It is one of the oldest human-made foods, having been of significance since the dawn of agriculture, and plays an essential role in both religious rituals and secular culture. Bread may be leavened by naturally occurring microbes (e.g. sourdough), chemicals (e.g. baking soda), industrially produced yeast, or high-pressure aeration, which creates the gas bubbles that fluff up bread. In many countries, commercial bread often contains additives to improve flavor, texture, color, shelf life, nutrition, and ease of production.

Bsisa is a typical Mediterranean food, based on flour of roasted barley which dates back to Roman times. Bsisa is a variety of mixtures of roasted cereals ground with fenugreek and aniseed and cumin and sugar. This kind of food is known throughout Tunisia and Libya. Its history goes back a long way, and travellers and nomads used to take bsisa with them on their journeys since it was both full of nutritional value and easy to carry in its ground powder form. The herbs and spices that are added to the mixture can vary, and the mixtures can also be used as a liquid when added to milk or water, creating a strongly floured drink called Rowina. The most common use for bsisa is to mix them with olive oil into a paste. This is then typically eaten with dates or figs for a quick meal which is energy-rich and healthy. 'Howira' is a similar mixture to Bsisa, however of a darker complexion and consists of similar ingredients.

Cheese is a type of dairy product produced in a range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk . During production, milk is usually acidified and either the enzymes of rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Over a thousand types of cheese exist, produced in various countries. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurised, the butterfat content, the bacteria and mold, the processing, and how long they have been aged. Herbs, spices, or wood smoke may be used as flavoring agents. Other added ingredients may include black pepper, garlic, chives or cranberries. A cheesemonger, or specialist seller of cheeses, may have expertise with selecting, purchasing, receiving, storing and ripening cheeses.

Ful medames , or simply fūl, is a stew of cooked fava beans served with olive oil, cumin, and optionally with chopped parsley, garlic, onion, lemon juice, chili pepper and other vegetables, herbs, and spices. Ful medames is traditionally made in and served out of a large metal jug. It is notably a staple food in Sudan and Egypt and is considered a national dish, especially in the northern cities of Cairo and Gizah.[citation needed] Fava beans can also sometimes be found in other cuisines in the Middle East, and Africa, though cooked differently. The name of this culinary dish is transcribed fūl medammis, ful medammes, foul mdammes, etc. Some modern dictionaries suggest that its Coptic name is ⲫⲉⲗ phel or fel, but this is a term derived from Arabic (after the Arabization of Egypt). The term Leben, variously laban, liben, lben // ⓘ in the Middle East and North Africa, refers to a food or beverage of fermented milk. Generally, there are two main products known as leben: The yogurt variant for the Levant region and the buttermilk variant for parts of Arabia and North Africa (Maghreb). Leben can be served at breakfast, lunch, or dinner. Leben as a drink is traditionally prepared by letting milk ferment for around 24 hours, then churning and removing the butter. The remaining buttermilk can keep for several days at room temperature. In modern times, it is produced industrially.[citation needed] Leben in parts of the Middle East is traditionally prepared by boiling milk, usually whole milk, then adding yogurt (or previously made, left over/store-bought leben), and then cooled overnight.[citation needed]

Masoob is a traditional banana-based pudding from the Hadhramaut region in Yemen. It is made from over-ripe bananas, ground flat bread, cream, cheese, honey, and sometimes dates. It is popular in other Arab states like Saudi Arabia and the UAE, where Hadhrami immigrant communities introduced the dish. Masoob is a bread pudding prepared with mashed bananas, honey, and cream along with whole wheat bread. Some versions top with dates, almonds, raisins, and even cheese. The meal provides an ideal combination of richness from the cream, sweetness from the bananas and honey, and earthy nutty flavor from the bread. Masoob is delicious both as a sumptuous dessert and as a wholesome breakfast. Being rich in dietary fiber, healthy fats, and carbohydrates, Masoob is a wholesome breakfast choice. Additionally, it contains bananas that provide good amounts of potassium, which is necessary for controlling fluid balance, nerve impulses, and muscular contractions.

The olive, botanical name Olea europaea, meaning 'European olive', is a species of small tree or shrub in the family Oleaceae, found traditionally in the Mediterranean Basin, with wild subspecies found further afield in Africa and western Asia. When in shrub form, it is known as Olea europaea 'Montra', dwarf olive, or little olive. The species is cultivated in all the countries of the Mediterranean, as well as in Australia, New Zealand, North and South America and South Africa. It is the type species for its genus, Olea. The tree and its fruit give their name to the Oleaceae plant family, which also includes species such as lilac, jasmine, forsythia, and the true ash tree. The olive's fruit, also called an "olive", is of major agricultural importance in the Mediterranean region as the source of olive oil; it is one of the core ingredients in Middle Eastern and Mediterranean cuisines. Thousands of cultivars of the olive tree are known. Olive cultivars may be used primarily for oil, eating, or both. Olives cultivated for consumption are generally referred to as "table olives". About 80% of all harvested olives are turned into oil, while about 20% are used as table olives.

Shakshouka , also spelled shakshuka or chakchouka, is a Maghrebi dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion, and garlic, commonly spiced with cumin, paprika and cayenne pepper. Shakshouka is a popular dish throughout North Africa and the Middle East. Shakshuka is a word for "mixture" in Algerian Arabic and "mixed" in Tunisian Arabic. The Oxford English Dictionary describes it as being of multiple origins, an onomatopoeic Maghribi Arabic word, related to the verb shakshaka meaning "to bubble, to sizzle, to be mixed up, to be beaten together," and the French word Chakchouka, which was borrowed into English in the nineteenth century. Chakchouka was borrowed into French from Algerian Arabic. Gil Marks, while noting some similarities with the Ottoman dish menemen, suggests that shakshouka evolved from şakşuka which spread to the Maghreb through the influence of the Ottoman Empire. Anthony Buccini noted similarities between a wider range of vegetable stews. He and Noam Sienna conclude that both shakshouka and menemen, among other dishes like piperade and ratatouille, are members of a wider family of vegetable stews of common ancestry appearing throughout the western Mediterranean.

The Oxford Companion to Food (3rd edition) suggests that basbousa might have developed from a dish called ma'mounia, which was created around the 10th century. Ma'mounia was made by cooking rice in fat and syrup. This recipe was later adapted to use semolina, with the batter being cooked first and then soaked in syrup. Another take on its origin suggests that basbousa was first made during the 16th century in the Ottoman Empire, likely in what is modern-day Turkey, to celebrate the conquest of Armenia.

Kaak or Kaak el-Eid , is a small circular biscuit that originated in Egypt and is eaten across the Arab world to celebrate Eid al-Fitr. It is covered with powdered sugar and can be stuffed with ʿagameyya (عجمية [ʕæɡæˈmej.jæ], a mixture of honey, nuts, and ghee), lokum, walnuts, pistachios, or dates, or simply served plain. Date-filled kahk are believed to be the origin of maamoul, a similar Eid biscuit eaten in the Levant. This dish also popular in Indonesia and called as kue kaak as result of acculturation between Arabs and Indonesian. Usually served during Mawlid or Eid ul-Fitr. Kaak is an important part of Egyptian and Sudanese culture. In addition to its role in Eid, when it is often served to guests, it is also eaten as part of a wedding feast and is occasionally served at other holiday feasts, namely Mawlid. Baking kaak is a traditional and social activity in the region: women of a village or neighborhood, gather together to bake kaak, chat, and swap stories and recipes. Sometimes, Egyptians will prepare their kaak at home before taking it to a communal or commercial bakery to be baked and cooled. Families typically exchange kaak as gifts, and friendly informal competitions over whose kaak is best are common. The designs stamped on kaak can be elaborate and are sources of pride for Egyptian families. Kaak molds, typically made from wood or ceramic, are often passed down from generation to generation. While bakeries have always sold premade kaak, buying kaak from a bakery has increased in popularity in urban Egypt in recent years. However, store-bought kaak is relatively expensive—reaching £E170 per kilo as of April 2023 (minimum wage £E3000 in 2023)— so many Egyptians, particularly those in rural areas, still bake their own.

The dish was described as early as the 13th century by al-Baghdadi as luqmat al-qādi , "judge's morsels". The Arabic word luqma (لُقْمَةٌ) (plural luqmāt), means morsel, mouthful, or bite. The dish was known as luqmat al-qādi (لُقْمَةُ ٱلْقَاضِيِ) or "judge's morsels" in 13th-century Arabic cookery books, and the word luqma or loqma by itself has come to refer to it. The Turkish name for the dish, lokma, is derived from the Arabic, as is the Greek name loukoumádes (λουκουμάδες). The recipe for Luqmat al-Qadi, yeast-leavened dough boiled in oil and doused in honey or sugar syrup with rosewater, dates back to at least the early medieval period and the 13th-century Abbasid Caliphate, where it is mentioned in several of the existent cookery books of the time. It is also mentioned in the One Thousand and One Nights, in the story The Porter and the Three Ladies of Baghdad. The explorer and scholar Ibn Battuta in the 14th century encountered the dish he knew as Luqaymat al-Qadi at a dinner in Multan, during his travels in medieval India, where his hosts called it al-Hashimi.

Turkish delight, or lokum is a family of confections based on a gel of starch and sugar. Premium varieties consist largely of chopped dates, pistachios, hazelnuts or walnuts bound by the gel; traditional varieties are often flavored with rosewater, mastic gum, bergamot orange, or lemon. Other common flavors include cinnamon and mint. The confection is often packaged and eaten in small cubes dusted with icing sugar, copra, or powdered cream of tartar to prevent clinging. The origin of modern lokum is not precisely known, though the confection is known to have been produced in the Ottoman Empire since the late 18th century.

It is also a popular Christmas dessert in Lebanon as a celebration of the birth of Jesus. The name 'meghli' means “boiled” in Arabic, referring to the long time (up to an hour) it must be continuously stirred while boiling. The dish was traditionally served to celebrate the birth of a male heir, but has now become a dessert to celebrate any newborn. The caraway is thought to assist the new mother in lactating

A mousse may be sweet or savoury. Sweet mousses are typically made with whipped egg whites, whipped cream, or both, and flavored with one or more of chocolate, coffee, caramel, puréed fruits, or various herbs and spices, such as mint or vanilla. In the case of some chocolate mousses, egg yolks are often stirred into melted chocolate to give the final product a richer mouthfeel. Mousses are also typically chilled before being served, which gives them a denser texture. Additionally, mousses are often frozen into silicone molds and unmolded to give the mousse a defined shape. Sweetened mousse is served as a dessert or used as an airy cake filling. It is sometimes stabilized with gelatin. Savoury mousses can be made from meat, fish, shellfish, foie gras, cheese, or vegetables. Hot mousses often get their light texture from the addition of beaten egg whites.

Zalabiyeh is a fritter or doughnut found in several cuisines across the Arab world, West Asia and some parts of Europe influenced by the former. The fritter version is made from a semi-thin batter of wheat flour which is poured into hot oil and deep-fried. The earliest known recipe for the dish comes from a 10th-century Arabic cookbook and was originally made by pouring the batter through a coconut shell. The earliest known recipes for zalabiya comes from the 10th century Arabic cookbook Kitab al-Tabikh. In the old Al-Baghdadi book of recipes of the Arabs; the dough was poured through a coconut shell. This style of fritter is similar to the Indian jelabi and a 16th-century recipe from German cuisine for strauben made using a funnel.

Om Ali, Omali, Umm Ali, or Oumm Ali , meaning "Mother of Ali", is a traditional Egyptian dessert, and is a national dessert of Egypt. There are numerous variations with different composition. The dish, which is traced back to as far as Medieval Egypt, is named after the wife of the Sultan of Egypt. It is commonly eaten during Ramadan as part of the iftar or sunset feast. There multiple versions of the origin of the dish. The most often cited version is that it originated as a celebration of the death of Shajar al-Durr, who had been married to Egypt's final Sultan from the Ayyubid dynasty, As-Salih, and subsequently to the first of Egypt's Mamluk Sultans, Izz al-Din Aybak. Shajar al-Durr plotted the murder of Aybak, after which she became ruler of Egypt. Ultimately, she was herself killed in retribution, whereafter Aybak's first wife, who was known as Om Ali, asked to have a dessert prepared in celebration. The dessert was popularised throughout the country, and was named after Om Ali. Another version is that Om Ali celebrated the death of her husband, Aybak, and asked the cooks to come up with the most delicious dessert. The cooks used what was at hand: bread, milk and sugar.

Qatayef or qata'if is an Arabic dessert. It is a type of sweet dumpling filled with cream or nuts, or a folded pancake, similar to a Scottish crumpet. The Arabic word qaṭaːyif (Arabic: قطايف) is derived from the Arabic root q-ṭ-f, meaning to pick up or to pluck. Qatayef is believed to be of Fatimid origin. Some believe that qatayef are the creation of the Fatimid Dynasty, however, their history dates back to the Abbasid Caliphate, 750–1258 CE. Qatayef was mentioned in a tenth century Arabic cookbook dating back to the Abbasid Caliphate by Ibn Sayyar al-Warraq called Kitab al-Ṭabīḫ (Arabic: كتاب الطبيخ, The Book of Dishes). The book was later translated by Nawal Nasrallah under the name Annals of the Caliphs' Kitchens. The traditional stuffing of Qatayef, as evident in a number of Medieval Arabic cookbooks, is crushed almond and sugar. In these recipes, once the pancake was stuffed, it would sometimes be fried in walnut oil or baked in the oven. Qatayef was traditionally prepared by street vendors as well as households in Egypt and the Levant. It is usually filled with akkawi cheese, crushed walnuts, as well as crushed pistachios. Diverse fillings, such as Nutella, are also used.

Versions are found in most Arab, Balkan and Ottoman cuisines, with various different forms and recipes. They are similar to polvorones from Andalusia. In the Maghreb and Egypt, they are often served with Libyan tea, Arabic coffee or Maghrebi mint tea. A recipe for a shortbread cookie similar to ghorayebah but without almonds, called in Arabic khushkanānaj gharīb (exotic cookie), is given in the earliest known Arab cookbook, the 10th-century Kitab al-Ṭabīḫ. Kurabiye appears in the Ottoman cuisine in the 15th century.

Tulumba or Bamiyeh is a deep-fried dessert found in Egypt, Turkey and the regional cuisines of the former Ottoman Empire. It is a fried batter soaked in syrup, similar to jalebis or churros. It is made from unleavened choux pastry dough (usually about 3 cm long) piped with a pastry bag using an open star or similar tip. It is first deep-fried to golden colour and then sugar-sweet syrup is poured over it when still hot. It is eaten cold. Tulumba literally means 'pump' in Turkish, deriving from the Italian tromba. The dessert is called pomba in Cypriot Greek and bombacık in Cypriot Turkish. In Armenian cuisine it may be called either pomp or tulumba (Armenian: թուլումբա). Tulumba features in Albanian, Serbian, Bosnian, Bulgarian, Macedonian, Greek (Greek: τουλούμπα), Azeri (Azerbaijani: Ballıbadı) and Turkish cuisines. The sweet is also found in Persian cuisine as bamiyeh (Persian: باميه), after the vegetable of the same Persian name (okra), due to its shape. In Hejazi it is called ṭurumba (Arabic: طُرُمْبَة) directly from Italian: tromba, but in Egyptian and some Arab cuisines it is called balaḥ ash-Shām (Arabic: بلح الشام), literally "Syrian dates" or "Damascene dates," though the name may have come from "şambali", another Turkish dessert (the "Şam" in "şambali" corresponding to "Shām" in "balaḥ ash-Shām" and both referring to Damascus). In Iraqi cuisine it is known as datli (Arabic: داطلي), directly coming from Turkish word tatlı. It is made from a yogurt[citation needed] and starch based dough, which is fried before being dipped in syrup. It is a special sweet often enjoyed at Iftar in Ramadan. It is also commonly sold alongside jalebi, which is prepared in a similar way, but arranged in a web-like arrangement of strips of dough.

Zerde is a traditional Iraqi, Mesopotamian dessert. The original rice pudding, infused with a generous amount of saffron giving it a vibrant yellow hue and a delicate floral flavour. This is a festive dish popular at weddings, births, and during holy festivities such as the first Sunday of the month of Sha'aban celebrating the birth of the prophet Zechariah, and the first ten days of the sacred month of Muharram. Zer, which means gold and or yellow, comes from Persian zard which means yellow. In some regions of Turkey, Zerdeçal Turmeric also added for a more intense colour. Zerde is very popular and has made its way to western Turkey with people immigrating to west at Eastern Thrace, which provides almost the half of country's rice production, zerde is a favored dessert. Flavoring ingredients of zerde vary slightly from region to region in Turkey depending on the local fruits.

Some methods keep the coffee light whereas others can make it dark. Arabic coffee is bitter, and typically no sugar is added. It is usually served in a small cup that is adorned with a decorative pattern, known as a finjān. Culturally, Arabic coffee is served during family gatherings or when receiving guests. Arabic coffee originated in South Arabia, beginning in the port city of Mokha in Yemen and eventually travelling to Mecca in Hejaz, Egypt, the Levant, and then, in the mid-16th century, to Turkey and from there to Europe where coffee eventually became popular as well. Arabic coffee is an Intangible Cultural Heritage of Arab states confirmed by UNESCO. Every year on March 3, Yemenis celebrate the "Yemeni Coffee Day," a national festival to encourage coffee cultivation.

The word cortado is the past participle of the Spanish verb cortar , in the sense of 'dilute', and can refer variously to either coffee or espresso drinks throughout Spanish and Portuguese speaking countries. It is commonly called a standard double, due to its standard in judging the espresso quality in barista competitions, where four single espresso are made using two double portafilters. A single shot of espresso, by contrast, is called a solo ('single') and was developed because it was the maximum amount of ground coffee that could practically be extracted by lever espresso machines. Generally, there are two main products known as leben: The yogurt variant for the Levant region and the buttermilk variant for parts of Arabia and North Africa (Maghreb). Leben can be served at breakfast, lunch, or dinner. Leben as a drink is traditionally prepared by letting milk ferment for around 24 hours, then churning and removing the butter. The remaining buttermilk can keep for several days at room temperature. Qamar al-Din[fn 1] is an apricot fruit leather, which is popularly made into apricot juice or a nectar beverage from Arab cuisine famously consumed during the Muslim holy month of Ramadan. It originates from Syria and was first produced in the Ghouta, where the variety of apricots most suitable for qamar al-din was first grown. Qamar al-din is enjoyed across the Middle East and North Africa as well as in Somalia, though Syrian qamar al-din is still believed to be the best because the variety of apricots most suitable for making qamar al-din grows only in Syria and southwestern Turkey. Several theories have been proposed for the origin of qamar al-din's name. One theory holds that it was named for its inventor, a Syrian man named Qamar al-Din. He was said to have been so handsome that he resembled the moon (qamar, Arabic: قمر), hence his name. Another theory holds that apricot season coincided with the sighting of the new moon marking the beginning of Ramadan in the year when qamar al-din was invented. A similar theory, widespread in Egypt, traces the name's origin to a Caliph who was known to celebrate with qamar al-din upon seeing the crescent moon during Ramadan.

Ristretto , known in full in Italian as caffè ristretto, is a "short shot" (20 ml (0.7 imp fl oz; 0.7 US fl oz) from a double basket) of a highly concentrated espresso coffee. It is made with the same amount of ground coffee, but extracted (also in from 20 to 30 seconds) using half as much water. A normal short shot might look like a ristretto, but in reality, would only be a weaker, more diluted, shot. The opposite of a ristretto (Italian for 'shortened, narrow') is a lungo ('long'), which has double the amount of water. In France a ristretto is called café serré. Regardless of whether one uses a hand pressed machine or an automatic, a regular double shot is generally considered to be around 14–18 g (0.49–0.63 oz) of ground coffee extracted into about 40 ml (2 fl oz; two shot glasses). Thus, a "double ristretto" consumes the same amount of coffee beans but fills only a single shot glass.

Salep, also spelled sahlep or sahlab,[note 1] is a flour made from the tubers of the orchid genus Orchis . These tubers contain a nutritious, starchy polysaccharide called glucomannan. Salep flour is consumed in beverages and desserts, especially in the cuisines of the former Ottoman Empire, notably in the Levant where it is a traditional winter beverage. An increase in consumption is causing local extinctions of orchids in parts of Turkey and Iran. The word salep ultimately comes from Arabic saḥlab (سَحْلَب), through French and Turkish salep in the mid 18th century. The Arabic word is perhaps shortened from ḵuṣā aṯ-ṯaʕlab (Arabic: خُصَى الثَعْلَب, lit. 'fox's testicles'). The Ancient Romans used ground orchid bulbs to make drinks, which they called by a number of names, especially satyrion and priapiscus. As the names indicate, they likewise considered it to be a powerful aphrodisiac. Of salep, Paracelsus wrote: "behold the Satyrion root, is it not formed like the male privy parts? No one can deny this. Accordingly, magic discovered it and revealed that it can restore a man's virility and passion".

An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. Sobia is a cool drink, which is mostly known in the Hejaz, Saudi Arabia mainly during the holy month of Ramadan. In Hijaz, Saudi Arabia, the Sobia is usually made of bread, barley or oats, while in Egypt the drink is produced from rice, coconut powder and dairy products. The drink is widely produced in and consumed during Ramadan. Sobia syrup is made from the ingredients of barley, dry bread, oats or raisins, after which filtering are added amounts of sugar, cardamom and cinnamon mixed in proportional amounts, then ice is added to it for cooling.

Beer in Egypt has long held a significant role, and its presence in the country is thought to date back to the Predynastic period. In ancient Egypt wine was preferred by the upper class, whereas beer was a staple for working class Egyptians and a central part of their diet. Despite religious restrictions and conflicting views on alcohol after the Muslim conquest of Egypt, the consumption of beer did not cease, and it still remains the most popular alcoholic beverage in the country by far, accounting for 54 percent of all alcohol consumption. The modern beer industry in Egypt was founded by Belgian businessmen in 1897, with the establishment of Crown Brewery in Alexandria and later the Pyramid Brewery in Giza. Both breweries produced and sold a beer named Stella, each based on completely different recipes. In 1937 Heineken International became a major shareholder in both breweries. This acquisition coincided with growing nationalist sentiment and a political drive for increased native involvement in businesses, or Egyptianization. Under Heineken's ownership Pyramid Brewery took on the Arabized name Al Ahram Brewery. In 1963 the companies were consolidated under the name Al Ahram Beverages Company , after being nationalized by the socialist government of Egyptian president Gamal Abdel Nasser. The Stella brand was unified under government ownership and continued to be mass-produced. In 1997 the government sold the company to Egyptian businessman Ahmad Zayat who restructured it and introduced a line of non-alcoholic beverages to the company's portfolio. It was acquired once again by Heineken International in 2002. Stella remains by far the most popular beer in Egypt, with 47.5 million liters sold in 2016 (equivalent to a third of Egypt's total beer consumption), and ABC, which markets Stella as well as non-alcoholic Birell (the second most popular beer in Egypt), controls 89 percent of Egypt's beer market.

The suffering bastard is the name for two different mixed drinks, one being more of a standard cocktail associated with World War II and the other being more of an exotic drink associated with Tiki bars. As is the case with many cocktails, there are multiple recipe variations and historical origins have been argued and changed over time. Two of the earliest recipe versions have very different ingredients. One from bartender Joe Scialom (1942) calls for brandy and gin, while another from Tiki pioneer Victor J. Bergeron (AKA Trader Vic) primarily uses rum along with "secret ingredients" and is known for being garnished with a cucumber. According to Jeff Berry and others, a suffering bastard cocktail was created at the Shepheard's Hotel in Cairo. Bartender Joe Scialom was looking to make a hangover drink for allied troops and according to the story made one as a "cure" for the suffering soldiers who complained about the poor quality of liquor in the area. Both the drink and the hotel played a role in WWII. When the war was going well for the Axis, German General Rommel allegedly said "I'll be drinking champagne in the master suite at Shepheard's soon." The allies did well, however, and the drink was supposedly so popular with the troops that a telegram was sent asking for several gallons to be made and brought to the front lines.

An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. Portuguese priests and merchants introduced it to Europe during the 16th century. During the 17th century, drinking tea became fashionable among the English, who started to plant tea on a large scale in British India.

Brik or burek is the north African version of borek, a stuffed malsouka pastry which is commonly deep fried. The best-known version is the egg brik, a whole egg in a triangular pastry pocket with chopped onion, tuna, harissa and parsley. With a slightly different shape, but with identical ingredients and method of preparation, the brik is known in Algeria and Libya as bourek (بوراك). It is often filled with a raw egg and herbs or tuna, harissa and olives and is sometimes served in a pita. This is also known as a boreeka. It is also widespread in Eastern Algeria in the cities of Annaba and Costantina. Brik pastry is made by slapping a sticky lump of dough onto a hot non-stick surface in overlapping circles to produce the desired size and cooked for a short amount of time. The brik dough sheets are called malsouka or warka. Typical fillings include tuna, ground meat, raw egg, chicken, or anchovies garnished with harissa, capers, or cheese. Although the food's origins are hard to trace directly, it dates back at least 500 years in the past. In addition to its unclear origins, it is also not known by a singular name; across the Middle East even now, the popular food can be referred to as bric, börek, burek, warqa or malsouka. The common ingredients in every brik – regardless of what it is called – include the deep fried pastry crust and proteins (like tuna or egg) encased within the wrapping, such as the common French spin known as brik a l'oeuf.
