Mandazi is a form of fried bread that originated on the Swahili coast. It is also known as bofrot or puff puff in Western African countries such as Ghana and Nigeria. It is one of the principal dishes in the cuisine of the Swahili people who inhabit the Coastal Region of Kenya and Tanzania. The dish is popular in the region, as it is convenient to make, can be eaten with almost any food or dips or just as a snack by itself, and can be saved and reheated for later consumption. Mandazi are similar to doughnuts, having more of a sweet taste which can be differentiated with the addition of different ingredients. However, they are typically less sweet than the United States style of doughnuts and are usually served without any glazing or frosting. They are frequently made triangular in shape (similar to samosas), but are also commonly shaped as circles or ovals. When cooked, they have a fluffy texture. Mandazi are made by briefly cooking the dough in cooking oil. The ingredients typically used to make mandazi include water, sugar, flour, yeast, and milk. Coconut milk is also commonly added for sweetness. When coconut milk is added, mandazi are commonly referred to as mahamri or mamri. Ground peanuts and almonds, among other ingredients, can also be used to add a different flavor. After being cooked, they can be eaten warm or left to cool down. They are popular in the African Great Lakes region, as they can be eaten in accompaniment with many things. They are commonly made in the morning or the night before, eaten with breakfast, then re-heated in the evening for dinner. Mandazi are also commonly eaten with tea or fresh fruit juice, or are eaten as snacks by themselves. Different dips, often fruit flavored, can be used to add various tastes. Mandazi can also be eaten as a dessert after a meal where it is often served with powdered or cinnamon sugar to add sweetness.

Carlsberg A/S is a Danish multinational brewer. Founded in 1847 by J. C. Jacobsen, the company's headquarters is in Copenhagen, Denmark. Since Jacobsen's death in 1887, the majority owner of the company has been the Carlsberg Foundation. The company's flagship brand is Carlsberg (named after Jacobsen's son Carl). The company employs around 41,000 people, primarily in Europe and Asia. Carlsberg is currently the sixth largest brewery in the world based on revenue. Carlsberg was founded by J. C. Jacobsen, a philanthropist and admirer of science. The first brew was finished on 10 November 1847, and the export of Carlsberg beer began in 1868 with the export of one barrel to Edinburgh, Scotland. Some of the company's original logos include an elephant, after which some of its lagers are named, and the swastika,[note 1] the use of which was discontinued in the 1930s because of its association with political parties in neighboring Germany.

Chibuku is a commercial sorghum beer based on the traditional Umqombothi homemade African beers; the main grains used are malted sorghum and maize but may also contain millet. "Chibuku" comes from Max Heinrich's habit of recording all consumers' comments and process changes in a book. Chibuku is an adaptation of the local Zambia language word for "book" - "Chi" is the prefix meaning "big", "buk" = "book", and the terminal "u" is because most African nouns tend to end in a euphonic vowel. The shake-shake comes from the ritual of shaking up the beer before taking the first sip. The beer contains starch, germ, and yeast (all typically removed in lagers and ales), and since the solids settle to the bottom of the carton, it needs to be shaken before sipping. The alcohol content in a fresh Chibuku is relatively low, starting at about 0.5% ABV on day one. Still, as fermentation continues in the carton, the longer it is kept before drinking, the stronger it gets. It may achieve 4% ABV before the shelf-life expires after between 4 and 6 days after packaging.

Coffee is a beverage brewed from roasted, ground coffee beans. Darkly colored, bitter, and slightly acidic, coffee has a stimulating effect on humans, primarily due to its caffeine content, but decaffeinated coffee is also commercially available. There are also various coffee substitutes. Typically served hot, coffee has the highest sales in the world market for hot drinks. Coffee production begins when the seeds from coffee cherries are separated to produce unroasted green coffee beans. The "beans" are roasted and then ground into fine particles. Coffee is brewed from the ground roasted beans, which are typically steeped in hot water before being filtered out. It is usually served hot, although chilled or iced coffee is common. Coffee can be prepared and presented in a variety of ways (e.g., espresso, French press, caffè latte, or already-brewed canned coffee). Sugar, sugar substitutes, milk, and cream are often added to mask the bitter taste or enhance the flavor.

Traditional ginger beer is a sweetened and carbonated, usually non-alcoholic beverage. Historically it was produced by the natural fermentation of prepared ginger spice, yeast and sugar. Modern ginger beers are often manufactured rather than brewed, frequently with flavour and colour additives, with artificial carbonation. Ginger ales are not brewed.

Kachasu, also known as lutuku, is an African traditional distilled beverage. It is made in Zambia, Zimbabwe, DR Congo and Malawi, mainly in rural parts and poor urban suburbs. It is normally brewed from maize, though finger millet and various fruits like banana peels can also be used. The process involves adding brewers' yeast together with the carbohydrate sources such as maize husks to warm water and heating the mixture for a few minutes. The product is then distilled after it has fully fermented. The alcohol content of kachasu can vary significantly, depending on the strength of the brew. Studies have found an alcohol content ranging from 20 to 30% up to as high as 70%.

Malawi Gin is a spirit produced by Malawi Distilleries Ltd. in Blantyre, Malawi, known for its smooth texture and unique flavor profile that includes hints of coconut and lime. It has gained popularity among tourists and locals alike since its launch in 1965, often enjoyed in cocktails like the Malawi Gin and Tonic (MGT).

Tea is an aromatic beverage prepared by pouring hot or boiling water over cured or fresh leaves of Camellia sinensis, an evergreen shrub native to East Asia which probably originated in the borderlands of south-western China and northern Myanmar. Tea is also made, but rarely, from the leaves of Camellia taliensis. After plain water, tea is the most widely consumed drink in the world. There are many different types of tea; some have a cooling, slightly bitter, and astringent flavour, while others have profiles that include sweet, nutty, floral, or grassy notes. Tea has a stimulating effect in humans, primarily due to its caffeine content. An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. It was popularised as a recreational drink during the Chinese Tang dynasty, and tea drinking subsequently spread to other East Asian countries. Portuguese priests and merchants introduced it to Europe during the 16th century. During the 17th century, drinking tea became fashionable among the English, who started to plant tea on a large scale in British India.

Thobwa is a Malawian and Zambian fermented drink that has a milky appearance, a cereal taste and a grainy texture. It is made from white maize and millet or sorghum and is popular in all parts of the country. The name thobwa means "sweet beer",[verification needed] and although it is non-alcoholic it can be left for five days and it will turn to mowa or beer.[failed verification] Thobwa is made by boiling water with m'gaiwa until it makes phala (porridge). More water is then added and brought to a rolling boil for about 15 minutes. After this the mixture is left to cool until warm and at this point a handful of maŵele (millet flour) is added. This mixture is now left in a mbiya (big clay pot) in a cool place for two days before being served as thobwa. Because thobwa is made using maize flour it has a cereal taste and is filling. Many Malawians use this drink as energy for the day and it is sold everywhere out of recycled plastic bottles in the towns/cities, and from clay pots in the villages. Thobwa can be found all year round, however it is mainly served in the hot months (September-November), and is particularly served to welcome guests visiting a compound. Huge quantities of thobwa are consumed at weddings as a celebratory drink.

Beef is the culinary name for meat from cattle . Beef can be prepared in various ways; cuts are often used for steak, which can be cooked to varying degrees of doneness, while trimmings are often ground or minced, as found in most hamburgers. Beef contains protein, iron, and vitamin B12. Along with other kinds of red meat, high consumption is associated with an increased risk of colorectal cancer and coronary heart disease, especially when processed. Beef has a high environmental impact, being a primary driver of deforestation with the highest greenhouse gas emissions of any agricultural product. In prehistoric times, humankind hunted aurochs and later domesticated them. Since that time, numerous breeds of cattle have been bred specifically for the quality or quantity of their meat. Today, beef is the third most widely consumed meat in the world, after pork and poultry. As of 2018, the United States, Brazil, and China were the largest producers of beef.

Bunny chow, often referred to simply as a bunny, is an Indian South African fast food dish consisting of a hollowed-out loaf of white bread filled with curry and a serving of salad on the side. It originated among Indian South Africans of Durban. Throughout various South African communities, one can find cultural adaptations to the original version of the bunny chow, which uses only a quarter loaf of bread and is sometimes called a skhambane, kota or shibobo, a name it shares with sphatlho, a South African dish that evolved from the bunny chow. Bunny chow was created in Durban, South Africa, which is home to a large community of people of Indian origin. The precise origins of the food are disputed, although its creation has been dated to the 1940s. It was also sold in Gwelo, Rhodesia (now Zimbabwe), during World War II and is still sold in the nearby town of Kadoma, formerly known as Gatooma.

Oreochromis is a large genus of oreochromine cichlids, fishes endemic to Africa and the Middle East. A few species from this genus have been introduced far outside their native range and are important in aquaculture. Many others have very small ranges; some are seriously threatened, and O. ismailiaensis and O. lidole possibly are extinct. Although Oreochromis primarily are freshwater fish of rivers, lakes and similar habitats, several species can also thrive in brackish waters and some even survive in hypersaline conditions with a salinity that far surpasses that of seawater. In addition to overfishing and habitat loss, some of the more localized species are threatened by the introduction of other, more widespread Oreochromis species into their ranges. This is because they—in addition to competing for the local resources—often are able to hybridize. Oreochromis are fairly robust fish, and medium–small to very large cichlids that can reach up to 9.4–61 cm in total length depending on the exact species.

The chicken is a large and round short-winged bird, domesticated from the red junglefowl of Southeast Asia around 8,000 years ago. Most chickens are raised for food, providing meat and eggs; others are kept as pets or for cockfighting. Chickens are common and widespread domestic animals, with a total population of 26.5 billion as of 2023[update], and an annual production of more than 50 billion birds. A hen bred for laying can produce over 300 eggs per year. There are numerous cultural references to chickens in folklore, religion, and literature.

Chicken curry or curry/curried chicken is a South Asian dish originating from the Indian subcontinent. It is common in the cuisine of the Indian subcontinent, Caribbean, Southeast Asia, Great Britain, and South Africa. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce, and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

Many species of fish are caught by humans and consumed as food in virtually all regions around the world. Fish has been an important dietary source of protein and other nutrients. The English language does not have a special culinary name for food prepared from fish like with other animals , or as in other languages (such as Spanish pez vs. pescado). In culinary and fishery contexts, fish may include so-called shellfish such as molluscs, crustaceans, and echinoderms; more expansively, seafood covers both fish and other marine life used as food. Since 1961, the average annual increase in global apparent food fish consumption (3.2 percent) has outpaced population growth (1.6 percent) and exceeded consumption of meat from all terrestrial animals, combined (2.8 percent) and individually (bovine, ovine, porcine, etc.), except poultry (4.9 percent). In per capita terms, food fish consumption has grown from 9.0 kg (19.8 lb) in 1961 to 20.2 kg (45 lb) in 2015, at an average rate of about 1.5 percent per year. The expansion in consumption has been driven not only by increased production, but also by a combination of many other factors, including reduced wastage, better utilization, improved distribution channels and growing consumer demand, linked with population growth, rising disposable incomes and urbanization.

Goat meat is the meat of the domestic goat . The term 'goat meat' denotes meat of older animals, while meat from young goats is called 'kid meat'. In South Asian cuisine, goat meat is called mutton, along with sheep meat. The culinary name "chevon", a blend of chèvre "goat" in French and mouton "sheep" in French, was coined in 1922 and selected by a trade association; it was adopted by the United States Department of Agriculture in 1928,: 19  however the term never caught on and is not encountered in the United States. "Cabrito", a word in Spanish and Portuguese, is the meat of a young, milk-fed goat. It is also known as chivo meat. Goat meat is both a staple and a delicacy in the world's cuisines. The cuisines best known for their use of goat include African cuisine, Middle Eastern, Indian, Indonesian, Nepali, Bangladeshi, Pakistani, Abruzzese, Mexican, Caribbean (Jamaica), Haitian cuisine, Dominican cuisine and Ecuadorian. Cabrito, which is baby goat, is a typical food of Monterrey, Nuevo León, Mexico; in Italy it is called "capretto". Goat meat can be prepared in a variety of ways, such as being stewed, curried, baked, grilled, barbecued, minced, canned, fried, or made into sausage. Goat jerky is another popular variety.

The kampango or kampoyo is a critically endangered species of large and predatory bagrid catfish that is endemic to Lake Malawi, Lake Malombe and the upper Shire River in Africa. It prefers areas near rocks in water shallower than 50 m (160 ft), but it also occurs deeper (not beyond the oxygen limit) and over a sandy or muddy bottom. The kampango is among the largest fish in the Lake Malawi basin, reaching up to about 1 m (3.3 ft) long, or possibly even 1.5 m (4.9 ft). A common length is around 42 cm (1.4 ft) and females are typically larger than males. Adults are overall blackish, while young are grey with dark spots. During the day kampangos hide in caves, but around dusk or dawn they hunt and eat their prey, primarily cichlids.

Ugali, also known as posho, nsima, papa, pap, sadza, isitshwala, akume, amawe, ewokple, akple, and other names, is a type of corn meal made from maize or corn flour in several African countries: Kenya, Uganda, Tanzania, Zimbabwe, Zambia, Lesotho, Eswatini, Angola, Mozambique, Namibia, Democratic Republic of the Congo, Malawi, Botswana and South Africa, and in West Africa by the Ewes of Togo, Ghana, Benin, Nigeria and Cote D'Ivoire. It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency. In 2017, the dish was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, one of a few foods in the list. This dish is eaten widely across Africa, where it has different local names:

A samosa (listenⓘ) ( Persian: سمبوسه) from the Persian word sambosag (سنبوسگ) (meaning 'triangular pastry') is a fried South Asian and West Asian snack. It is a pastry with a savory filling, mostly vegetables, spiced potatoes, onions, and peas, but also meat or fish. It is made in different shapes, including triangular, cone, or crescent, depending on the region. Samosas are often accompanied by chutney, and have origins in medieval times or earlier. Sweet versions are also made. Samosas are a popular entrée, appetizer, or snack in the cuisines of India, South Asia, West Asia, Central Asia, Portugal, East Africa and their South Asian diasporas. The English word samosa derives from the Hindustani word samosa (Urdu: سموسہ, Hindi: समोसा), traceable to the Middle Persian word sanbosag (سنبوسگ) 'triangular pastry'. Similar pastries are called sambusak in Arabic from Persian; medieval Arabic recipe books sometimes spell it sambusaj, which are all borrowed from Persian sanbosag.

Usipa is a "small sardine-like fish that occurs in large shoals". Because of its small size, it is commonly dried. Usipa is mostly eaten in Malawi and Mozambique along with nsima ugali. Dried usipa is sold at most markets in Malawi. In Malawi, usipa is typically consumed with the bones in it due to their softness. Usipa plays a significant role in the economic livelihood for many households at Lake Malawi that rely upon fishing for income. A great deal is not known about the species' biology.

A bean is the seed of any plant in the legume family used as a vegetable for human consumption or animal feed. The seeds are often preserved through drying, but fresh beans are also sold. Most beans are traditionally soaked and boiled, but they can be cooked in many different ways, including frying and baking, and are used in many traditional dishes throughout the world. The unripe seedpods of some varieties are also eaten whole as green beans or edamame (immature soybean), but fully ripened beans contain toxins like phytohemagglutinin and require cooking. The word 'bean', for the Old World vegetable, existed in Old English, long before the New World genus Phaseolus was known in Europe. With the Columbian exchange of domestic plants between Europe and the Americas, use of the word was extended to pod-borne seeds of Phaseolus, such as the common bean and the runner bean, and the related genus Vigna. The term has long been applied generally to seeds of similar form, such as Old World soybeans and lupins, and to the fruits or seeds of unrelated plants such as coffee beans, vanilla beans, castor beans, and cocoa beans.

The carrot is a root vegetable, typically orange in colour, though heirloom variants including purple, black, red, white, and yellow cultivars exist, all of which are domesticated forms of the wild carrot, Daucus carota, native to Europe and Southwestern Asia. The plant probably originated in Iran and was originally cultivated for its leaves and seeds. The carrot is a biennial plant in the umbellifer family, Apiaceae. World production of carrots (combined with turnips) for 2022 was 42 million tonnes, led by China producing 44% of the total.

Potato wedges are irregular wedge-shaped slices of potato, often large and unpeeled, that are either baked or fried. They are sold at diners and fast food restaurants, and are usually seasoned with a variety of spices, commonly paprika, salt and pepper. In Australia, potato wedges are a common bar food that are often served with a sauce. Consumers may use sour cream, sweet chilli sauce, ketchup, or some combination of these. In Ireland, spicy potato wedges are a common item served at hot deli counters.

Maize /meɪz/ , also known as corn in North American English, is a tall stout grass that produces cereal grain. It was domesticated by indigenous peoples in southern Mexico about 9,000 years ago from wild teosinte. Native Americans planted it alongside beans and squashes in the Three Sisters polyculture. The leafy stalk of the plant gives rise to male inflorescences or tassels which produce pollen, and female inflorescences called ears. The ears yield grain, known as kernels or seeds. In modern commercial varieties, these are usually yellow or white; other varieties can be of many colors. Maize relies on humans for its propagation. Since the Columbian exchange, it has become a staple food in many parts of the world, with the total production of maize surpassing that of wheat and rice. Much maize is used for animal feed, whether as grain or as the whole plant, which can either be baled or made into the more palatable silage. Sugar-rich varieties called sweet corn are grown for human consumption, while field corn varieties are used for animal feed, for uses such as cornmeal or masa, corn starch, corn syrup, pressing into corn oil, alcoholic beverages like bourbon whiskey, and as chemical feedstocks including ethanol and other biofuels.

Grasshoppers are a group of insects belonging to the suborder Caelifera. They are amongst what are possibly the most ancient living groups of chewing herbivorous insects, dating back to the early Triassic around 250 million years ago. Grasshoppers are typically ground-dwelling insects with powerful hind legs which allow them to escape from threats by leaping vigorously. Their front legs are shorter and used for grasping food. As hemimetabolous insects, they do not undergo complete metamorphosis; they hatch from an egg into a nymph or "hopper" which undergoes five moults, becoming more similar to the adult insect at each developmental stage. The grasshopper hears through the tympanal organ which can be found in the first segment of the abdomen attached to the thorax; while its sense of vision is in the compound eyes, a change in light intensity is perceived in the simple eyes . At high population densities and under certain environmental conditions, some grasshopper species can change colour and behavior and form swarms. Under these circumstances, they are known as locusts.

It is widely grown in the tropics and subtropics by small and large commercial producers, both as grain legume and as an oil crop. Atypically among legumes, peanut pods develop underground leading botanist Carl Linnaeus to name peanuts hypogaea, which means "under the earth". The peanut belongs to the botanical family Fabaceae (or Leguminosae), commonly known as the legume, bean, or pea family. Like most other legumes, peanuts harbor symbiotic nitrogen-fixing bacteria in root nodules, which improve soil fertility, making them valuable in crop rotations.

Kachumbari is a fresh tomato and onion salad relish that is popular in the cuisines of the African Great Lakes region. It is an uncooked salad dish consisting of chopped tomatoes, onions, and chili peppers. Variations of kachumbari can be found in Kenya, Tanzania, Rwanda, Uganda, Burundi and in the Southern African countries of Malawi and Congo. The Swahili word kachumbari originated from the Indian word cachumber. Kachumbari is used as a salad side dish for a main meal. In Kenya, it is used as a condiment served with pilau , mukimo, or a meal of nyama choma (roasted meat) and ugali. In Tanzania, it is eaten with rice pilau or biryani. In Malawi, it is usually eaten on its own like any other salad dish, while in Uganda it is normally eaten with nyama choma.

Apodemus is a genus of murid containing the field mice as well as other well-known species like the wood mouse and the yellow-necked mouse. The name is unrelated to that of the Mus genus, instead being derived from the Greek ἀπό-δημος (literally away from home). Related to the Ryūkyū spiny rats (Tokudaia) and the prehistoric Rhagamys – and far more distantly to Mus and Malacomys – it includes these species:

Nali Sauce is a popular sauce from Malawi dubbed, "'Africa's hottest peri-peri sauce'. It is one of Malawi's most popular sauces. The Nali sauce brands have attained cult status with chilli lovers both in Malawi and throughout the world for their hotness and taste. The heat level of Nali sauce is approximately 175.000 scoville heat units Nali is made from peri-peri sauce derived from Malawian bird's eye chillies, which are considered the hottest in Africa. They have been produced by Nali ltd since the 1970s. There are currently 7 different flavors of Nali Sauces: Mild, Hot, Gold, Garlic, Ginger, Curry Masala and BBQ. The label on each bottle comes with a warning in both English and Chichewa that reads, "Abale Samalani", which means Friends, take care. Nali has a strong presence in Zambia, Zimbabwe, Tanzania, Kenya, Mozambique and South Africa.

Pea is a pulse, vegetable or fodder crop, but the word often refers to the seed or sometimes the pod of this flowering plant species. Each pod contains several seeds (peas), which can have green or yellow cotyledons when mature. Botanically, pea pods are fruit, since they contain seeds and develop from the ovary of a (pea) flower. The species name Pisum sativum is also used to describe other edible seeds from the Fabaceae family such as the pigeon pea (Cajanus cajan), the cowpea (Vigna unguiculata), the seeds from several species of Lathyrus and is used as a compound form for example Sturt's desert pea. Peas are annual plants, with a life cycle of one year. They are a cool-season crop grown in many parts of the world; planting can take place from winter to early summer depending on location. The average pea weighs between 0.1 and 0.36 grams (0.004–0.013 oz). The immature peas (and in snow peas and snap peas the tender pod as well) are used as a vegetable, fresh, frozen or canned; varieties of the species typically called field peas are grown to produce dry peas like the split pea shelled from a matured pod. These are the basis of pease porridge and pea soup, staples of medieval cuisine; in Europe, consuming fresh immature green peas was an innovation of early modern cuisine.

Rice is a cereal grain and in its domesticated form is the staple food of over half of the world's population, particularly in Asia and Africa. Rice is the seed of the grass species Oryza sativa —or, much less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated in Africa about 3,000 years ago. Rice has become commonplace in many cultures worldwide; in 2021, 787 million tons were produced, placing it fourth after sugarcane, maize, and wheat. Only some 8% of rice is traded internationally. China, India, and Indonesia are the largest consumers of rice. A substantial amount of the rice produced in developing nations is lost after harvest through factors such as poor transport and storage. Rice yields can be reduced by pests including insects, rodents, and birds, as well as by weeds, and by diseases such as rice blast. Traditional rice polycultures such as rice-duck farming, and modern integrated pest management seek to control damage from pests in a sustainable way. Many varieties of rice have been bred to improve crop quality and productivity. Biotechnology has created Green Revolution rice able to produce high yields when supplied with nitrogen fertiliser and managed intensively. Other products are rice able to express human proteins for medicinal use; flood-tolerant or deepwater rice; and drought-tolerant and salt-tolerant varieties. Rice is used as a model organism in biology.

A samosa (listenⓘ) ( Persian: سمبوسه) from the Persian word sambosag (سنبوسگ) (meaning 'triangular pastry') is a fried South Asian and West Asian snack. It is a pastry with a savory filling, mostly vegetables, spiced potatoes, onions, and peas, but also meat or fish. It is made in different shapes, including triangular, cone, or crescent, depending on the region. Samosas are often accompanied by chutney, and have origins in medieval times or earlier. Sweet versions are also made. Samosas are a popular entrée, appetizer, or snack in the cuisines of India, South Asia, West Asia, Central Asia, Portugal, East Africa and their South Asian diasporas. The English word samosa derives from the Hindustani word samosa (Urdu: سموسہ, Hindi: समोसा), traceable to the Middle Persian word sanbosag (سنبوسگ) 'triangular pastry'. Similar pastries are called sambusak in Arabic from Persian; medieval Arabic recipe books sometimes spell it sambusaj, which are all borrowed from Persian sanbosag.

Sorghum bicolor, commonly called sorghum and also known as great millet, broomcorn, guinea corn, durra, imphee, jowar, or milo, is a species in the grass genus Sorghum cultivated for its grain. The grain is used as food by humans, while the plant is used for animal feed and ethanol production. Sorghum originated in Africa, and is now cultivated widely in tropical and subtropical regions. Sorghum is the world's fifth-most important cereal crop after rice, wheat, maize, and barley. Sorghum is typically an annual, but some cultivars are perennial. It grows in clumps that may reach over 4 metres (13 ft) high. The grain is small, 2 to 4 millimetres (0.08 to 0.2 in) in diameter. Sweet sorghums are cultivars primarily grown for forage, syrup production, and ethanol. They are taller than those grown for grain.

The sweet potato or sweetpotato is a dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. Its large, starchy, sweet-tasting tuberous roots are used as a root vegetable. The young shoots and leaves are sometimes eaten as greens. Cultivars of the sweet potato have been bred to bear tubers with flesh and skin of various colors. Sweet potato is only distantly related to the common potato (Solanum tuberosum), both being in the order Solanales. Although darker sweet potatoes are often referred to as "yams" in parts of North America, the species is even more distant from the true yams, which are monocots in the order Dioscoreales. The sweet potato is native to the tropical regions of South America in what is present-day Ecuador. Of the approximately 50 genera and more than 1,000 species of Convolvulaceae, I. batatas is the only crop plant of major importance—some others are used locally (e.g., I. aquatica "kangkong" as a green vegetable), but many are poisonous. The genus Ipomoea that contains the sweet potato also includes several garden flowers called morning glories, but that term is not usually extended to I. batatas. Some cultivars of I. batatas are grown as ornamental plants under the name tuberous morning glory, and used in a horticultural context. Sweet potatoes can also be called yams in North America. When soft varieties were first grown commercially there, there was a need to differentiate between the two. Enslaved Africans had already been calling the 'soft' sweet potatoes 'yams' because they resembled the unrelated yams in Africa. Thus, 'soft' sweet potatoes were referred to as 'yams' to distinguish them from the 'firm' varieties.
