Milk is a white liquid food produced by the mammary glands of mammals. It is the primary source of nutrition for young mammals before they are able to digest solid food. Milk contains many nutrients, including calcium and protein, as well as lactose and saturated fat. Immune factors and immune-modulating components in milk contribute to milk immunity. Early-lactation milk, which is called colostrum, contains antibodies and immune-modulating components that strengthen the immune system against many diseases. The US CDC agency recommends that children over the age of 12 months (the minimum age to stop giving breast milk or formula) should have two servings of dairy (milk) products a day, and more than six billion people worldwide consume milk and milk products. As an agricultural product, dairy milk is collected from farm animals, mostly cattle. In 2011, dairy farms produced around 730 million tonnes (800 million short tons) of milk from 260 million dairy cows. India is the world's largest producer of milk and the leading exporter of skimmed milk powder. New Zealand, Germany, and the Netherlands are the largest exporters of milk products. Between 750 and 900 million people live in dairy-farming households.

Goat milk is the milk of domestic goats. Goats produce about 2% of the world's total annual milk supply. Some goats are bred specifically for milk. Goat milk naturally has small, well-emulsified fat globules, which means the cream will stay in suspension for a longer period of time than cow's milk; therefore, it does not need to be homogenized. Eventually, the cream will rise to the top over a period of a few days. If the milk is to be used to make cheese, homogenization is not recommended, as this changes the structure of the milk, affecting the culture's ability to coagulate the milk as well as the final quality and yield of cheese. Dairy goats in their prime average—2.7 to 3.6 kg (6 to 8 lb)—(or 2.8 to 3.8 L (3 to 4 U.S. qt))—of milk production daily—roughly during a ten-month lactation. Goats produce more after freshening and gradually drop production toward the end of their lactation. The milk generally averages 3.5% butterfat.

Camel milk is milk from female camels. It has supported nomad and pastoral cultures since the domestication of camels millennia ago. Herders may for periods survive solely on the milk when taking the camels on long distances to graze in desert and arid environments, especially in parts of the Middle East, North Africa and the Horn of Africa. The camel dairy farming industry has grown in Australia and the United States, as an environmentally friendly alternative to cow dairy farming using a species well-adapted to arid regions. Camel milk has different nutritional characteristics from cow milk, but the proportions of nutrients can be highly variable based on a number of factors, including type and age of camel, climate, what it eats, and milking method. It can be used to make products such as yogurt and ice cream, but is not so easily turned into butter or cheese. Camel milk tastes similar to cow's milk. Before the conception and spread of Islam, many Arabs were herdsmen who lived off the milk from their camels and the produce of desert oases.

Asida iːdə]) is a common dish in the Arab world. It is a lump of dough, obtained by stirring wheat flour into boiling water, sometimes with added butter or honey. Similar in texture to fufu, it is eaten mainly in Middle East and African countries. It is considered one of the most popular desserts and traditional dishes in many Arab countries. Asida is particularly popular in Sudan, Morocco, Libya, Algeria, Tunisia, Yemen, Ethiopia, Eritrea, and the rest of the Middle East. Often served during religious holidays such as Mawlid and Eid, it is also served during other traditional ceremonies, for example accompanying the birth of child, such as the ‘aqīqah, the cutting of the hair of a newborn seven days after birth. A simple, yet rich dish, often eaten without other complementary dishes, it is traditionally served at breakfast and is also given to women in labor.

Biltong is a form of air-dried, cured meat which originated in South Africa, and from there spread to other Southern African countries -- . Various types of meat are used to produce it, ranging from beef to game meats such as ostrich or kudu. The cut may also vary being either fillets of meat cut into strips following the grain of the muscle, or flat pieces sliced across the grain. It is related to beef jerky, as both are spiced, dried meats; however, the typical ingredients, taste, and production processes may differ. Biltong is air-dried, which gives it a unique texture and flavor, whereas jerky is heated to at least 71 °C (160 °F). The word "biltong" is from the Afrikaans bil ("buttock") and tong ("strip" or "tongue").

Camels have long been domesticated and, as livestock, they provide food (camel milk and meat) and textiles (fiber and felt from camel hair). Like Muslims, who traditionally have the filling soup for Iftar meals, Jews break their fast with it during Yom Kippur. 'peanut butter sauce,' where tige is 'peanut,' dege is 'paste,' and na is 'sauce') in Bamanankan. Domodah is a sauce also used by Gambians, whose name has been borrowed from the Mandinka language. In Senegal domodah or domoda refers to flour-thickened soup or stew, which is different from maafe that uses peanut paste. Senegalese maafe is a favorite dish among several Senegalese and Gambian ethnic groups; it has become the national dish in Mali as well as a popular dish across West Africa, even outside West Africa such as in Cameroon and France.

Méchoui or Meshwi is a whole sheep or lamb spit-roasted on a barbecue in Maghrebi cuisine. The word comes from the Arabic word šawā (شواء, "grilling, roasting"). This dish is very popular in North Africa. In Algeria and Morocco, the term méchoui "refers to the method of cooking a lamb or a sheep cooked whole on the spit".

Riz gras or riz au gras is a rice-based dish in Beninese, Burkinabé, Guinean, Ivorian, and Togolese cuisines, in West Africa. It is also prepared in other African countries, such as Senegal, where it is called tiebou djen and is prepared with significant amounts of fish and meat. This dish can be considered a variation of what is known as jollof rice in English-speaking West Africa. Riz gras is often served at parties in urban areas of Burkina Faso. Riz gras is prepared with significant amounts of meat and vegetables, and is usually served with the meat and chunks of vegetables presented atop the rice. Additional ingredients used include tomatoes, eggplant, bell peppers, carrots, cabbage, onion, garlic, meat or vegetable stock, oil and salt.

Seafood is any form of sea life regarded as food by humans, prominently including fish and shellfish. Shellfish include various species of molluscs , crustaceans (e.g. shrimp, crabs, and lobster), and echinoderms (e.g. sea cucumbers and sea urchins). Historically, marine mammals such as cetaceans (whales and dolphins) as well as seals have been eaten as food, though that happens to a lesser extent in modern times. Edible sea plants such as some seaweeds and microalgae are widely eaten as sea vegetables around the world, especially in Asia. Pita or pitta (British English) is a family of yeast-leavened round flatbreads baked from wheat flour, common in the Mediterranean, Levant, and neighboring areas. It includes the widely known version with an interior pocket, also known as Arabic bread (Arabic: خبز عربي; khubz ʿArabī). In the United Kingdom, Greek bread is used for pocket versions such as the Greek pita, and are used for barbecues as a souvlaki wrap. The Western name pita may sometimes be used to refer to various other types of flatbreads that have different names in their local languages, such as numerous styles of Arab khubz (bread). The first mention of the word in English cited in the Oxford English Dictionary was in 1936. The English word is borrowed from Modern Greek πίτα (píta, "bread, cake, pie"), in turn from Byzantine Greek (attested in 1108), possibly from Ancient Greek πίττα (pítta) or πίσσα (píssa), both "pitch/resin" for the gloss, or from πικτή (piktḗ, "fermented pastry"), which may have passed to Latin as picta cf. pizza. A bean is the seed of any plant in the legume family used as a vegetable for human consumption or animal feed. The seeds are often preserved through drying, but fresh beans are also sold. Bottarga is salted, cured fish roe pouch, typically of the grey mullet or the bluefin tuna . The best-known version is produced around the Mediterranean; similar foods are the Japanese karasumi and Taiwanese wuyutsu, which is softer, and Korean eoran, from mullet or freshwater drum. It has many names and is prepared in various ways. Due to its scarcity and involved preparation it is expensive and regarded as a delicacy. The English name, bottarga, was borrowed from Italian. The Italian form is thought to have been introduced from the Arabic 'buṭarḫah' (بطارخة), plural form 'buṭariḫ' (بطارخ), itself from Byzantine Greek 'ᾠοτάριχον' ('oiotárikhon'), a combination of the words 'ᾠόν' ('egg') and 'τάριχον' ('pickled'). The Italian form can be dated to c. 1500, as the Greek form of the word, when transliterated into Latin as 'ova tarycha', occurs in Bartolomeo Platina's De Honesta Voluptate (c. 1474), the earliest printed cookbook. In an Italian manuscript that "closely parallels" Platina's cookbook and dated to shortly after its publication, 'botarghe' is attested in the corresponding passage.

Caravane, also known as Camelbert, is the brand name of a camel milk cheese produced in Mauritania by Tiviski, a company founded by Nancy Abeiderrhamane in 1987. A brie-like cheese, its availability is largely limited to Mauritania, and as an export to neighboring Senegal. The cheese has similarities to brie, featuring a bloomy rind and a soft, off-white interior. Caravane cheese is produced in Mauritania at one of the earliest camel milk dairy plants globally, founded and operated by Nancy Abeiderrahmane. Originally from England and raised in Spain, Abeiderrahmane settled in Mauritania in 1986 after marrying a Mauritanian politician. In 1992, the FAO aided her in creating camel cheese, providing a scientist to teach her a special enzyme method. This resulted in Caravane.

Dried fruit is fruit from which the majority of the original water content has been removed prior to cooking or being eaten on its own. Traditional dried fruits such as raisins, figs, dates, apricots, and apples have been a staple of Mediterranean diets for millennia. This is due partly to their early cultivation in the Middle Eastern region known as the Fertile Crescent, made up of parts of modern Iran, Iraq, southwest Turkey, Syria, Lebanon, Palestine, Israel, and northern Egypt. Drying or dehydration was the earliest form of food preservation: figs, dates or grapes which fell from the plant and were sun-dried may have been consumed by early hunter-gatherers as edible and more long-lasting and sweeter.
