It is popular throughout West Africa, and goes by many names including apio, ogoglo, ogogoro (Ogog'), VC10, Kill Me Quick, Efie Nipa, Kele, Kumepreko, Anferewoase, Apiatiti, Home Boy, Nana Drobo, One Touch among others. It is also known as sapele water, kparaga, kai-kai, Sun gbalaja, egun inu igo meaning The Masquerade in the Bottle, push-me-push-you, and/or crim-kena, sonsé ("do you do it?" in Yoruba language). The shapes of the leaves are oval and lobed with a wavy margin. Both sides of the leaves are hairy with stellate or simple hairs. A baguette is a long, thin type of bread of French origin that is commonly made from basic lean dough (the dough, not the shape, is defined by French law). It is distinguishable by its length and crisp crust. A baguette has a diameter of about 5 to 6 cm (2–2+1⁄2 in) and a usual length of about 65 cm (26 in), but can be up to 1 m (39 in) long.

A bean is the seed of any plant in the legume family used as a vegetable for human consumption or animal feed. The seeds are often preserved through drying, but fresh beans are also sold. Most beans are traditionally soaked and boiled, but they can be cooked in many different ways, including frying and baking, and are used in many traditional dishes throughout the world. The unripe seedpods of some varieties are also eaten whole as green beans or edamame (immature soybean), but fully ripened beans contain toxins like phytohemagglutinin and require cooking. The word 'bean', for the Old World vegetable, existed in Old English, long before the New World genus Phaseolus was known in Europe. With the Columbian exchange of domestic plants between Europe and the Americas, use of the word was extended to pod-borne seeds of Phaseolus, such as the common bean and the runner bean, and the related genus Vigna. The term has long been applied generally to seeds of similar form, such as Old World soybeans and lupins, and to the fruits or seeds of unrelated plants such as coffee beans, vanilla beans, castor beans, and cocoa beans.

Cassava fritters are a popular snack made from grated cassava, often mixed with ingredients like onions, flour, and spices, then deep-fried until golden brown. They are crunchy on the outside and chewy on the inside, best enjoyed fresh and warm.

Maize /meɪz/ , also known as corn in North American English, is a tall stout grass that produces cereal grain. It was domesticated by indigenous peoples in southern Mexico about 9,000 years ago from wild teosinte. Native Americans planted it alongside beans and squashes in the Three Sisters polyculture. The leafy stalk of the plant gives rise to male inflorescences or tassels which produce pollen, and female inflorescences called ears. The ears yield grain, known as kernels or seeds. In modern commercial varieties, these are usually yellow or white; other varieties can be of many colors. Maize relies on humans for its propagation. Since the Columbian exchange, it has become a staple food in many parts of the world, with the total production of maize surpassing that of wheat and rice. Much maize is used for animal feed, whether as grain or as the whole plant, which can either be baled or made into the more palatable silage. Sugar-rich varieties called sweet corn are grown for human consumption, while field corn varieties are used for animal feed, for uses such as cornmeal or masa, corn starch, corn syrup, pressing into corn oil, alcoholic beverages like bourbon whiskey, and as chemical feedstocks including ethanol and other biofuels.

Humans and their hominid relatives have consumed eggs for millions of years. The most widely consumed eggs are those of fowl, especially chickens. People in Southeast Asia began harvesting chicken eggs for food by 1500 BCE. Eggs of other birds, such as ducks and ostriches, are eaten regularly but much less commonly than those of chickens. People may also eat the eggs of reptiles, amphibians, and fish. Fish eggs consumed as food are known as roe or caviar. Hens and other egg-laying creatures are raised throughout the world, and mass production of chicken eggs is a global industry. In 2009, an estimated 62.1 million metric tons of eggs were produced worldwide from a total laying flock of approximately 6.4 billion hens. There are issues of regional variation in demand and expectation, as well as current debates concerning methods of mass production. In 2012, the European Union banned battery husbandry of chickens.

Fonio, also sometimes called findi or acha, is the term for two cultivated grasses in the genus Digitaria that are important crops in parts of West Africa. It is a vital food source in many rural areas, especially in the mountains of Fouta Djalon, Guinea, but it is also cultivated in Mali, Burkina Faso, Ivory Coast, Nigeria, and Senegal. The global fonio market was estimated at 721,400 tonnes in 2020. Guinea annually produces the most fonio in the world, accounting for over 75% of the world's production in 2019. The name fonio is from Wolof foño. In West Africa, the species black fonio (Digitaria iburua) and white fonio (Digitaria exilis) are cultivated; the latter is the economically more important crop. Fonio is a glumaceous monocot belonging to the grass family Poaceae and the genus Digitaria. While hundreds of these crabgrass species exist, only a few of them are produced for their grains. It is a small annual herbaceous plant with an inflorescence containing two or three racemes. The racemes have spikelets grouped in twos, threes, or fours, with a sterile and a fertile flower producing the fonio grain. Fonio has a short growing season and is well adjusted to harsh environments. The size of its root system, which can extend down to more than one meter in depth, is advantageous in periods of drought and helps with its adaptation to poor soils. Once considered a humble and often overlooked grain commonly known as the "cereal of the poor," fonio is now gaining attention in urban West Africa. Its unique cooking properties and nutritional benefits are sparking renewed interest in this once underrated staple. White fonio, Digitaria exilis, also called "hungry rice" by Europeans, is the most common of a diverse group of wild and domesticated Digitaria species that are harvested in the savannas of West Africa. Fonio has the smallest seeds of all species of millet. It has potential to improve nutrition, boost food security, foster rural development, and support sustainable use of the land.

As a member of the Malvaceae, it is related to such species as cotton, cocoa, and hibiscus. The leaves are 10–20 centimetres (4–8 in) long and broad, palmately lobed with 5–7 lobes. The flowers are 4–8 cm (1+5⁄8–3+1⁄8 in) in diameter, with five white to yellow petals, often with a red or purple spot at the base. The pollen grains are spherical and approximately 188 microns in diameter. The fruit is a capsule up to 18 cm (7 in) long with pentagonal cross-section, containing numerous seeds.

Millets are a highly varied group of small-seeded grasses, widely grown around the world as cereal crops or grains for fodder and human food. Most millets belong to the tribe Paniceae. Millets are important crops in the semiarid tropics of Asia and Africa, especially in India, Mali, Nigeria, and Niger, with 97% of production in developing countries. The crop is favoured for its productivity and short growing season under hot dry conditions. The millets are sometimes understood to include the widely cultivated sorghum; apart from that, pearl millet is the most commonly cultivated of the millets. Finger millet, proso millet, and foxtail millet are other important crop species. Millets may have been consumed by humans for about 7,000 years and potentially had "a pivotal role in the rise of multi-crop agriculture and settled farming societies".

An omelette is a dish made from eggs, fried with butter or oil in a frying pan. It is a common practice for an omelette to include fillings such as chives, vegetables, mushrooms, meat (often ham or bacon), cheese, onions or some combination of the above. Whole eggs or egg whites are often beaten with a small amount of milk, cream, or water. The earliest omelettes are believed to have originated in ancient Persia.: 65  According to Breakfast: A History, they were "nearly indistinguishable" from the Iranian dish kookoo sabzi. According to Alan Davidson, the French word omelette ( French: [ɔm.lɛt]) came into use during the mid-16th century, but the versions alumelle and alumete are employed by the Ménagier de Paris (II, 4 and II, 5) in 1393. Rabelais (Gargantua and Pantagruel, IV, 9) mentions an homelaicte d'oeufs, Olivier de Serres an amelette, François Pierre La Varenne's Le cuisinier françois (1651) has aumelette, and the modern omelette appears in Cuisine bourgeoise (1784).

The peanut , also known as the groundnut, goober (US), goober pea, pindar (US) or monkey nut (UK), is a legume crop grown mainly for its edible seeds. It is widely grown in the tropics and subtropics by small and large commercial producers, both as grain legume and as an oil crop. Atypically among legumes, peanut pods develop underground leading botanist Carl Linnaeus to name peanuts hypogaea, which means "under the earth". The peanut belongs to the botanical family Fabaceae (or Leguminosae), commonly known as the legume, bean, or pea family. Like most other legumes, peanuts harbor symbiotic nitrogen-fixing bacteria in root nodules, which improve soil fertility, making them valuable in crop rotations.

Cooking bananas are a group of banana cultivars in the genus Musa whose fruits are generally used in cooking. They are not eaten raw and are generally starchy. Many cooking bananas are referred to as plantains or 'green bananas'. In botanical usage, the term "plantain" is used only for true plantains, while other starchy cultivars used for cooking are called "cooking bananas". True plantains are cooking cultivars belonging to the AAB group, while cooking bananas are any cooking cultivar belonging to the AAB, AAA, ABB, or BBB groups. The currently accepted scientific name for all such cultivars in these groups is Musa × paradisiaca. Fe'i bananas from the Pacific Islands are often eaten roasted or boiled, and are thus informally referred to as "mountain plantains", but they do not belong to any of the species from which all modern banana cultivars are descended. Cooking bananas are a major food staple in West and Central Africa, the Caribbean islands, Central America, and northern South America. Members of the genus Musa are indigenous to the tropical regions of Southeast Asia and Oceania. Bananas fruit all year round, making them a reliable all-season staple food.

Rice is a cereal grain and in its domesticated form is the staple food of over half of the world's population, particularly in Asia and Africa. Rice is the seed of the grass species Oryza sativa —or, much less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated in Africa about 3,000 years ago. Rice has become commonplace in many cultures worldwide; in 2021, 787 million tons were produced, placing it fourth after sugarcane, maize, and wheat. Only some 8% of rice is traded internationally. China, India, and Indonesia are the largest consumers of rice. A substantial amount of the rice produced in developing nations is lost after harvest through factors such as poor transport and storage. Rice yields can be reduced by pests including insects, rodents, and birds, as well as by weeds, and by diseases such as rice blast. Traditional rice polycultures such as rice-duck farming, and modern integrated pest management seek to control damage from pests in a sustainable way. Many varieties of rice have been bred to improve crop quality and productivity. Biotechnology has created Green Revolution rice able to produce high yields when supplied with nitrogen fertiliser and managed intensively. Other products are rice able to express human proteins for medicinal use; flood-tolerant or deepwater rice; and drought-tolerant and salt-tolerant varieties. Rice is used as a model organism in biology.

Spinach is a leafy green flowering plant native to central and Western Asia. It is of the order Caryophyllales, family Amaranthaceae, subfamily Chenopodioideae. Its leaves are a common edible vegetable consumed either fresh, or after storage using preservation techniques by canning, freezing, or dehydration. It may be eaten cooked or raw, and the taste differs considerably; the high oxalate content may be reduced by steaming. It is an annual plant (rarely biennial), growing as tall as 30 cm (1 ft). Spinach may overwinter in temperate regions. The leaves are alternate, simple, ovate to triangular, and very variable in size: 2–30 cm (1–12 in) long and 1–15 cm (1⁄2–6 in) broad, with larger leaves at the base of the plant and small leaves higher on the flowering stem. The flowers are inconspicuous, yellow-green, 3–4 mm (1⁄8–5⁄32 in) in diameter, and mature into a small, hard, dry, lumpy fruit cluster 5–10 mm (1⁄4–3⁄8 in) across containing several seeds.

Sugarcane or sugar cane is a species of tall, perennial grass that is used for sugar production. The plants are 2–6 m (6–20 ft) tall with stout, jointed, fibrous stalks that are rich in sucrose, which accumulates in the stalk internodes. Sugarcanes belong to the grass family, Poaceae, an economically important flowering plant family that includes maize, wheat, rice, and sorghum, and many forage crops. It is native to New Guinea. Sugarcane was an ancient crop of the Austronesian and Papuan people. The best evidence available today points to the New Guinea area as the site of the original domestication of Saccharum officinarum. It was introduced to Polynesia, Island Melanesia, and Madagascar in prehistoric times via Austronesian sailors. It was first known to India and then introduced to Southern China by 500 BC. The Persians and Greeks encountered the famous "reeds that produce honey without bees" in India between the sixth and fourth centuries BC. They adopted and then spread sugarcane agriculture. By the eighth century, sugar was considered a luxurious and expensive spice from India, and merchant trading spread its use across the Mediterranean and North Africa. In the 18th century, sugarcane plantations began in the Caribbean, South American, Indian Ocean, and Pacific island nations. The need for sugar crop laborers became a major driver of large migrations, some people voluntarily accepting indentured servitude and others forcibly imported as slaves.
