety, which will also lend to a wide spectrum of cocada colors. Cocadas are mentioned as early as 1878 in Peru. In Colombia and Mexico, Conserva de coco are sold not only as artisan candies from shops, but commonly on the streets, out of baskets, and particularly on the beaches, by men or women who carry them on large aluminum trays. In Uruguay, they are commonly sold in bakeries under the name of coquitos, the more delicate versions include a cherry on the top and syrup coating, sometimes they fill the boxes of assorted masas.

An oliebol is a Dutch beignet, doughnut or fried dough that is traditionally eaten on New Year's Eve. People often eat it with raisins baked inside and with powdered sugar on top. Another variation is made with apple inside instead of raisins. There are similar foods all around the world, for example Samoan Panikeke, eaten mostly with jam or butter on top. They are called oliebollen (literally: oil balls) or smoutballen (literally: lard balls) in the Netherlands, smoutebollen (literally: lard spheres) in Flanders and croustillons (loosely: crispies) in Wallonia, Schmalzkugeln (same meaning as in Belgian Dutch smoutebollen) in Eastern Belgium German. In France, with croustillons they are also commonly called beignets rapides (literally: fast beignets) and croustillons hollandais (loosely: Dutch crispies). In out-of-Belgium German, they are called Ölkugel (same meaning as in Dutch oliebollen), Püpperchen (informal for puppets or babies) and Pupperle (same meaning, especially used in Alsace for these ones), Silvesterfutschen (loosely: messed up Saint Sylvesters) in Northern Germany, and Gebackene Mäuse (loosely: fried mice or baked mice) in Austrian German. In English they are more commonly known as Dutch doughnuts or dutchies. In Italy, they are called in many different ways and it depends on the Region: bombolini fritti, ficattole, bignoli, frittoli (or fritole/fritule), sgabei, bignet, panzanelle, coccoli, zonzelle, donzelle and so on. In the region of Istria, which is shared by the countries of Italy, Croatia and Slovenia, a variation of this dish is called fritole, fritule and blinci. In Serbia they are called krofne. In Portugal they are called sonhos (dreams). In Indonesia, they are known locally as roti goreng. Also, in Ghana, West Africa, they are known locally as bofrot or bofflot, and in the south of Benin, in the Fon language as yovodocon, i.e. "white man's dumplings". In Nigeria, they are known as 'puff puff'. In Iceland they're known as Ástarpungar (love balls). Oliebollen are a variety of dumpling made by using an ice cream scoop or two spoons to scoop a certain amount of dough and dropping the dough into a deep fryer filled with hot oil (or once with hot lard, thus some traditional local names). In this way, a sphere-shaped oliebol emerges. Oliebollen are traditionally eaten on New Year's Eve and at funfairs. In wintertime, they are also sold in the street at mobile stalls.

A pannenkoek ˌkuk] ⓘ; plural pannenkoeken [-ˌkukə(n)] ⓘ) or Dutch pancake is a style of pancake with origins in the Netherlands. Pannenkoeken are usually larger (up to a foot in diameter) and much thinner than their American or Scotch pancake counterparts, but not as thin as crêpes.[citation needed] They may incorporate slices of bacon, apples, cheese, or raisins. Plain ones are often eaten with treacle (syrup made of sugar beets), appelstroop (an unspiced Dutch variety of apple butter) or (powdered) sugar and are sometimes rolled up to be eaten by hand or with cutlery. Basic ingredients are flour (plain, self-rising or both), milk, salt, and eggs. The addition of buckwheat flour (up to 50 percent) is traditional, but much less common nowadays. Milk can be replaced with soy milk without changing the end result. The ingredients are beaten into a batter of a fairly liquid consistency. A ladle of batter is then pan fried in butter or oil. Once the top of the pannenkoek is dry and the edges start to brown, it can be flipped over. The first one is often less than perfect. At home a stack of pannenkoeken can be made in advance so everyone can eat at the same time, or people can take turns at the stove.

Poffertjes are traditional Dutch batter cakes. Resembling small, fluffy pancakes, they are made with yeast and buckwheat flour. Typically, poffertjes are sweet treats served with powdered sugar and butter, and sometimes syrup or advocaat. A savoury variant with gouda cheese is also made. The first mention of Poffertjes is credited to a 1746 appendix to the cookbook Volmaakte Hollandsche keuken-meid. Poffertjes were first seen at a fair in Amsterdam in 1746. They are also known as 'brothers'. The Catholic Church claims they invented them, but there are doubts about that claim.

Quesillo refers to different Latin American, Spanish, and Filipino foods or dishes depending on the country: Argentine quesillo is a notable product of the Calchaquíes and Lerma valleys. It dates back to the Spanish conquest when European and traditional Creole recipes were combined. It is made by hand with cow's milk or goat through a process known as "filado" or spinning, which grants the product its distinctive characteristics.

Speculaas is a type of spiced shortcrust biscuit baked with speculaas spices originated from the County of Flanders territory in present-day Belgium, France and the Netherlands. Speculaas biscuits are usually flat and are often moulded to carry certain traditional images (see image on the right). They are particularly popular around the feast of St. Nicholas (Dutch: Sinterklaas). The oldest sources on speculaas also mention weddings and fairs. In recent decades, however, it has become normal to eat speculaas all year round, especially with coffee or tea, or with ice cream. Speculaas is primarily made and consumed in Belgium, France and the Netherlands, as well as in Luxembourg and the German regions of Westphalia and Rhineland. It is also highly popular in the former Yugoslav countries, where it is manufactured by the Croatian food company Koestlin. The cookie can also be found in Indonesia where it is known as spekulaas or spekulaaskoekjes, and usually served at Christmas or on other special occasions.

A stroopwafel is a thin, round cookie made from two layers of sweet baked dough held together by syrup filling. First made in the city of Gouda in South Holland, stroopwafels are a well-known Dutch treat popular throughout the Netherlands and abroad. A stroopwafel's wafer layers are made from a stiff dough of flour, butter, brown sugar, yeast, milk, and eggs that has been pressed in a hot waffle iron until crisp.[a] While still warm, the waffles have their edges removed with a cookie cutter, which allows the remaining disc to be easily separated into top and bottom wafers. A filling made from syrup, brown sugar, butter, and cinnamon—also warm—is spread between the wafers before the waffle is reassembled. The syrup sets as it cools, thereby binding the waffle halves together.

A tompoes or tompouce is a pastry in the Netherlands and Belgium. It is the local variety of the mille-feuille or Napoleon, introduced by an Amsterdam pastry baker and named after Admiraal Tom Pouce, the stage name of the Frisian dwarf Jan Hannema. In the Netherlands, the tompoes is iconic, and the market allows little variation in form, size, and colour. It must be rectangular, with two layers of puff pastry, similar to the cream slice in the United Kingdom. The icing is smooth and pink, or occasionally white. For many years, however, the top layer has been orange on Koningsdag , and a few days before. It may also be orange-coloured when the national football team plays in large international tournaments; this dates from about 1990. The filling is invariably sweet, yellow pastry cream. Tompouces are sometimes topped with whipped cream. Variations with different fillings or with jelly are comparatively rare and are not called tompoes. Several variations exist in Belgium. White glazing on top is the norm in Belgium, sometimes with a chocolate pattern similar to mille-feuille. The boekske (lit. 'booklet') may have a sugar finish and may be square. Belgians also use the spelling tompouce or call them glacé (referring to the glazing).

Vla is a Dutch dairy product made from fresh milk. The word vla was first documented in the 13th century and originally referred to any custard-like substance covering cakes or other baked goods. The word vlaai is related and has since come to refer to a type of pie. Traditionally vla is made with eggs, sugar and fresh milk, although some industrial producers use cornstarch rather than eggs today. Vla is available in many different flavors, of which vanilla is most popular. Other flavors include chocolate, caramel, banana, orange and apple.

It was taken over by Heineken International in 1968, and the brewing plant closed down in 1982, with production moving to the main Heineken plant at Zoeterwoude. The brewery was founded by Charles Antoine de Pesters (1842–1915), Johannes Hendrikus van Marwijk Kooy (1847–1916) and Willem Eduard Uhlenbroek (1839–1880). De Pesters and Van Marwijk Kooy were brothers-in-law, both coming from very affluent Amsterdam families. Uhlenbroek's father owned a small sugar refinery in Amsterdam. The brewery was named after the Amstel River. The brewery's symbolic first stone was laid on 11 June 1870. The first brew was completed on 25 October 1871 and 2+1⁄2 months later, on 9 January 1872, the first beer was delivered to clients. The brewery was officially opened on 15 January 1872. At this time its annual brewing capacity was 10,000 hectoliters (220,000 imp gallons). For the purpose of storing the beer, winter ice from canals was kept in special double-walled cellars. Originally, Amstel beers were mostly drunk in Amsterdam. The expansion outside Amsterdam ran more or less parallel to the development of the Dutch railway network. Agents were appointed in towns along new railway lines. As from 1883, Amstel beers were also exported to Great Britain and the Dutch East Indies. In 1884 a special export bottling plant was built, where "tropical" beers for the Dutch East Indies and other overseas markets were pasteurised and packaged in metal kegs. On 1 January 1891 the firm De Pesters, Kooy & Co. operating under the name Beiersch Bierbrouwerij De Amstel (Bavarian Beer Brewery De Amstel), was turned into a public limited company. In 1915 the production of Amstel had increased twenty-fold and in 1926, Amstel consisted of a third of the Dutch beer exports. In 1941, Amstel, together with Heineken, bought up the Amsterdam brewery Van Vollenhoven's Bierbrouwerij, which was closed in 1961.

A cocktail is a mixed drink, usually alcoholic. Most commonly, a cocktail is a combination of one or more spirits mixed with other ingredients, such as juices, flavored syrups, tonic water, shrubs, and bitters. Cocktails vary widely across regions of the world, and many websites publish both original recipes and their own interpretations of older and more famous cocktails. The origins of the word cocktail have been debated . The first written mention of 'cocktail' as a beverage appeared in The Farmers Cabinet, 1803, in the United States. The first definition of a cocktail as an alcoholic beverage appeared three years later in The Balance and Columbian Repository (Hudson, New York) May 13, 1806. Traditionally, cocktail ingredients included spirits, sugar, water and bitters; however, this definition evolved throughout the 1800s to include the addition of a liqueur.

Curaçao is a liqueur flavored with the dried peel of the bitter orange variety laraha, a citrus fruit grown on the Caribbean island of Curaçao. Curaçao can be sold in numerous forms, though the most common are the orange-hued dry curaçao and blue curaçao, which is dyed bright blue. It is not known who developed the first curaçao liqueur, and when. The Dutch West Indies Company took possession of Curaçao in 1634. The Bols distillery, founded in 1575 in Amsterdam, had shares in both the West and East India Companies to guarantee its access to spices required for their distilled drinks. According to the early nineteenth-century French culinary chronicler Alexandre Grimod de la Reynière, curaçao originated in Flanders, and proximity to the province of Holland gave distillers easy access to the necessary peels (since Curaçao was a Dutch colony at the time).

Juice is a drink made from the extraction or pressing of the natural liquid contained in fruit and vegetables. It can also refer to liquids that are flavored with concentrate or other biological food sources, such as meat or seafood, such as clam juice. Juice is commonly consumed as a beverage or used as an ingredient or flavoring in foods or other beverages, such as smoothies. Juice emerged as a popular beverage choice after the development of pasteurization methods enabled its preservation without using fermentation . The largest fruit juice consumers are New Zealand (nearly a cup, or 8 ounces, each day) and Colombia (more than three quarters of a cup each day). Fruit juice consumption on average increases with a country's income level.

Heineken Lager Beer , or simply Heineken ( pronounced [ˈɦɛinəkə(n)]), is a Dutch pale lager beer with 5% alcohol by volume produced by the Dutch brewing company Heineken N.V. Heineken beer is sold in a green bottle with a red star. On 15 February 1864,[citation needed] Gerard Adriaan Heineken (1841–1893) bought De Hooiberg (The Haystack) brewery on the Nieuwezijds Achterburgwal canal in Amsterdam, a popular working class brand founded in 1592. In 1873 after hiring a Dr. Elion (student of French chemist Louis Pasteur) to develop Heineken a yeast for Bavarian bottom fermentation, the HBM (Heineken's Bierbrouwerij Maatschappij) was established, and the first Heineken brand beer was brewed. In 1875 Heineken won the Medaille D'Or at the International Maritime Exposition in Paris and it began to be shipped there regularly, after which Heineken sales topped 64,000 hectolitres (1.7 million U.S. gallons), making them the biggest beer exporter to France.[citation needed]

Mauby, also known as madi, maví, mobi, mabi, and maubi, is a tree bark-based beverage grown, and widely consumed, in the Caribbean. It is made with sugar and the bark and/or fruit of certain species in the genus Colubrina including Colubrina elliptica and Colubrina arborescens, a small tree native to the northern Caribbean and south Florida. Recipes usually include other ingredients as well, spices such as aniseed being very common. Mauby was traditionally a fermented beverage made in small batches, but is now predominantly a commercial non-fermented soft drink. Haiti and the Dominican Republic are two of the largest Caribbean exporters of the bark and leaves. Often the drink is fermented using a portion of the previous batch, while sometimes it is consumed unfermented. Mauby is often bought as a pre-made syrup and then mixed with water to the consumer's taste, but many make it themselves at home or purchase it from neighbourhood producers or street sellers. Its taste is initially sweet, somewhat like root beer, but changes to a prolonged, but not astringent bitter aftertaste. To many, it is an acquired taste, and has been known to cause an initial laxative reaction unexpected to many first-time drinkers. In Puerto Rico the drink is also called mavi champán (champagne mauby) because the drink is fermented, causing it to foam. This process is made by mixing an older batch with a new batch. Mauby bark and leaves are boiled with ginger, avocado leaves, brown sugar and other spices. The drink is then placed in a tight sealed bottle and left out in the sun for 6-8 hours. Ponche crema is a cream-based liqueur that originates in Venezuela and was brought to nearby Trinidad and Tobago who developed their own version, Ponche de Crème. Recipes vary depending on the region, but main ingredients typically include milk, eggs, sugar, rum, and other minor ingredients such as vanilla, nutmeg, cinnamon, and lemon rind. A variant type is prepared with concentrated liquid coffee or instant coffee powder. However, most references to the ponche crema name aim at a traditional commercial product, available since 1900, whose recipe and manufacturing process are kept secret. Ponche crema is a beverage traditionally served during Christmas time, much as eggnog is in the United States. It is usually served cold, in small cups, either as an aperitif or a pousse-café. The origin of the recipe for this commercial product could not be determined.

A smoothie is a beverage made by puréeing ingredients in a blender. A smoothie commonly has a liquid base, such as fruit juice or milk, yogurt or ice cream. Other ingredients may be added, including fruits, vegetables, non-dairy milk, crushed ice, whey powder or nutritional supplements. Health food stores on the West Coast of the United States began selling smoothies with the invention of the electric blender. The actual term "smoothie" was being used in recipes and trademarks by the mid-1980s. In the 1960s Steve Kuhnau was inspired by his work as a soda jerk and began experimenting with smoothies. They were an alternative for the lactose intolerant Kuhnau to taste his own concoctions using unique blends of fruit juices, vegetables, protein powder, and vitamins. Kuhnau discovered early success in his smoothie sales and founded Smoothie King. Smoothie King expanded throughout the United States and would pioneer other smoothie businesses such as Jamba Juice. The smoothie was then modified by fast food chains with the addition of sweeter ingredients like chocolate and Splenda. In the 2000s, consumers began making smoothies at home, in part as an alternative for daily consumption of fruits and vegetables. The nutrition of a smoothie depends on its ingredients and their proportions. Many smoothies include large or multiple servings of fruits and vegetables, which are recommended in a healthy diet and intended to be a meal replacement. However, fruit juice containing high amounts of sugar can increase caloric intake and promote weight gain. Ingredients such as protein powders, sweeteners, or ice cream may be used. One study found smoothies to be less satiating, despite providing the same amount of energy as unblended foods.

Wine is an alcoholic drink made from fermented fruit. Yeast consumes the sugar in the fruit and converts it to ethanol and carbon dioxide, releasing heat in the process. Wine is most often made from grapes, and the term "wine" generally refers to grape wine when used without any qualification. Even so, wine can be made from a variety of fruit crops, including plum, cherry, pomegranate, blueberry, currant, and elderberry. Different varieties of grapes and strains of yeasts are major factors in different styles of wine. These differences result from the complex interactions between the biochemical development of the grape, the reactions involved in fermentation, the grape's growing environment , and the wine production process. Many countries enact legal appellations intended to define styles and qualities of wine. These typically restrict the geographical origin and permitted varieties of grapes, as well as other aspects of wine production.

Bacalhau is the Portuguese word for cod and—in a culinary context—dried and salted cod. Fresh (unsalted) cod is referred to as bacalhau fresco (fresh cod). Bacalhau dishes are common in Portugal, and also in former Portuguese colonies such as Cape Verde, Angola, Macau, Brazil, Timor-Leste and Goa. There are said to be over 1000 recipes for salt cod in Portugal alone and it can be considered the iconic ingredient of Portuguese cuisine (it is one of the few species of fish not consumed fresh in this fish-loving country, which boasts the highest per capita fish consumption within the European Union). It is often cooked on social occasions and is the traditional Christmas Eve dinner in some parts of Portugal. There are numerous bacalhau recipe variations, depending on region and tradition. In Portugal, it is said there are more than 365 ways to cook bacalhau, one for every day of the year; others say there are 1,001 ways. Whatever the exact number, bacalhau is a ubiquitous ingredient in Portuguese cuisine.

Mie goreng , also known as bakmi goreng, is an Indonesian stir-fried noodle dish. It is made with thin yellow noodles stir-fried in cooking oil with garlic, onion or shallots, fried prawn, chicken, beef, or sliced bakso (meatballs), chili, Chinese cabbage, cabbages, tomatoes, egg, and other vegetables. Ubiquitous in Indonesia, it is sold by food vendors from street hawkers (warungs) to high-end restaurants. In Indonesia, where mi goreng is one of the most widespread simple dishes, the dish's origin is associated with Chinese Indonesian cuisine. Chinese influences are evident in Indonesian food such as bakmi, mi ayam, pangsit, bakso, lumpia, kwetiau goreng, and mi goreng. The dish is derived from Chinese chow mein and is believed to have been introduced by Chinese immigrants in Indonesia. Despite being influenced by Chinese cuisine, mi goreng in Indonesia has a definite Indonesian taste and has been heavily integrated into Indonesian cuisine, through, for example, the application of sweet soy sauce that adds mild sweetness, a sprinkle of fried shallots, and spicy sambal. Pork and lard are eschewed in favour of shrimp, chicken, or beef to cater to the Muslim majority. Mi goreng is traditionally made with yellow wheat noodles, stir-fried with chopped shallots, onion, and garlic with soy sauce seasoning, egg, vegetables, chicken, meat, or seafood. However, other versions might use dried instant noodles instead of fresh yellow wheat noodles. A common practice in Indonesia is the inclusion of powdered instant noodle seasonings, along with eggs and vegetables. Authentic mi goreng uses fresh ingredients and spices; however, bottled instant spice paste might be used for practical reasons.

A barracuda is a large, predatory, ray-finned fish known for its fearsome appearance and ferocious behaviour. The barracuda is a saltwater fish of the genus Sphyraena, the only genus in the family Sphyraenidae, which was named by Constantine Samuel Rafinesque in 1815. It is found in tropical and subtropical oceans worldwide ranging from the eastern border of the Atlantic Ocean to the Red Sea, on its western border the Caribbean Sea, and in tropical areas of the Pacific Ocean. Barracudas reside near the top of the water and near coral reefs and sea grasses. Barracudas are targeted by sport-fishing enthusiasts. The common name "barracuda" is derived from Spanish, with the original word being of possibly Cariban origin.

Clam is a common name for several kinds of bivalve molluscs. The word is often applied only to those that are edible and live as infauna, spending most of their lives halfway buried in the sand of the seafloor or riverbeds. Clams have two shells of equal size connected by two adductor muscles and have a powerful burrowing foot. They live in both freshwater and marine environments; in salt water they prefer to burrow down into the mud and the turbidity of the water required varies with species and location; the greatest diversity of these is in North America. Clams in the culinary sense do not live attached to a substrate and do not live near the bottom (whereas scallops do). In culinary usage, clams are commonly eaten marine bivalves, as in clam digging and the resulting soup, clam chowder. Many edible clams such as palourde clams are ovoid or triangular; however, razor clams have an elongated parallel-sided shell, suggesting an old-fashioned straight razor.

Cod is the common name for the demersal fish genus Gadus, belonging to the family Gadidae. Cod is also used as part of the common name for a number of other fish species, and one species that belongs to genus Gadus is commonly not called cod (Alaska pollock, Gadus chalcogrammus). The two most common species of cod are the Atlantic cod (Gadus morhua), which lives in the colder waters and deeper sea regions throughout the North Atlantic, and the Pacific cod (Gadus macrocephalus), which is found in both eastern and western regions of the northern Pacific. Gadus morhua was named by Linnaeus in 1758. (However, G. morhua callarias, a low-salinity, nonmigratory race restricted to parts of the Baltic, was originally described as Gadus callarias by Linnaeus.)

Conch is a common name of a number of different medium-to-large-sized sea snails. Conch shells typically have a high spire and a noticeable siphonal canal (in other words, the shell comes to a noticeable point on both ends). In North America, a conch is often identified as a queen conch, indigenous to the waters of the Gulf of Mexico and Caribbean. Queen conches are valued for seafood and are also used as fish bait. In the United States, a rule has been proposed to list the queen conch's conservation status as threatened.

Crabs are decapod crustaceans of the infraorder Brachyura, which typically have a very short projecting tail-like abdomen, usually hidden entirely under the thorax .[a] They live in all the world's oceans, in freshwater, and on land, are generally covered with a thick exoskeleton, and have a single pair of pincers on each arm. They first appeared during the Jurassic period, around 200 million years ago.

Pea soup or split pea soup is soup made typically from dried peas, such as the split pea. It is, with variations, a part of the cuisine of many cultures. It is most often greyish-green or yellow in color depending on the regional variety of peas used; all are cultivars of Pisum sativum. Pea soup has been eaten since antiquity; it is mentioned in Aristophanes' The Birds, and according to one source "the Greeks and Romans were cultivating this legume about 500 BC to 400 BC. During that era, vendors in the streets of Athens were selling hot pea soup." Eating fresh "garden" peas before they were matured was a luxurious innovation of the Early Modern period: by contrast with the coarse, traditional peasant fare of pease pottage , Potage Saint-Germain, made of fresh peas and other fresh greens braised in light stock and pureed, was an innovation sufficiently refined that it could be served to Louis XIV of France, for whose court at the Château de Saint-Germain-en-Laye it was named, c. 1660–1680.[clarification needed]

Fish tacos originated in Baja California in Mexico, where they consist of grilled or fried fish, lettuce or cabbage, pico de gallo, and a sour cream or citrus/mayonnaise sauce, all placed on top of a corn or flour tortilla. In the United States, they were first popularized by the Rubio's fast-food chain, and remain most popular in California, Colorado, and Washington. In California, they are often found at street vendors, and a regional variation is to serve them with cabbage and coleslaw dressing on top.

The Exocoetidae are a family of marine ray-finned fish in the order Beloniformes, known colloquially as flying fish or flying cod. About 64 species are grouped in seven genera. While they cannot fly in the same way a bird does, flying fish can make powerful, self-propelled leaps out of the water where their long wing-like fins enable gliding for considerable distances above the water's surface. The main reason for this behavior is thought to be to escape from underwater predators, which include swordfish, mackerel, tuna, and marlin, among others, though their periods of flight expose them to attack by avian predators such as frigate birds. Barbados is known as "the land of the flying fish" and the fish is one of the national symbols of the country. The Exocet missile is named after them, as variants are launched from underwater, and take a low trajectory, skimming the surface, before striking their targets.

Seafood is the culinary name for food that comes from any form of sea life, prominently including fish and shellfish. Shellfish include various species of molluscs . The harvesting, processing, and consuming of seafoods are ancient practices with archaeological evidence dating back well into the Paleolithic. Findings in a sea cave at Pinnacle Point in South Africa indicate Homo sapiens (modern humans) harvested marine life as early as 165,000 years ago, while the Neanderthals, an extinct human species contemporary with early Homo sapiens, appear to have been eating seafood at sites along the Mediterranean coast beginning around the same time. Isotopic analysis of the skeletal remains of Tianyuan man, a 40,000-year-old anatomically modern human from eastern Asia, has shown that he regularly consumed freshwater fish. Archaeology features such as shell middens, discarded fish bones, and cave paintings show that sea foods were important for survival and consumed in significant quantities. During this period, most people lived a hunter-gatherer lifestyle and were, of necessity, constantly on the move. However, early examples of permanent settlements (though not necessarily permanently occupied), such as those at Lepenski Vir, were almost always associated with fishing as a major source of food.

Groupers are fish of any of a number of genera in the subfamily Epinephelinae of the family Serranidae, in the order Perciformes. Not all serranids are called "groupers"; the family also includes the sea basses. The common name "grouper" is usually given to fish in one of two large genera: Epinephelus and Mycteroperca. In addition, the species classified in the small genera Anyperidon, Cromileptes, Dermatolepis, Graciela, Saloptia, and Triso are also called "groupers". Fish in the genus Plectropomus are referred to as "coral groupers". These genera are all classified in the subfamily Epiphelinae. However, some of the hamlets , the hinds (genus Cephalopholis), the lyretails (genus Variola), and some other small genera (Gonioplectrus, Niphon, Paranthias) are also in this subfamily, and occasional species in other serranid genera have common names involving the word "grouper". Nonetheless, the word "grouper" on its own is usually taken as meaning the subfamily Epinephelinae.

Kapsalon is a fast food dish created in 2003 by Turkish immigrants in the Netherlands. Consisting of a layer of french fries placed into a disposable metal take-away tray, topped with döner or gyro meat, covered with slices of Gouda cheese, and heated in an oven until the cheese melts. Then a layer of shredded iceberg lettuce is added, dressed with garlic sauce and sambal, a hot sauce from Indonesia, a former Dutch colony. The term kapsalon is Dutch for "hairdressing salon" or barber shop, alluding to the inventor's place of work. The dish is a product of Dutch multiculturalism, combining elements of dishes from multiple cultures. The dish has spread internationally in a relatively short time. The dish was conceived in 2003 by Nathaniël Gomes, who was a Cape Verdean hairdresser in the Rotterdam district of Delfshaven, who one day at the neighboring shawarma store "El Aviva" asked to combine all his favorite ingredients into one dish. He began to regularly request what the restaurant called "the usual order for the kapsalon". Other customers noticed and started to order the kapsalon too, and it became a hit, soon being demanded in nearby snack bars. Gomes reached a measure of international popularity; he died in 2023, aged 47. The dish has since spread around the Netherlands and into Belgium, and several other countries in at least three continents. In some places the shawarma meat may be replaced with chicken, or doner kebab meat. The kapsalon has been described as "a typical example of contemporary cultural heritage", and "representative of the transnational nature of the city". It has also been described as a "calorie bomb" and "culinary lethal weapon", with high fat content and up to 1,800 kilocalories (7,500 kJ) in a large serving.

Keshi yena is an Aruban and Curaçaoan main course dish, consisting of a large round ball of cheese stuffed with spiced meat , served steamed or baked. The dish is believed to have originated from Dutch Empire slaves of the Dutch West Indies stuffing leftover rinds of Gouda or Edam cheeses with meat table scraps. The name "keshi" is reported to be the Papiamento language rendering of kaas, "cheese" in Dutch. Modern keshi yena recipes typically include olives, raisins and chicken as ingredients in the stuffing. While some modern cooks prepare keshi yena in ramekins, others stick to the traditional method of baking the dish in an empty can of sausages, or by wrapping the cheese in plantain leaves.

Pterois is a genus of venomous marine fish, commonly known as lionfish, native to the Indo-Pacific. It is characterized by conspicuous warning coloration with red or black bands, and ostentatious dorsal fins tipped with venomous spines. Pterois radiata, Pterois volitans, and Pterois miles are the most commonly studied species in the genus. Pterois species are popular aquarium fish. P. volitans and P. miles are recent and significant invasive species in the west Atlantic, Caribbean Sea and Mediterranean Sea. Pterois was described as a genus in 1817 by German naturalist, botanist, biologist, and ornithologist Lorenz Oken. In 1856 the French naturalist Eugène Anselme Sébastien Léon Desmarest designated Scorpaena volitans, which had been named by Bloch in 1787 and which was the same as Linnaeus's 1758 Gasterosteus volitans, as the type species of the genus. This genus is classified within the tribe Pteroini of the subfamily Scorpaeninae within the family Scorpaenidae. The genus name Pterois is based on Georges Cuvier's 1816 French name, “Les Pterois”, meaning "fins" which is an allusion to the high dorsal and long pectoral fins.

Lobsters are malacostracans of the family Nephropidae or its synonym Homaridae. They have long bodies with muscular tails and live in crevices or burrows on the sea floor. Three of their five pairs of legs have claws, including the first pair, which are usually much larger than the others. Highly prized as seafood, lobsters are economically important and are often one of the most profitable commodities in the coastal areas they populate. Commercially important species include two species of Homarus from the northern Atlantic Ocean and scampi —the Northern Hemisphere genus Nephrops and the Southern Hemisphere genus Metanephrops.[citation needed]

The mahi-mahi or common dolphinfish (Coryphaena hippurus) is a surface-dwelling ray-finned fish found in off-shore temperate, tropical, and subtropical waters worldwide. Also widely called dorado (not to be confused with Salminus brasiliensis, a freshwater fish) and dolphin, it is one of two members of the family Coryphaenidae, the other being the pompano dolphinfish. These fish are most commonly found in the waters around the Gulf of Mexico, Costa Rica, Hawaii and the Indian Ocean. The name mahi-mahi comes from the Hawaiian language and means 'very strong', through the process of reduplication. By chance in Persian, mahi (ماهی) means 'fish', but the word mahi-mahi is Hawaiian. Though the species is also referred to as the common dolphinfish, the use of dolphin can be misleading as they are not closely related to dolphins; see Coryphaena for the possible etymologies of dolphinfish. In parts of the Pacific and along the English-speaking coast of South Africa, the mahi-mahi is commonly referred to by its name in Spanish, dorado. On the Mediterranean island of Malta, the mahi-mahi is referred to as the lampuka. In Indonesian, they are called ikan lemadang.

Marlins are fish from the family Istiophoridae, which includes 11 species. The family's common name is thought to derive from their resemblance to a sailor's marlinspike.

Mussel is the common name used for members of several families of bivalve molluscs, from saltwater and freshwater habitats. These groups have in common a shell whose outline is elongated and asymmetrical compared with other edible clams, which are often more or less rounded or oval. The word "mussel" is frequently used to mean the bivalves of the marine family Mytilidae, most of which live on exposed shores in the intertidal zone, attached by means of their strong byssal threads ("beard") to a firm substrate. A few species (in the genus Bathymodiolus) have colonised hydrothermal vents associated with deep ocean ridges.

Nasi goreng , literally meaning "fried rice" in both the Indonesian and Malay languages, is a Southeast Asian rice dish with pieces of meat and vegetables added. It can refer simply to fried pre-cooked rice, a meal including stir fried rice in a small amount of cooking oil or margarine, typically spiced with kecap manis (sweet soy sauce), shallot, garlic, ground shrimp paste, tamarind and chilli and accompanied by other ingredients, particularly egg, chicken and prawns. There is also another kind of nasi goreng which is made with ikan asin (salted dried fish) which is also popular across Indonesia. Nasi goreng is sometimes described as Indonesian stir-fried rice, although it is also popular in Southeast Asia. Beyond the Malay Archipelago, it has gained popularity through Indonesian influence in Sri Lanka and via Indonesian immigrant communities in Suriname and the Netherlands. It is distinguished from other Asian fried rice recipes by its aromatic, earthy and smoky flavor, owed to generous amount of caramelised sweet soy sauce and powdered shrimp paste, and the taste is stronger and spicier compared to Chinese fried rice.

Ostriches are large flightless birds. Two living species are recognised, the common ostrich, native to large areas of sub-Saharan Africa, and the Somali ostrich, native to the Horn of Africa. They are the heaviest and largest living birds, with adult common ostriches weighing anywhere between 63.5 and 145 kilograms and laying the largest eggs of any living land animal. With the ability to run at 70 km/h , they are the fastest birds on land. They are farmed worldwide, with significant industries in the Philippines and in Namibia. South Africa produces about 70% of global ostrich products, with the industry largely centered around the town of Oudtshoorn. Ostrich leather is a lucrative commodity, and the large feathers are used as plumes for the decoration of ceremonial headgear. Ostrich eggs have been used by humans for millennia.

Oyster is the common name for a number of different families of salt-water bivalve molluscs that live in marine or brackish habitats. In some species, the valves are highly calcified, and many are somewhat irregular in shape. Many, but not all oysters, are in the superfamily Ostreoidea.

A panini is a sandwich made with Italian bread (such as ciabatta and michetta), usually served warm after grilling or toasting. In many English-speaking countries, the name panini is given to a grilled sandwich made using various breads, including baguette, ciabatta, focaccia, and michetta. The bread is cut horizontally and filled with deli ingredients such as cheese, ham, mortadella, salami, or other food, and often served warm after having been pressed by a warming grill. Panini is a word of Italian origin. In Italian, the noun panino ( Italian: [pa'niːno]; pl.: panini) is a diminutive of pane (lit. 'bread') and refers to a bread roll. Panino imbottito (lit. 'stuffed panino') refers to a sandwich, but the word panino is also often used alone to indicate a sandwich in general. Similar to a panino is a tramezzino, a triangular or square sandwich made up of two slices of soft white bread with the crusts removed.[citation needed]

A pannenkoek ˌkuk] ⓘ; plural pannenkoeken [-ˌkukə(n)] ⓘ) or Dutch pancake is a style of pancake with origins in the Netherlands. Pannenkoeken are usually larger (up to a foot in diameter) and much thinner than their American or Scotch pancake counterparts, but not as thin as crêpes.[citation needed] They may incorporate slices of bacon, apples, cheese, or raisins. Plain ones are often eaten with treacle (syrup made of sugar beets), appelstroop (an unspiced Dutch variety of apple butter) or (powdered) sugar and are sometimes rolled up to be eaten by hand or with cutlery. Basic ingredients are flour (plain, self-rising or both), milk, salt, and eggs. The addition of buckwheat flour (up to 50 percent) is traditional, but much less common nowadays. Milk can be replaced with soy milk without changing the end result. The ingredients are beaten into a batter of a fairly liquid consistency. A ladle of batter is then pan fried in butter or oil. Once the top of the pannenkoek is dry and the edges start to brown, it can be flipped over. The first one is often less than perfect. At home a stack of pannenkoeken can be made in advance so everyone can eat at the same time, or people can take turns at the stove.

Peanut soup or groundnut soup is a soup made from peanuts, often with various other ingredients. It is a staple in African cuisine but is also eaten in East Asia , the United States (mainly in Virginia) and other areas around the world. It is also common in some regions, such as Argentina's northwest, Bolivia and Peru, where it can sometimes be served with bone meat and hollow short pasta or fries. In Ghana it is often eaten with fufu, omo tuo and banku often very spicy. Groundnut soup is also a native soup of the Benin (Edo) people in Nigeria and it is often eaten with pounded yam. Some of the essential ingredients used in making it are: Ugu, Oziza leafs Piper guineense (uziza seed) and Vernonia amygdalina (bitter leaf). It is prepared from groundnut which is mashed into a paste, usually termed as groundnut paste. When cooked, the groundnut is ashy pink in color. Groundnut soup is eaten with eba, fufu, banku, kenkey and so on. It is a delicacy that Nigerian, Ghanaian and people in other African countries consume, such as in Sierra Leone. Pom is a Surinamese oven dish made using arrowleaf elephant ear root, locally called "pomtajer". Within the Surinamese community, in both Suriname and the Netherlands, pom is the most popular and best-known festive dish. Within the Surinamese community pom is frequently referred to as a dish of Creole or Jewish origin. It was introduced by the Portuguese–Jewish plantation owners as the Portuguese potato oven dish. Because the potato did not grow in Suriname and had to be imported, it was soon replaced with the root of the tayer plant. Pom combines three central ingredients: chicken, citrus juice and pomtajer (Xanthosoma sagittifolium). Only the latter is indigenous, and although all plant parts are edible, only the underground part of the main stem is used as an ingredient in preparing pom. The main stem or corm is most frequently designated as pomtajer or pongtaya (lit. the tajer/taya for pom).
