Bread is a staple food prepared from a dough of flour and water, usually by baking. Throughout recorded history and around the world, it has been an important part of many cultures' diets. It is one of the oldest human-made foods, having been of significance since the dawn of agriculture, and plays an essential role in both religious rituals and secular culture. Bread may be leavened by naturally occurring microbes (e.g. sourdough), chemicals (e.g. baking soda), industrially produced yeast, or high-pressure aeration, which creates the gas bubbles that fluff up bread. In many countries, commercial bread often contains additives to improve flavor, texture, color, shelf life, nutrition, and ease of production.

Humans and their hominid relatives have consumed eggs for millions of years. The most widely consumed eggs are those of fowl, especially chickens. People in Southeast Asia began harvesting chicken eggs for food by 1500 BCE. Eggs of other birds, such as ducks and ostriches, are eaten regularly but much less commonly than those of chickens. People may also eat the eggs of reptiles, amphibians, and fish. Fish eggs consumed as food are known as roe or caviar. Hens and other egg-laying creatures are raised throughout the world, and mass production of chicken eggs is a global industry. In 2009, an estimated 62.1 million metric tons of eggs were produced worldwide from a total laying flock of approximately 6.4 billion hens. There are issues of regional variation in demand and expectation, as well as current debates concerning methods of mass production. In 2012, the European Union banned battery husbandry of chickens.

Katogo is a traditional breakfast dish in Uganda. It is served in most regions of Uganda and is defined as a mixture of ingredients. The main ingredients of the dish are matooke and a sauce Katogo originated from Buganda and Western Uganda, where it was initially perceived as a poor man's dish. There is no exact chronology as to when Ugandans started cooking katogo, but as long as matooke has been around, so has katogo. The Baganda came up with the katogo dish which is a combination of offal and matooke. Katogo was originally a combination of diced cassava mixed with beans. This was the poor man's meal. The upper classes, introduced matooke to replace cassava and later versions of katogo brought on offals and other new sauces. The popularity of katogo quickly spread all over Uganda and to date there are many variations of the cuisine. It is a common delicacy among the Bantu speaking communities and most of Uganda’s urban communities. It is now available in most restaurants and hotels, served as breakfast. There are various recipes for this dish but the most popular is the one where matooke is the staple and the sauce is offal known as byenda in Uganda. The culinary term for byenda (offal) is tripe and sweetbreads which are the inner lining of the stomach, the thymus gland and the pancreas respectively. The peeled matooke (green bananas) are cooked in the prepared sauce of byenda (offals) until the matooke is ready. Katogo is usually served with cooked greens and fruit juice.

Mandazi is a form of fried bread that originated on the Swahili coast. It is also known as bofrot or puff puff in Western African countries such as Ghana and Nigeria. It is one of the principal dishes in the cuisine of the Swahili people who inhabit the Coastal Region of Kenya and Tanzania. The dish is popular in the region, as it is convenient to make, can be eaten with almost any food or dips or just as a snack by itself, and can be saved and reheated for later consumption. Mandazi are similar to doughnuts, having more of a sweet taste which can be differentiated with the addition of different ingredients. However, they are typically less sweet than the United States style of doughnuts and are usually served without any glazing or frosting. They are frequently made triangular in shape (similar to samosas), but are also commonly shaped as circles or ovals. When cooked, they have a fluffy texture. Mandazi are made by briefly cooking the dough in cooking oil. The ingredients typically used to make mandazi include water, sugar, flour, yeast, and milk. Coconut milk is also commonly added for sweetness. When coconut milk is added, mandazi are commonly referred to as mahamri or mamri. Ground peanuts and almonds, among other ingredients, can also be used to add a different flavor. After being cooked, they can be eaten warm or left to cool down. They are popular in the African Great Lakes region, as they can be eaten in accompaniment with many things. They are commonly made in the morning or the night before, eaten with breakfast, then re-heated in the evening for dinner. Mandazi are also commonly eaten with tea or fresh fruit juice, or are eaten as snacks by themselves. Different dips, often fruit flavored, can be used to add various tastes. Mandazi can also be eaten as a dessert after a meal where it is often served with powdered or cinnamon sugar to add sweetness.

Ugali, also known as posho, nsima, papa, pap, sadza, isitshwala, akume, amawe, ewokple, akple, and other names, is a type of corn meal made from maize or corn flour in several African countries: Kenya, Uganda, Tanzania, Zimbabwe, Zambia, Lesotho, Eswatini, Angola, Mozambique, Namibia, Democratic Republic of the Congo, Malawi, Botswana and South Africa, and in West Africa by the Ewes of Togo, Ghana, Benin, Nigeria and Cote D'Ivoire. It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency. In 2017, the dish was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, one of a few foods in the list. This dish is eaten widely across Africa, where it has different local names:

Ugandan Rolex, commonly referred to as Rolex, is a popular food item in Uganda prepared by combining an egg omelette and vegetables wrapped in a chapati. This single-portion dish is quick to prepare, and can be eaten at any time of the day, from breakfast to a lunch or supper meal or snack. The name "rolex" comes from its method of preparation, with the chapati and the omelette rolled together . This idea originated from a chapati seller's creativity in the Busoga region "the basoga" then the idea spread to Wandegeya next to Makerere University in Uganda, fueled by students who needed a quick meal because of time and budget limitations. The delicacy soon spread throughout Uganda. It became a popular food choice for its combination of convenience, low cost, and taste.

Acholi banana and peanut fritters are a delicious snack made from ripe bananas and peanut butter, often flavored with spices. The fritters are typically deep-fried until golden brown and can be served with a drizzle of chocolate or enjoyed plain.

Sugared peanuts, also known as candied peanuts, are a popular snack in Uganda, particularly among the Acholi people. They are typically made by coating roasted peanuts in a sugar mixture and baking them until crunchy.

In botany, a fruit is the seed-bearing structure in flowering plants that is formed from the ovary after flowering (see Fruit anatomy). Fruits are the means by which angiosperms disseminate their seeds. Edible fruits in particular have long propagated using the movements of humans and other animals in a symbiotic relationship that is the means for seed dispersal for the one group and nutrition for the other; humans, and many other animals, have become dependent on fruits as a source of food. Consequently, fruits account for a substantial fraction of the world's agricultural output, and some (such as the apple and the pomegranate) have acquired extensive cultural and symbolic meanings.

Amarula is a cream liqueur from South Africa. It is made with sugar, cream and the fruit of the African marula tree which is also locally called the elephant tree or the marriage tree. It has an alcohol content of 17% by volume (34 proof). It has had some success at international spirit ratings competitions, winning a gold medal at the 2009 San Francisco World Spirits Competition. It has the taste of slightly fruity caramel. Amarula was first marketed by Southern Liqueur Company of South Africa (the current trademark owners and wholly owned subsidiary of Distell Group Limited) as a liqueur in September 1989, the Amarula spirit having been launched in 1983. African bush elephants enjoy eating the fruit of the marula tree.[citation needed] Because of the marula tree's association with elephants, the distiller has made them its symbol and supports elephant conservation efforts, co-funding the Amarula Elephant Research Programme at the University of Natal, Durban. For marketing efforts, it produces elephant-themed collectible items.

Coffea arabica , also known as the Arabica coffee, is a species of flowering plant in the coffee and madder family Rubiaceae. It is believed to be the first species of coffee to have been cultivated and is the dominant cultivar, representing about 60% of global production. Coffee produced from the more acidic, more bitter, and more highly caffeinated robusta bean (C. canephora) makes up most of the remaining coffee production. The natural populations of Coffea arabica are restricted to the forests of South Ethiopia and Yemen.

Juice is a drink made from the extraction or pressing of the natural liquid contained in fruit and vegetables. It can also refer to liquids that are flavored with concentrate or other biological food sources, such as meat or seafood, such as clam juice. Juice is commonly consumed as a beverage or used as an ingredient or flavoring in foods or other beverages, such as smoothies. Juice emerged as a popular beverage choice after the development of pasteurization methods enabled its preservation without using fermentation . The largest fruit juice consumers are New Zealand (nearly a cup, or 8 ounces, each day) and Colombia (more than three quarters of a cup each day). Fruit juice consumption on average increases with a country's income level.

Coffee is a beverage brewed from roasted, ground coffee beans. Darkly colored, bitter, and slightly acidic, coffee has a stimulating effect on humans, primarily due to its caffeine content, but decaffeinated coffee is also commercially available. There are also various coffee substitutes. Typically served hot, coffee has the highest sales in the world market for hot drinks. Coffee production begins when the seeds from coffee cherries are separated to produce unroasted green coffee beans. The "beans" are roasted and then ground into fine particles. Coffee is brewed from the ground roasted beans, which are typically steeped in hot water before being filtered out. It is usually served hot, although chilled or iced coffee is common. Coffee can be prepared and presented in a variety of ways (e.g., espresso, French press, caffè latte, or already-brewed canned coffee). Sugar, sugar substitutes, milk, and cream are often added to mask the bitter taste or enhance the flavor.

Masala chai is a popular beverage originating from South Asia. It is made by brewing black tea (usually crush, tear, curl) in milk and water, and then by sweetening with sugar. Adding aromatic herbs and spices creates masala chai. The term chai originated from the Chinese word for tea, cha (see Etymology of tea) via the Hindi chai (चाय). In English, this spiced tea is commonly referred to as chai tea, or simply chai. Originating in India, the beverage has gained worldwide popularity, becoming a feature in many coffee and teahouses, with many using the term chai latte or chai tea latte for their version to indicate that it is made with steamed milk, much like that used to make a latte but mixed with a spiced tea concentrate instead of espresso.

Millet beer, also known as Bantu beer, malwa, pombe "Tchouk" or opaque beer, is an alcoholic beverage made from malted millet that is common throughout Africa. Its production process varies across regions and in the southern parts of Africa is more commonly known as umqombothi. Millet beer varies in taste and alcoholic content between ethnic groups.[citation needed] It is served in calabash gourds. This type of beer is common throughout Africa. Related African drinks include maize beer and sorghum beer. In the Balkans and Turkey a form of millet beer named boza is produced.

Tea is an aromatic beverage prepared by pouring hot or boiling water over cured or fresh leaves of Camellia sinensis, an evergreen shrub native to East Asia which probably originated in the borderlands of south-western China and northern Myanmar. Tea is also made, but rarely, from the leaves of Camellia taliensis. After plain water, tea is the most widely consumed drink in the world. There are many different types of tea; some have a cooling, slightly bitter, and astringent flavour, while others have profiles that include sweet, nutty, floral, or grassy notes. Tea has a stimulating effect in humans, primarily due to its caffeine content. An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. It was popularised as a recreational drink during the Chinese Tang dynasty, and tea drinking subsequently spread to other East Asian countries. Portuguese priests and merchants introduced it to Europe during the 16th century. During the 17th century, drinking tea became fashionable among the English, who started to plant tea on a large scale in British India.

Waragi is a generic term in Uganda for domestic distilled beverages. Waragi is also given different names, depending on region of origin, the distillation process, or both. Waragi is known as a form of homemade Gin. The term "Waragi" is synonymous with locally distilled gin throughout Uganda. However, Uganda Waragi is a particular brand of industrially distilled gin produced by East African Breweries Limited. Other brands of distilled gin which are done by individuals at small scale are also available, but they are different from each other. The most common are: 1. "Kasese-Kasese" which was originally distilled in the district of Kasese in western Uganda and sold all over the country; 2. "Arege mogo" which first originated in Lira district in northern Uganda made and sold all over the country . These two brands "waragi" have different tastes and aromas. The distillation process in both cases produce highly distilled gin at the level produced industrially. Moonshining and consumption of waragi and other alcoholic beverages is widespread in Uganda. In the 2004 WHO Global Status Report on Alcohol, Uganda ranked as the world's leading consumer of alcohol (per capita). Based on results from 2007, Uganda’s overall alcohol consumption was an average of 17.6 litres per capita.[clarification needed] This is unusually high compared to surrounding countries. In 2016 this seems no longer the case, with total consumption of pure alcohol down to 9.5 litres per capita (≥ 15 years of age). The history of waragi in Uganda can be traced to the period of Ugandan history during the colonial era. Gins were introduced to Uganda by British soldiers who were stationed in the Uganda Protectorate, and soon became a popular drink among Ugandans. In 1960, the colonial government passed the Liquor Act, which implemented limitations on the production and consumption of locally produced gins in the colony. Although the act was ostensibly passed in order to prevent Ugandans from experiencing negative health effects as a result of the dangerous production methods of moonshining, economic motivations were also in play; the colonial government wished to ensure the dominance of imported gins from Britain in the Ugandan alcohol market, which was being undercut by local gin production via moonshiners. Locally produced gin quickly proved more popular than those imported from Britain, thanks in part due to their cheaper prices. Ugandan politicians, led by the Uganda People's Congress (UPC), protested against the act, arguing that the colonial government should have instead ordered the construction of a distillery factory in the colony so Ugandans who desired gin would not resort to the dangerous practice of moonshining. When the UPC came to power, it ordered the construction of a distillery factory, naming the gin produced there Uganda Waragi. The factory was staffed with a group of 26 blenders who formed the Association of Uganda Distillers and Vitners, which was headed by Joel Sentamu.

Rice and beans, or beans and rice, is a category of dishes from many cultures around the world, whereby the staple foods of rice and beans are combined in some manner. The grain and legume combination provides several important nutrients and many calories, and both foods are widely available. The beans are usually seasoned, while the rice may be plain or seasoned. The two components may be mixed together, separated on the plate, or served separately. The dish usually consists of white or brown rice accompanied by cooked brown, red or black dry beans and seasoned in various ways. This dish is also commonly served with sides of stewed chicken, pork, beef, potato salad, boiled potatoes, and many other sides from many different cultures. In many areas, beans and rice are often served side by side rather than combined. Either way, they may be considered a meal, frequently with a topping of meat or chicken. Meat or other ingredients are sometimes placed atop beans and rice or, less frequently, mixed into it. Different regions have different preferences. In Nicaragua, for example, red beans are more popular while cooking Gallo pinto, while in Costa Rica black beans are. Also, in Brazil, black beans are more popular in Paraná, Rio de Janeiro, Rio Grande do Sul and Santa Catarina, while in most other parts of the country these are mostly only used in feijoadas. The New Orleans specialty known as "red beans and rice" is often accompanied by a side of smoked sausage or a fried pork chop.

Beef is the culinary name for meat from cattle . Beef can be prepared in various ways; cuts are often used for steak, which can be cooked to varying degrees of doneness, while trimmings are often ground or minced, as found in most hamburgers. Beef contains protein, iron, and vitamin B12. Along with other kinds of red meat, high consumption is associated with an increased risk of colorectal cancer and coronary heart disease, especially when processed. Beef has a high environmental impact, being a primary driver of deforestation with the highest greenhouse gas emissions of any agricultural product. In prehistoric times, humankind hunted aurochs and later domesticated them. Since that time, numerous breeds of cattle have been bred specifically for the quality or quantity of their meat. Today, beef is the third most widely consumed meat in the world, after pork and poultry. As of 2018, the United States, Brazil, and China were the largest producers of beef.

Bushmeat is meat from wildlife species that are hunted for human consumption. Bushmeat represents a primary source of animal protein and a cash-earning commodity in poor and rural communities of humid tropical forest regions of the world. The numbers of animals killed and traded as bushmeat in the 1990s in West and Central Africa were thought to be unsustainable. By 2005, commercial harvesting and trading of bushmeat was considered a threat to biodiversity. As of 2016, 301 terrestrial mammals were threatened with extinction due to hunting for bushmeat including non-human primates, even-toed ungulates, bats, diprotodont marsupials, rodents and carnivores occurring in developing countries. Bushmeat provides increased opportunity for transmission of several zoonotic viruses from animal hosts to humans, such as Ebolavirus and HIV.

A camel from Ancient Semitic: gāmāl) is an even-toed ungulate in the genus Camelus that bears distinctive fatty deposits known as "humps" on its back. Camels have long been domesticated and, as livestock, they provide food (camel milk and meat) and textiles (fiber and felt from camel hair). Camels are working animals especially suited to their desert habitat and are a vital means of transport for passengers and cargo. There are three surviving species of camel. The one-humped dromedary makes up 94% of the world's camel population, and the two-humped Bactrian camel makes up 6%. The wild Bactrian camel is a distinct species that is not ancestral to the domestic Bactrian camel, and is now critically endangered, with fewer than 1,000 individuals. The word camel is also used informally in a wider sense, where the more correct term is "camelid", to include all seven species of the family Camelidae: the true camels (the above three species), along with the "New World" camelids: the llama, the alpaca, the guanaco, and the vicuña, which belong to the separate tribe Lamini. Camelids originated in North America during the Eocene, with the ancestor of modern camels, Paracamelus, migrating across the Bering land bridge into Asia during the late Miocene, around 6 million years ago.

The term carp is a generic common name for numerous species of freshwater fish from the family Cyprinidae, a very large clade of ray-finned fish mostly native to Eurasia. While carp are prized quarries and are valued (even commercially cultivated) as both food and ornamental fish in many parts of the Old World, they are considered trash fish and invasive pests in many parts of Africa, Australia and most of the United States. The cypriniformes (family Cyprinidae) are traditionally grouped with the Characiformes, Siluriformes, and Gymnotiformes to create the superorder Ostariophysi, since these groups share some common features. These features include being found predominantly in fresh water and possessing Weberian ossicles, an anatomical structure derived from the first five anterior-most vertebrae, and their corresponding ribs and neural crests. The third anterior-most pair of ribs is in contact with the extension of the labyrinth and the posterior with the swim bladder. The function is poorly understood, but this structure is presumed to take part in the transmission of vibrations from the swim bladder to the labyrinth and in the perception of sound, which would explain why the Ostariophysi have such a great capacity for hearing.

The chicken is a large and round short-winged bird, domesticated from the red junglefowl of Southeast Asia around 8,000 years ago. Most chickens are raised for food, providing meat and eggs; others are kept as pets or for cockfighting. Chickens are common and widespread domestic animals, with a total population of 26.5 billion as of 2023[update], and an annual production of more than 50 billion birds. A hen bred for laying can produce over 300 eggs per year. There are numerous cultural references to chickens in folklore, religion, and literature.

The gizzard, also referred to as the ventriculus, gastric mill, and gigerium, is an organ found in the digestive tract of some animals, including archosaurs , earthworms, some gastropods, some fish, and some crustaceans. This specialized stomach constructed of thick muscular walls is used for grinding up food, often aided by particles of stone or grit. In certain insects and molluscs, the gizzard features chitinous plates or teeth. The word gizzard comes from the Middle English giser, which derives from a similar word in Old French gésier, which itself evolved from the Latin gigeria, meaning giblets. Birds swallow food and store it in their crop if necessary. Then the food passes into their glandular stomach, also called the proventriculus, which is also sometimes referred to as the true stomach. This is the secretory part of the stomach. Then the food passes into the gizzard (also known as the muscular stomach or ventriculus). The gizzard can grind the food with previously swallowed grit and pass it back to the true stomach, and vice versa. In layman's terms, the gizzard 'chews' the food for the bird because it does not have teeth to chew food the way humans and other mammals do.

Crocodiles or true crocodiles are large, semiaquatic reptiles that live throughout the tropics in Africa, Asia, the Americas and Australia. The term “crocodile” is sometimes used more loosely to include all extant members of the order Crocodilia, which includes the alligators and caimans (both members of the family Alligatoridae), the gharial and false gharial (both members of the family Gavialidae) as well as other, extinct, taxa. Although crocodiles, alligators, and the gharial are similar in appearance, they belong to separate biological families. The gharial, with its narrow snout, is easier to distinguish, while morphological differences are more difficult to spot in crocodiles and alligators. The most obvious external differences are visible in the head, with crocodiles having narrower and longer heads, with a more V-shaped than a U-shaped snout compared to alligators and caimans. Another obvious trait is that the upper and lower jaws of the crocodiles are the same width, and the teeth in the lower jaw fall along the edge or outside the upper jaw when the mouth is closed; therefore, all teeth are visible, unlike an alligator, which possesses in the upper jaw small depressions into which the lower teeth fit. Also, when the crocodile's mouth is closed, the large fourth tooth in the lower jaw fits into a constriction in the upper jaw. For hard-to-distinguish specimens, the protruding tooth is the most reliable feature to define the species' family. Crocodiles have more webbing on the toes of the hind feet and can better tolerate saltwater due to specialized salt glands for filtering out salt, which are present, but non-functioning, in alligators. Another trait that separates crocodiles from other crocodilians is their much higher levels of aggression.

Curry is a dish with a sauce or gravy seasoned with spices, mainly derived from the interchange of Indian cuisine with European taste in food, starting with the Portuguese, followed by the Dutch and British, and then thoroughly internationalised. Many dishes that would be described as curries in English are found in the native cuisines of countries in Southeast Asia and East Asia. The English word is derived indirectly from some combination of Dravidian words such as the Tamil kaṟi meaning 'sauce' or 'relish for rice'.

The silver cyprinid also known as the Lake Victoria sardine, mukene, and omena (native language), dagaa (Swahili) is a species of pelagic, freshwater ray-finned fish in the danio family, Danionidae from East Africa. It is the only member of the genus Rastrineobola. A small silvery fish which has a strongly compressed body covered in large scales with a pearlescent sheen and a yellow tail, and can grow to a length of 9 cm (3.5 in). The lateral line is below the midpoint of the body and runs to the lower part of the caudal peduncle. The cheek is covered by delicate suborbital bones.

Many species of fish are caught by humans and consumed as food in virtually all regions around the world. Fish has been an important dietary source of protein and other nutrients. The English language does not have a special culinary name for food prepared from fish like with other animals , or as in other languages (such as Spanish pez vs. pescado). In culinary and fishery contexts, fish may include so-called shellfish such as molluscs, crustaceans, and echinoderms; more expansively, seafood covers both fish and other marine life used as food. Since 1961, the average annual increase in global apparent food fish consumption (3.2 percent) has outpaced population growth (1.6 percent) and exceeded consumption of meat from all terrestrial animals, combined (2.8 percent) and individually (bovine, ovine, porcine, etc.), except poultry (4.9 percent). In per capita terms, food fish consumption has grown from 9.0 kg (19.8 lb) in 1961 to 20.2 kg (45 lb) in 2015, at an average rate of about 1.5 percent per year. The expansion in consumption has been driven not only by increased production, but also by a combination of many other factors, including reduced wastage, better utilization, improved distribution channels and growing consumer demand, linked with population growth, rising disposable incomes and urbanization.

Githeri , also called muthere or mutheri, is a traditional Kenyan meal consisting of maize and legumes (primarily beans) mixed and boiled together. The maize and beans are mixed in a sufuria, a type of pot, with water added, and the mixture is boiled until fully cooked. It is the staple food of the Gikuyu, Meru, Mbeere people and Embu people in the Central Province and Eastern Province of Kenya. It is also popular in other parts of the country, such as with the Kamba people of the Eastern Province of Kenya. The primary ingredients for this dish, maize and beans, are commonly found in local farms and homesteads. The dish is widespread and is also a traditional dish from North Africa to South Africa. The base ingredients of githeri are used in many other meals from different regions.

Goat meat is the meat of the domestic goat . The term 'goat meat' denotes meat of older animals, while meat from young goats is called 'kid meat'. In South Asian cuisine, goat meat is called mutton, along with sheep meat. The culinary name "chevon", a blend of chèvre "goat" in French and mouton "sheep" in French, was coined in 1922 and selected by a trade association; it was adopted by the United States Department of Agriculture in 1928,: 19  however the term never caught on and is not encountered in the United States. "Cabrito", a word in Spanish and Portuguese, is the meat of a young, milk-fed goat. It is also known as chivo meat. Goat meat is both a staple and a delicacy in the world's cuisines. The cuisines best known for their use of goat include African cuisine, Middle Eastern, Indian, Indonesian, Nepali, Bangladeshi, Pakistani, Abruzzese, Mexican, Caribbean (Jamaica), Haitian cuisine, Dominican cuisine and Ecuadorian. Cabrito, which is baby goat, is a typical food of Monterrey, Nuevo León, Mexico; in Italy it is called "capretto". Goat meat can be prepared in a variety of ways, such as being stewed, curried, baked, grilled, barbecued, minced, canned, fried, or made into sausage. Goat jerky is another popular variety.

Jollof , or jollof rice, is a rice dish from West Africa. The dish is typically made with long-grain rice, tomatoes, chilis, onions, spices, and sometimes other vegetables and/or meat in a single pot, although its ingredients and preparation methods vary across different regions. The dish's origins are traced to Senegal. Regional variations are a source of competition among the countries of West Africa, and in particular between Nigeria and Ghana, over whose version is the best; in the 2010s this developed into a friendly rivalry known as the "Jollof Wars".

Katogo is a traditional breakfast dish in Uganda. It is served in most regions of Uganda and is defined as a mixture of ingredients. The main ingredients of the dish are matooke and a sauce Katogo originated from Buganda and Western Uganda, where it was initially perceived as a poor man's dish. There is no exact chronology as to when Ugandans started cooking katogo, but as long as matooke has been around, so has katogo. The Baganda came up with the katogo dish which is a combination of offal and matooke. Katogo was originally a combination of diced cassava mixed with beans. This was the poor man's meal. The upper classes, introduced matooke to replace cassava and later versions of katogo brought on offals and other new sauces. The popularity of katogo quickly spread all over Uganda and to date there are many variations of the cuisine. It is a common delicacy among the Bantu speaking communities and most of Uganda’s urban communities. It is now available in most restaurants and hotels, served as breakfast. There are various recipes for this dish but the most popular is the one where matooke is the staple and the sauce is offal known as byenda in Uganda. The culinary term for byenda (offal) is tripe and sweetbreads which are the inner lining of the stomach, the thymus gland and the pancreas respectively. The peeled matooke (green bananas) are cooked in the prepared sauce of byenda (offals) until the matooke is ready. Katogo is usually served with cooked greens and fruit juice.

Kuku Paka is a chicken dish with a coconut-based curry and is also called “kuku na nazi”. It has African, Indian and Arabic influences. Kuku in Swahili means chicken. The dish is particularly popular in the East African coast and among the Indian communities living in Kenya, Tanzania and Uganda. Paka in Swahili means to smear, to spread or to apply.[citation needed] Coconut milk or coconut cream and curry spices are the main ingredients of the dish. What sets apart Kuku Paka from other coconut curries is the flavor from char-grilling the chicken before adding it to the coconut curry base. This gives it a smoky flavor. Shrimp or fish are often substituted for chicken in this popular East African dish. See "Kuku na Nazi".

Matoke, locally also known as matooke, amatooke in Buganda , ekitookye in southwestern Uganda, ekitooke in western Uganda, kamatore in Lugisu (Eastern Uganda), ebitooke in northwestern Tanzania, igitoki in Rwanda, Burundi and by the cultivar name East African Highland banana, are a group of starchy triploid banana cultivars, originating from the African Great Lakes. The fruit is harvested green, carefully peeled, and then cooked and often mashed or pounded into a meal. In Uganda and Rwanda, the fruit is steam-cooked, and the mashed meal is considered a national dish in both countries. Matoke bananas are a staple food crop in Uganda, Kenya, Tanzania and other Great Lakes countries. They are also known as the Mutika/Lujugira subgroup. The medium-sized green fruits, which are of a specific group of banana, the East African Highland bananas (Musa AAA-EA), are known in the Bantu languages of Uganda and Western Kenya as matoke.

Lamb and mutton, collectively sheep meat is one of the most common meats around the world, taken from the domestic sheep, Ovis aries, and generally divided into lamb, from sheep in their first year, hogget, from sheep in their second, and mutton, from older sheep. Generally, "hogget" and "sheep meat" are not used by consumers outside Norway, New Zealand, South Africa, Scotland, and Australia. Hogget has become more common in England, particularly in the North (Lancashire and Yorkshire) often in association with rare breed and organic farming. In South Asian and Caribbean cuisine, "mutton" often means goat meat. At various times and places, "mutton" or "goat mutton" has occasionally been used to mean goat meat.

Ugali, also known as posho, nsima, papa, pap, sadza, isitshwala, akume, amawe, ewokple, akple, and other names, is a type of corn meal made from maize or corn flour in several African countries: Kenya, Uganda, Tanzania, Zimbabwe, Zambia, Lesotho, Eswatini, Angola, Mozambique, Namibia, Democratic Republic of the Congo, Malawi, Botswana and South Africa, and in West Africa by the Ewes of Togo, Ghana, Benin, Nigeria and Cote D'Ivoire. It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency. In 2017, the dish was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, one of a few foods in the list. This dish is eaten widely across Africa, where it has different local names:

Poultry are domesticated birds kept by humans for the purpose of harvesting animal products such as meat, eggs or feathers. The practice of raising poultry is known as poultry farming. These birds are most typically members of the superorder Galloanserae (fowl), especially the order Galliformes (which includes chickens, quails, and turkeys). The term also includes waterfowls of the family Anatidae (ducks and geese) but does not include wild birds hunted for food known as game or quarry. Recent genomic studies involving the four extant junglefowl species reveals that the domestication of chicken, the most populous poultry species, occurred around 8,000 years ago in Southeast Asia. This was previously believed to have occurred around 5,400 years ago, also in Southeast Asia. The process may have originally occurred as a result of people hatching and rearing young birds from eggs collected from the wild, but later involved keeping the birds permanently in captivity. Domesticated chickens may have been used for cockfighting at first and quail kept for their songs, but people soon realised the advantages of having a captive-bred source of food. Selective breeding for fast growth, egg-laying ability, conformation, plumage and docility took place over the centuries, and modern breeds often look very different from their wild ancestors. Although some birds are still kept in small flocks in extensive systems, most birds available in the market today are reared in intensive commercial enterprises.

Rice is a cereal grain and in its domesticated form is the staple food of over half of the world's population, particularly in Asia and Africa. Rice is the seed of the grass species Oryza sativa —or, much less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated in Africa about 3,000 years ago. Rice has become commonplace in many cultures worldwide; in 2021, 787 million tons were produced, placing it fourth after sugarcane, maize, and wheat. Only some 8% of rice is traded internationally. China, India, and Indonesia are the largest consumers of rice. A substantial amount of the rice produced in developing nations is lost after harvest through factors such as poor transport and storage. Rice yields can be reduced by pests including insects, rodents, and birds, as well as by weeds, and by diseases such as rice blast. Traditional rice polycultures such as rice-duck farming, and modern integrated pest management seek to control damage from pests in a sustainable way. Many varieties of rice have been bred to improve crop quality and productivity. Biotechnology has created Green Revolution rice able to produce high yields when supplied with nitrogen fertiliser and managed intensively. Other products are rice able to express human proteins for medicinal use; flood-tolerant or deepwater rice; and drought-tolerant and salt-tolerant varieties. Rice is used as a model organism in biology.

Ruminants are herbivorous grazing or browsing artiodactyls belonging to the suborder Ruminantia that are able to acquire nutrients from plant-based food by fermenting it in a specialized stomach prior to digestion, principally through microbial actions. The process, which takes place in the front part of the digestive system and therefore is called foregut fermentation, typically requires the fermented ingesta to be regurgitated and chewed again. The process of rechewing the cud to further break down plant matter and stimulate digestion is called rumination. The word "ruminant" comes from the Latin ruminare, which means "to chew over again". The roughly 200 species of ruminants include both domestic and wild species. Ruminating mammals include cattle, all domesticated and wild bovines, goats, sheep, giraffes, deer, gazelles, and antelopes. It has also been suggested that notoungulates also relied on rumination, as opposed to other atlantogenatans that rely on the more typical hindgut fermentation, though this is not entirely certain.

Seafood is any form of sea life regarded as food by humans, prominently including fish and shellfish. Shellfish include various species of molluscs , crustaceans (e.g. shrimp, crabs, and lobster), and echinoderms (e.g. sea cucumbers and sea urchins). Historically, marine mammals such as cetaceans (whales and dolphins) as well as seals have been eaten as food, though that happens to a lesser extent in modern times. Edible sea plants such as some seaweeds and microalgae are widely eaten as sea vegetables around the world, especially in Asia. Seafood is an important source of (animal) protein in many diets around the world, especially in coastal areas. Semi-vegetarians who consume seafood as the only source of meat are said to adhere to pescetarianism.

Sheep or domestic sheep (Ovis aries) are a domesticated, ruminant mammal typically kept as livestock. Although the term sheep can apply to other species in the genus Ovis, in everyday usage it almost always refers to domesticated sheep. Like all ruminants, sheep are members of the order Artiodactyla, the even-toed ungulates. Numbering a little over one billion, domestic sheep are also the most numerous species of sheep. An adult female is referred to as a ewe (/juː/ yoo), an intact male as a ram, occasionally a tup, a castrated male as a wether, and a young sheep as a lamb. Sheep are most likely descended from the wild mouflon of Europe and Asia, with Iran being a geographic envelope of the domestication center. One of the earliest animals to be domesticated for agricultural purposes, sheep are raised for fleeces, meat (lamb, hogget or mutton), and milk. A sheep's wool is the most widely used animal fiber, and is usually harvested by shearing. In Commonwealth countries, ovine meat is called lamb when from younger animals and mutton when from older ones; in the United States, meat from both older and younger animals is usually called lamb. A stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients can include any combination of vegetables and may include meat, especially tougher meats suitable for slow-cooking, such as beef, pork, venison, rabbit, lamb, poultry, sausages, and seafood. While water can be used as the stew-cooking liquid, stock is also common. A small amount of red wine or other alcohol is sometimes added for flavour. Seasonings and flavourings may also be added. Stews are typically cooked at a relatively low temperature , allowing flavours to mingle. Stewing is suitable for the least tender cuts of meat that become tender and juicy with the slow, moist heat method. This makes it popular for low-cost cooking. Cuts with a certain amount of marbling and gelatinous connective tissue give moist, juicy stews, while lean meat may easily become dry. Stews are thickened by reduction or with flour, either by coating pieces of meat with flour before searing or by using a roux or beurre manié, a dough consisting of equal parts fat and flour. Thickeners like cornstarch, potato starch, or arrowroot may also be used.

African stewed vegetables often refer to dishes like efo riro, a Nigerian spinach stew made with leafy greens, tomatoes, and various spices, or peanut stews that include hearty ingredients like sweet potatoes and beans. These stews are flavorful and can be made vegetarian or with meat, depending on preference.

Tigerfish can refer to fish from various families, and derives from official and colloquial associations of these with the tiger . However, the primary species designated by the name "tigerfish" are African and belong to the family Alestidae. Several species belonging to the genus Hydrocynus of the family Alestidae are referred to as "tigerfish", and are particularly prized as game fish. These African fish are found in many rivers and lakes on the continent and are fierce predators with distinctive, proportionally large teeth. The goliath tigerfish (Hydrocynus goliath) is among the most famous tigerfish. The largest one on record is said to have weighed 70 kg (154 pounds). It is found in the Congo River system and Lake Tanganyika and is the largest member of the family Alestidae. Another famous species, simply called the tigerfish (Hydrocynus vittatus), is commonly found in the southernly Okavango Delta, and the Zambezi River, and also in the two biggest lakes along the Zambezi, Lake Kariba which borders Zimbabwe and Zambia, Kabombo River in Zambia and Cabora Bassa in Mozambique, and finally in the Jozini dam in South Africa. Both the goliath tigerfish and its smaller relative the tigerfish are found in Africa.

The turkey is a large bird in the genus Meleagris, native to North America. There are two extant turkey species: the wild turkey of eastern and central North America and the ocellated turkey (Meleagris ocellata) of the Yucatán Peninsula in Mexico. Males of both turkey species have a distinctive fleshy wattle, called a snood, that hangs from the top of the beak. They are among the largest birds in their ranges. As with many large ground-feeding birds (order Galliformes), the male is bigger and much more colorful than the female.

Rotisserie chicken is a chicken dish that is cooked on a rotisserie by using direct heat in which the chicken is placed next to the heat source. Electric- or gas-powered heating elements may be used by using adjustable infrared heat. These types of rotisseries have proven quite functional for cooking rotisserie-style chicken. Leftover rotisserie chicken may be used in a variety of dishes such as soup, chicken salad, and sandwiches. Rotisserie chickens are often sold at a lower price than raw whole chickens in grocery stores. Two explanations are often given to justify this phenomenon. First, some grocery stores may use rotisserie chickens as loss leaders to bring shoppers into the store. The logic behind this theory is that if customers come to a store for its rotisserie chickens, they will buy other products while they are there, as well, particularly higher-margin side dishes and alcoholic beverages to accompany the chicken. Second, rotisserie chickens are often made with poultry that is about to reach its "best by" date and would otherwise have to be destroyed unsold. By cooking and selling the chickens, the grocery stores are able to recoup some of their expenditures.

An apple is a round, edible fruit produced by an apple tree . Apple trees are cultivated worldwide and are the most widely grown species in the genus Malus. The tree originated in Central Asia, where its wild ancestor, Malus sieversii, is still found. Apples have been grown for thousands of years in Eurasia and were introduced to North America by European colonists. Apples have religious and mythological significance in many cultures, including Norse, Greek, and European Christian tradition. Apples grown from seed tend to be very different from those of their parents, and the resultant fruit frequently lacks desired characteristics. For commercial purposes, including botanical evaluation, apple cultivars are propagated by clonal grafting onto rootstocks. Apple trees grown without rootstocks tend to be larger and much slower to fruit after planting. In some countries, cooking bananas are called plantains, distinguishing them from dessert bananas. The fruit is variable in size, color and firmness, but is usually elongated and curved, with soft flesh rich in starch covered with a peel, which may have a variety of colors when ripe. It grows upward in clusters near the top of the plant. Almost all modern edible seedless cultivated bananas come from two wild species – Musa acuminata and Musa balbisiana, or hybrids of them. Musa species are native to tropical Indomalaya and Australia; they were probably domesticated in New Guinea. They are grown in 135 countries, primarily for their fruit, and to a lesser extent to make banana paper and textiles, while some are grown as ornamental plants. The world's largest producers of bananas in 2022 were India and China, which together accounted for approximately 26% of total production. A bean is the seed of any plant in the legume family used as a vegetable for human consumption or animal feed. The seeds are often preserved through drying, but fresh beans are also sold. Most beans are traditionally soaked and boiled, but they can be cooked in many different ways, including frying and baking, and are used in many traditional dishes throughout the world. The unripe seedpods of some varieties are also eaten whole as green beans or edamame (immature soybean), but fully ripened beans contain toxins like phytohemagglutinin and require cooking. The word 'bean', for the Old World vegetable, existed in Old English, long before the New World genus Phaseolus was known in Europe. With the Columbian exchange of domestic plants between Europe and the Americas, use of the word was extended to pod-borne seeds of Phaseolus, such as the common bean and the runner bean, and the related genus Vigna. The term has long been applied generally to seeds of similar form, such as Old World soybeans and lupins, and to the fruits or seeds of unrelated plants such as coffee beans, vanilla beans, castor beans, and cocoa beans.

Bitter herbs in Uganda, such as katunkuma (bitter berries), are known for their strong flavor and various health benefits, including aiding in digestion and managing conditions like diabetes and high blood pressure. They are commonly used in local cuisine and traditional medicine.

The blackberry is an edible fruit produced by many species in the genus Rubus in the family Rosaceae, hybrids among these species within the subgenus Rubus, and hybrids between the subgenera Rubus and Idaeobatus. The taxonomy of blackberries has historically been confused because of hybridization and apomixis so that species have often been grouped together and called species aggregates. Blackberry fruit production is abundant with annual volumes of 20,000 pounds per 1 acre (0.40 ha) possible, making this plant commercially attractive.

Bread is a staple food prepared from a dough of flour and water, usually by baking. Throughout recorded history and around the world, it has been an important part of many cultures' diets. It is one of the oldest human-made foods, having been of significance since the dawn of agriculture, and plays an essential role in both religious rituals and secular culture. Bread may be leavened by naturally occurring microbes (e.g. sourdough), chemicals (e.g. baking soda), industrially produced yeast, or high-pressure aeration, which creates the gas bubbles that fluff up bread. In many countries, commercial bread often contains additives to improve flavor, texture, color, shelf life, nutrition, and ease of production.

Cabbage, comprising several cultivars of Brassica oleracea, is a leafy green, red , or white (pale green) biennial plant grown as an annual vegetable crop for its dense-leaved heads. It is descended from the wild cabbage (B. oleracea var. oleracea), and belongs to the "cole crops" or brassicas, meaning it is closely related to broccoli and cauliflower (var. botrytis); Brussels sprouts (var. gemmifera); and Savoy cabbage (var. sabauda). A cabbage generally weighs between 500 and 1,000 grams (1 and 2 lb). Smooth-leafed, firm-headed green cabbages are the most common, with smooth-leafed purple cabbages and crinkle-leafed savoy cabbages of both colours being rarer. Under conditions of long sunny days, such as those found at high northern latitudes in summer, cabbages can grow quite large. As of 2012[update], the heaviest cabbage was 62.71 kilograms (138 lb 4 oz). Cabbage heads are generally picked during the first year of the plant's life cycle, but plants intended for seed are allowed to grow a second year and must be kept separate from other cole crops to prevent cross-pollination. Cabbage is prone to several nutrient deficiencies, as well as to multiple pests, and bacterial and fungal diseases.

Manihot esculenta, commonly called cassava, manioc, or yuca , is a woody shrub of the spurge family, Euphorbiaceae, native to South America, from Brazil, Paraguay and parts of the Andes. Although a perennial plant, cassava is extensively cultivated in tropical and subtropical regions as an annual crop for its edible starchy tuberous root. Cassava is predominantly consumed in boiled form, but substantial quantities are processed to extract cassava starch, called tapioca, which is used for food, animal feed, and industrial purposes. The Brazilian farofa, and the related garri of West Africa, is an edible coarse flour obtained by grating cassava roots, pressing moisture off the obtained grated pulp, and finally drying it (and roasting in the case of both farofa and garri). Cassava is the third-largest source of carbohydrates in food in the tropics, after rice and maize, making it an important staple; more than 500 million people depend on it. It offers the advantage of being exceptionally drought-tolerant, and able to grow productively on poor soil. The largest producer is Nigeria, while Thailand is the largest exporter of cassava starch.

Chapati , also known as roti, rooti, rotee, rotli, rotta, safati, shabaati, phulka, chapo (in East Africa), sada roti (in the Caribbean), poli (in Marathi), and roshi (in the Maldives), is an unleavened flatbread originating from the Indian subcontinent and is a staple in India, Nepal, Bangladesh, Pakistan, Kyrgyzstan, Sri Lanka, the Arabian Peninsula, East Africa, and the Caribbean. Chapatis are made of whole-wheat flour known as atta, mixed into dough with water, oil (optional), and salt (optional) in a mixing utensil called a parat, and are cooked on a tava (flat skillet). It is a common staple in the Indian subcontinent as well as amongst expatriates from the Indian subcontinent throughout the world. Chapatis were also introduced to other parts of the world by immigrants from the Indian subcontinent, particularly by Indian merchants to Central Asia, Southeast Asia, East Africa, and the Caribbean.

Maize /meɪz/ , also known as corn in North American English, is a tall stout grass that produces cereal grain. It was domesticated by indigenous peoples in southern Mexico about 9,000 years ago from wild teosinte. Native Americans planted it alongside beans and squashes in the Three Sisters polyculture. The leafy stalk of the plant gives rise to male inflorescences or tassels which produce pollen, and female inflorescences called ears. The ears yield grain, known as kernels or seeds. In modern commercial varieties, these are usually yellow or white; other varieties can be of many colors. Maize relies on humans for its propagation. Since the Columbian exchange, it has become a staple food in many parts of the world, with the total production of maize surpassing that of wheat and rice. Much maize is used for animal feed, whether as grain or as the whole plant, which can either be baled or made into the more palatable silage. Sugar-rich varieties called sweet corn are grown for human consumption, while field corn varieties are used for animal feed, for uses such as cornmeal or masa, corn starch, corn syrup, pressing into corn oil, alcoholic beverages like bourbon whiskey, and as chemical feedstocks including ethanol and other biofuels.

The cowpea is an annual herbaceous legume from the genus Vigna. Its tolerance for sandy soil and low rainfall have made it an important crop in the semiarid regions across Africa and Asia. It requires very few inputs, as the plant's root nodules are able to fix atmospheric nitrogen, making it a valuable crop for resource-poor farmers and well-suited to intercropping with other crops. The whole plant is used as forage for animals, with its use as cattle feed likely responsible for its name. Four subspecies of cowpeas are recognised, of which three are cultivated. A high level of morphological diversity is found within the species with large variations in the size, shape, and structure of the plant. Cowpeas can be erect, semierect (trailing), or climbing. The crop is mainly grown for its seeds, which are high in protein, although the leaves and immature seed pods can also be consumed.

In botany, a fruit is the seed-bearing structure in flowering plants that is formed from the ovary after flowering (see Fruit anatomy). Fruits are the means by which angiosperms disseminate their seeds. Edible fruits in particular have long propagated using the movements of humans and other animals in a symbiotic relationship that is the means for seed dispersal for the one group and nutrition for the other; humans, and many other animals, have become dependent on fruits as a source of food. Consequently, fruits account for a substantial fraction of the world's agricultural output, and some (such as the apple and the pomegranate) have acquired extensive cultural and symbolic meanings.

Fruit salad is a dish consisting of various kinds of fruit, sometimes served in a liquid, either their juices or a syrup. In different forms, fruit salad can be served as an appetizer or a side as a salad. A fruit salad is sometimes known as a fruit cocktail , or fruit cup (when served in a small container). Fruit salad may also be canned (with larger pieces of fruit than a cocktail). There are several home recipes for fruit salads that contains different kinds of fruit, or that use a different kind of sauce other than the fruit's juice or syrup. Common ingredients used in fruit salads include strawberries, pineapple, honeydew, watermelon, grapes, and kiwifruit. Various recipes may call for the addition of nuts, fruit juices, certain vegetables, yogurt, or other ingredients.

Cooking bananas are a group of banana cultivars in the genus Musa whose fruits are generally used in cooking. They are not eaten raw and are generally starchy. Many cooking bananas are referred to as plantains or 'green bananas'. In botanical usage, the term "plantain" is used only for true plantains, while other starchy cultivars used for cooking are called "cooking bananas". True plantains are cooking cultivars belonging to the AAB group, while cooking bananas are any cooking cultivar belonging to the AAB, AAA, ABB, or BBB groups. The currently accepted scientific name for all such cultivars in these groups is Musa × paradisiaca. Fe'i bananas from the Pacific Islands are often eaten roasted or boiled, and are thus informally referred to as "mountain plantains", but they do not belong to any of the species from which all modern banana cultivars are descended. Cooking bananas are a major food staple in West and Central Africa, the Caribbean islands, Central America, and northern South America. Members of the genus Musa are indigenous to the tropical regions of Southeast Asia and Oceania. Bananas fruit all year round, making them a reliable all-season staple food.

Gooseberry or /ˈɡʊzbəri/ GUUZ-bər-ee (southern British)) is a common name for many species of Ribes (which also includes currants), as well as a large number of plants of similar appearance, and also several unrelated plants (see List of gooseberries). The berries of those in the genus Ribes (sometimes placed in the genus Grossularia) are edible and may be green, orange, red, purple, yellow, white, or black. The goose in gooseberry has been mistakenly seen as a corruption of either the Dutch word kruisbes or the allied German Krausbeere, or of the earlier forms of the French groseille. Alternatively, the word has been connected to the Middle High German krus ('curl, crisped'), in Latin as grossularia.

The peanut , also known as the groundnut, goober (US), goober pea, pindar (US) or monkey nut (UK), is a legume crop grown mainly for its edible seeds. It is widely grown in the tropics and subtropics by small and large commercial producers, both as grain legume and as an oil crop. Atypically among legumes, peanut pods develop underground leading botanist Carl Linnaeus to name peanuts hypogaea, which means "under the earth". The peanut belongs to the botanical family Fabaceae (or Leguminosae), commonly known as the legume, bean, or pea family. Like most other legumes, peanuts harbor symbiotic nitrogen-fixing bacteria in root nodules, which improve soil fertility, making them valuable in crop rotations.

Kachumbari is a fresh tomato and onion salad relish that is popular in the cuisines of the African Great Lakes region. It is an uncooked salad dish consisting of chopped tomatoes, onions, and chili peppers. Variations of kachumbari can be found in Kenya, Tanzania, Rwanda, Uganda, Burundi and in the Southern African countries of Malawi and Congo. The Swahili word kachumbari originated from the Indian word cachumber. Kachumbari is used as a salad side dish for a main meal. In Kenya, it is used as a condiment served with pilau , mukimo, or a meal of nyama choma (roasted meat) and ugali. In Tanzania, it is eaten with rice pilau or biryani. In Malawi, it is usually eaten on its own like any other salad dish, while in Uganda it is normally eaten with nyama choma.
