Aloo paratha is a paratha (flat bread dish) stuffed with potato filling native to the Indian subcontinent. It is traditionally eaten for breakfast. It is made using unleavened dough rolled with a mixture of mashed potato and spices (amchur, garam masala) which is cooked on a hot tawa with butter or ghee. Aloo paratha is usually served with butter, chutney, curd, or Indian pickles.

Humans and their hominid relatives have consumed eggs for millions of years. The most widely consumed eggs are those of fowl, especially chickens. People in Southeast Asia began harvesting chicken eggs for food by 1500 BCE. Eggs of other birds, such as ducks and ostriches, are eaten regularly but much less commonly than those of chickens. Pain au chocolat , also known as chocolatine ( French: [ʃɔkɔlatin] ⓘ) in the south-west part of France and in French speaking parts of Canada, couque au chocolat in Belgium, or chocolate croissant in the United States, is a type of Viennoiserie pastry consisting of a cuboid-shaped piece of yeast-leavened laminated dough, similar in texture to a puff pastry, with one or two pieces of dark chocolate in the center. The chocolate usually has a slight bite to the texture. Pain au chocolat is made of the same layered doughs as a croissant. Often sold still hot or warm from the oven, they are commonly sold alongside croissants in French bakeries and supermarkets.

Pain aux raisins , also called escargot ( pronounced [ɛskaʁɡo] ⓘ) or pain russe, is a spiral pastry often eaten for breakfast in France. Its names translate as "raisin bread", "snail" and "Russian bread" respectively. It is a member of the pâtisserie viennoise family of baked foods. In France, it is typically a variant of the croissant or pain au chocolat, made with a leavened butter pastry with raisins added and shaped in a spiral with a crème pâtissière filling. However, in many areas of Northern Europe and North America, it is generally made with sweetened bread dough or brioche dough, rather than pastry. It is often consumed for breakfast as part of a continental breakfast.

Paratha is a flatbread native to the Indian subcontinent, with earliest reference mentioned in early medieval Sanskrit, India; prevalent throughout the modern-day countries of India, Pakistan, Nepal, Bangladesh, Maldives, Afghanistan, Myanmar, Malaysia, Singapore, Thailand, Mauritius, Fiji, Guyana, Suriname, and Trinidad and Tobago where wheat is the traditional staple. It is one of the most popular flatbreads in the Indian subcontinent and the Middle East. Paratha is an amalgamation of the words parat and atta, which literally means layers of cooked dough. Alternative spellings and names include parantha, parauntha, prontha, parontay, paronthi (Punjabi), porota (in Bengali), paratha (in Odia, Urdu, Hindi), palata ( pronounced [pəlàtà]; in Myanmar), porotha (in Assamese), forota (in Chittagonian and Sylheti), faravatha (in Bhojpuri), farata (in Mauritius and the Maldives), prata (in Southeast Asia), paratha, buss-up shut, oil roti (in the Anglophone Caribbean) and roti canai in Malaysia and Indonesia. The word paratha is derived from Sanskrit (S. पर, or परा+स्थः, or स्थितः). Recipes for various stuffed wheat puran polis (which Achaya (2003) describes as parathas) are mentioned in Manasollasa, a 12th-century Sanskrit encyclopedia compiled by Someshvara III, a Western Chalukya king, who ruled from present-day Karnataka, India. References to paratha have also been mentioned by Nijjar (1968), in his book Panjāb under the Sultāns, 1000–1526 AD when he writes that parathas were common with the nobility and aristocracy in the Punjab.

Rice is a cereal grain and in its domesticated form is the staple food of over half of the world's population, particularly in Asia and Africa. Rice is the seed of the grass species Oryza sativa —or, much less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated in Africa about 3,000 years ago. Rice has become commonplace in many cultures worldwide; in 2021, 787 million tons were produced, placing it fourth after sugarcane, maize, and wheat. Only some 8% of rice is traded internationally. China, India, and Indonesia are the largest consumers of rice. A substantial amount of the rice produced in developing nations is lost after harvest through factors such as poor transport and storage. Rice yields can be reduced by pests including insects, rodents, and birds, as well as by weeds, and by diseases such as rice blast. Traditional rice polycultures such as rice-duck farming, and modern integrated pest management seek to control damage from pests in a sustainable way. Many varieties of rice have been bred to improve crop quality and productivity. Biotechnology has created Green Revolution rice able to produce high yields when supplied with nitrogen fertiliser and managed intensively. Other products are rice able to express human proteins for medicinal use; flood-tolerant or deepwater rice; and drought-tolerant and salt-tolerant varieties. Tea is an aromatic beverage prepared by pouring hot or boiling water over cured or fresh leaves of Camellia sinensis, an evergreen shrub native to East Asia which probably originated in the borderlands of south-western China and northern Myanmar. Tea is also made, but rarely, from the leaves of Camellia taliensis. After plain water, tea is the most widely consumed drink in the world. There are many different types of tea; some have a cooling, slightly bitter, and astringent flavour, while others have profiles that include sweet, nutty, floral, or grassy notes. Tea has a stimulating effect in humans, primarily due to its caffeine content. An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. It was popularised as a recreational drink during the Chinese Tang dynasty, and tea drinking subsequently spread to other East Asian countries. Portuguese priests and merchants introduced it to Europe during the 16th century. During the 17th century, drinking tea became fashionable among the English, who started to plant tea on a large scale in British India.

Yogurt is a food produced by bacterial fermentation of milk. Fermentation of sugars in the milk by these bacteria produces lactic acid, which acts on milk protein to give yogurt its texture and characteristic tart flavor. Cow's milk is most commonly used to make yogurt. Milk from water buffalo, goats, ewes, mares, camels, and yaks is also used to produce yogurt. The milk used may be homogenized or not. It may be pasteurized or raw. Each type of milk produces substantially different results. Yogurt is produced using a culture of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus bacteria. Athrasa in Kannada , or Adhirasam (Tamil: அதிரசம்), kajjaya ariselu in Telugu, anarasa in Marathi, Airsa in Chhattisgarhi or Arisa pitha in Odia) is a type of Indian sweet made out of rice, jaggery, ghee and sometimes coconut and with spices like cardamom, sesame, pepper and ginger powder from Tamil cuisine, Karnataka cuisine, Telugu cuisine, Marathi cuisine and Odia cuisine. The doughnut-like fried dough has a long history of popularity in Kannada, Telugu, Maharashtra, Chhattisgarh, Odisha, and Tamil civilization. They are similar in shape to vada, but are not savoury and are eaten as a sweet. Athrasa is a popular as an offering to the relatives during Deepavali and Ganesha Chaturthi festivals, both at home and in temples in Tamil Nadu and Karnataka.

Barfi[a] or burfi is a milk-based sweet from the Indian subcontinent with a fudge-like consistency. Its name comes from the Persian and Urdu word for snow. Barfi is consumed throughout India and Pakistan and is especially popular in North India. It is often served at celebrations and religious festivals such as Diwali and Holi. Barfi originated in Persia and was introduced to India by the Mughal Empire in the 16th century. Through indentured workers it was brought to Trinidad in the mid-19th century and became popular there.

Basbousa is a sweet, syrup-soaked semolina dessert that is typically associated with cuisines of Egyptian cuisine, Similar but slightly different dishes are also popular in the wider region. The semolina batter is baked in a sheet pan, then sweetened with sugar syrup and typically cut into diamond (lozenge) shapes or squares. The Oxford Companion to Food (3rd edition) suggests that basbousa might have developed from a dish called ma'mounia, which was created around the 10th century. Ma'mounia was made by cooking rice in fat and syrup. This recipe was later adapted to use semolina, with the batter being cooked first and then soaked in syrup. Another take on its origin suggests that basbousa was first made during the 16th century in the Ottoman Empire, likely in what is modern-day Turkey, to celebrate the conquest of Armenia.

A Yule log or bûche de Noël is a traditional Christmas cake, often served as a dessert, especially in France, Belgium, Luxembourg, Switzerland, Vietnam, and Quebec, Canada. Variants are also served in the United States, United Kingdom, Cambodia, Scandinavia, Portugal, Spain, and Japan. Made of sponge cake, to resemble a miniature actual Yule log, it is a form of sweet roulade.

Dame blanche is the name used in Belgium and the Netherlands for a sweet dessert consisting of vanilla ice cream with whipped cream, and warm molten chocolate. In Germany and in Switzerland, the same type of dessert is known as a Coupe Dänemark. The dessert is similar to the American sundae. The original dish that was created by Auguste Escoffier actually consisted of almond milk ice cream, poached peach, lemon sorbet and white currants.[citation needed]

Coconut cake is a popular dessert in the Southern region of the United States. It is a cake frosted with a white frosting and covered in coconut flakes. Typically, the cakes used in coconut cake are either white or yellow cakes. While some recipes do not call for coconut flavor in the cake itself, there are others that replace the milk with coconut milk and/or use coconut extract. It is also common to brush the cakes with a simple syrup to make it more moist. Often the cake layers are filled with either a white frosting or coconut pastry cream. It is also common in nations with substantial populations of people with South Asian heritage, such as Mauritius, Fiji, Gulf states, the Malay Peninsula, United Kingdom, United States, Canada, South Africa, and the Caribbean (Jamaica, Trinidad and Tobago, Guyana, Suriname). It is made mainly from milk solids, traditionally from khoya, which is milk reduced to the consistency of a soft dough. Modern recipes call for dried or powdered milk instead of khoya. It is often garnished with dried nuts, such as almonds and cashews, to enhance flavour.

Jaggery is a traditional non-centrifugal cane sugar consumed in the Indian subcontinent, Southeast Asia, North America, Central America, Brazil and Africa. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It contains up to 50% sucrose, up to 20% invert sugars, and up to 20% moisture, with the remainder made up of other insoluble matter, such as wood ash, proteins, and bagasse fibres. Jaggery is very similar to muscovado, an important sweetener in Portuguese, British and French cuisine. Jaggery comes from Portuguese terms jágara, jagra, borrowed from Malayalam ശർക്കര , which is borrowed from Sanskrit शर्करा (śarkarā). It is a doublet of sugar.

Jalebi [a] is a popular sweet snack in the Indian subcontinent, West Asia and some parts of Africa. It goes by many names, including jilapi, zelepi, jilebi, jilipi, zulbia, zoolbia, jerry, mushabak, z'labia, or zalabia. The south Asian variety is made by deep-frying maida flour batter in pretzel or circular shapes, which are then soaked in sugar syrup. Jalebi is eaten with curd or rabri (in North India) along with optional other flavors such as kewra (scented water).

Kalakand is a sweet cheese confection from India. It has been described as "akin to Italian cheesecake, firmer in texture than milk cake, but softer than burfis." The earliest mention of kalakand as a sweet appears in the 19th-century Urdu text Zīnat al-ʿarūs. However, contemporary sources state that kalakand was invented in the Baba Thakur Das & Sons halwai shop in Alwar, Rajasthan in 1947, where it is still sold today.

Khaja or Khajuri is an Indian deep-fried pastry, commonly filled with fruit or soaked with sugar syrup. Khaja, plain or sweet mentioned in Silao, was a wheat flour preparation fried in ghee similar to Chandrakala, a flaky dessert from South India. Khaja is believed to have originated from the eastern parts of the former state of Magadh and the former United Provinces and Magadh. Silao, Nalanda districts of Bihar, and is also native to state of Magadh as well as regions like Kutch and Andhra Pradesh and Karnataka. Refined wheat flour with sugar is made into layered dough, with or without dry fruit or other stuffing, and lightly fried in oil to make khaja. In his 1872–1873 expedition to Silao, renowned British archaeologist Joseph David Beglar, talks about the sweet that dates back to King Vikramaditya and describes the sweetmeat. There is a famous folk tale that the Lord Buddha was offered Silao Khaja as he traveled through Silao on his way from Rajgir to Nalanda. There are Buddhist sites nearby Silao.

Kheer, also known as payasam or payesh, is a pudding or porridge popular in the Indian subcontinent, usually made by boiling milk, sugar or jaggery, and rice. It can be additionally flavoured with dried fruits, nuts, cardamom and saffron. Instead of rice, it may contain cracked wheat, vermicelli , sago or tapioca (sabudana). In Southern India, it is known as payasam and it is made in various ways. The most popular versions are the ones made with rice and vermicelli (semiya).

Kulfi is a frozen dairy dessert from the Indian subcontinent. It is often described as "traditional Indian ice cream". Kulfi originated in 16th-century Delhi during the Mughal era. It is part of the national cuisines of India and Pakistan.[citation needed] It is also popular in Bangladesh, Myanmar, Nepal, Sri Lanka, and the Middle East.[better source needed]

Laddu or laddoo is a spherical sweet from the Indian subcontinent made of various ingredients and sugar syrup or jaggery. It has been described as "perhaps the most universal and ancient of Indian sweets." Laddus are often served during celebrations and religious festivals, especially those associated with the Hindu deity Ganesha.

A macaron or French macaroon (/ˌmækəˈruːn/ MAK-ə-ROON) is a sweet meringue-based confection made with egg white, icing sugar, granulated sugar, almond meal, and often food colouring. Since the 19th century, a typical Parisian-style macaron has been a sandwich cookie filled with a ganache, buttercream or jam. As baked, the circular macaron displays a smooth, square-edged top, a ruffled circumference—referred to as the "crown" or "foot" (or "pied")—and a flat base. It is mildly moist and easily melts in the mouth. Macarons can be found in a wide variety of flavours that range from traditional sweet such as raspberry or chocolate to savoury (as a foie gras).

Malida is a traditional sweet dessert popular among Pashtun and Persian households in Afghanistan and Pakistan, popular among people in northern India and Pakistan, as well as Hyderabad Deccan. It is made from leftover bread (called Dodei by Pashtuns and Parathas or Rotis in desi households) that is crumbled and pounded, then stir fried with ghee, sugar, dried fruits, and nuts. Malida is often given to young children in the winter as ghee is believed to warm the body and prevent colds, and it is also a traditional dish for some Muslims on the last Wednesday of the Islamic month Safar. Malida is a common way to use up extra parathas or rotis. The word 'malida' comes from Pashto word meaning 'finely crushed', equivalent of the Persian 'ميده' with the same meaning. The word Choori is derived from the word Choor (چُور) which means pieces, this implies that the Parathas or Rotis are broken down into smaller pieces and mixed with various other ingredients to make this sweet dish. Many Muslims in the Indian subcontinent celebrate the last Wednesday of the Islamic month Safar by fasting, and breaking the fast with sweet Choori. The method is supposedly attributed to Sunnah, but almost every Islamic Sect deems it a Bid'ah (i.e. Innovation in Religion).

Marzipan is a confection consisting primarily of sugar and almond meal , sometimes augmented with almond oil or extract. It is often made into sweets; common uses are chocolate-covered marzipan and small marzipan imitations of fruits and vegetables. It can also be used in biscuits or rolled into thin sheets and glazed for icing cakes, primarily birthday cakes, wedding cakes and Christmas cakes. Marzipan may also be used as a baking ingredient, as in stollen or banket. In some countries, it is shaped into small figures of animals as a traditional treat for New Year's Day or Christmas. Marzipan is also used in Tortell, and in some versions of king cake eaten during the Carnival season.

The English word "sugar" comes from a Sanskrit word sharkara for refined sugar, while the word "candy" comes from Sanskrit word khaanda for the unrefined sugar – one of the simplest raw forms of sweet. Over its long history, cuisines of the Indian subcontinent developed a diverse array of sweets. Some claim there is no other region in the world where sweets are so varied, so numerous, or so invested with meaning as the Indian subcontinent. In the diverse languages of the Indian subcontinent, sweets are called by numerous names, a common name being mithai. They include sugar, and a vast array of ingredients such as different flours, milk, milk solids, fermented foods, root vegetables, raw and roasted seeds, seasonal fruits, fruit pastes and dry fruits. Some sweets such as kheer and barfi are cooked, varieties like Mysore pak are roasted, some like jalebi are fried, others like kulfi are frozen, while still others involve a creative combination of preparation techniques. The composition and recipes of the sweets and other ingredients vary by region. Mithai are sometimes served with a meal, and often included as a form of greeting, celebration, religious offering, gift giving, parties, and hospitality in the Indian subcontinent. On South Asian festivals – such as Holi, Diwali, and Raksha Bandhan – sweets are homemade or purchased, then shared. Many social gatherings, wedding ceremonies and religious festivals often include a social celebration of food, and the flavors of sweets are an essential element of such a celebration.

Nankhatai / نان خطائی (Urdu); Sinhala: ඤාණකතා; Tamil: நானஹத்தா) are shortbread biscuits originating in the Indian state of Gujarat. They are now popular throughout India and also in the neighbouring countries of Pakistan, Bangladesh, Sri Lanka, Nepal and Myanmar. They have also recently gained popularity in Afghanistan and Iran. The word nankhatai is derived from the Classical Persian نانِ خطائی nān-i khaṭāʾī, lit. 'Cathayan bread, bread of Cathay [northern China]', composed of نان nān meaning ‘bread’ and خطائی khaṭāʾī meaning ‘Cathayan’. The word has been borrowed into the Burmese language as nankahtaing (နံကထိုင်), in the Tamil language (in East Tamil Nadu) as naanahatha (நானஹத்தா), and in the Sinhala language (in Sri Lanka) as ghanakatha (ඤාණකතා).

Nian gao , sometimes translated as year cake or New Year cake or Chinese New Year's cake, is a food prepared from glutinous rice flour and consumed in Chinese cuisine. It is also simply known as "rice cake". While it can be eaten all year round, traditionally it is most popular during the Chinese New Year. It is considered good luck to eat nian gao during this time of the year because nian gao (年糕) is a homonym for "higher year" or "grow every year" (年高), which means "a more prosperous year". The character 年 is literally translated as "year", and the character 糕 (gāo) is literally translated as "cake" and is identical in sound to the character 高, meaning "tall" or "high". The word tikka (tike in Turkish, and tikə in Azerbaijani) is a Persian word, meaning "bits" or "pieces". It is also a chicken dish served in Punjabi cuisine. The Kashmiri version of the dish, however, is grilled over red-hot coals, and does not always contain boneless pieces. The pieces are brushed with ghee (clarified butter) at intervals to increase its flavour, while being continuously fanned. It is typically eaten with green coriander and tamarind chutney served with onion rings and lemon, or used in preparing an authentic chicken tikka masala. A chicken tikka sizzler is a dish where chicken tikka is served on a heated plate with onions. The dish is also popular in Afghanistan, though the Afghan variant (like many other Persian, Turkish, and Arab dishes) is less spicy compared to the variants in the Indian subcontinent and uses beef and lamb in addition to chicken.

A Buffalo wing in American cuisine is an unbreaded chicken wing section that is generally deep-fried, then coated or dipped in a sauce consisting of a vinegar-based cayenne pepper hot sauce and melted butter prior to serving. They are traditionally served hot, along with celery sticks and carrot sticks, and a dip of ranch dressing or blue cheese dressing (the latter being primarily served in New York). Buffalo wings are named after Buffalo, New York, where they were invented, and have no relation to the animal. They are often called simply chicken wings, hot wings, or just wings. Buffalo wings have gained in popularity in the United States and abroad, with some North American restaurant chains featuring them as a main menu item. The name "Buffalo" is now also applied to other spiced fried foods served with dipping sauces, including boneless chicken wings (made from chicken breast meat rather than a chicken wing), chicken fries, chicken nuggets, popcorn chicken, shrimp, and cauliflower. It is also used for other dishes, such as pizza, that are seasoned with the Buffalo-style sauce or a seasoning.

Chop suey is a dish from American Chinese cuisine and other forms of overseas Chinese cuisine, generally consisting of meat (usually chicken, pork, beef, shrimp or fish) and eggs, cooked quickly with vegetables such as bean sprouts, cabbage, and celery, and bound in a starch-thickened sauce. It is typically served with rice, but can become the Chinese-American form of chow mein with the substitution of stir-fried noodles for rice. Chop suey has become a prominent part of American Chinese cuisine, British Chinese cuisine, Filipino Chinese cuisine, Canadian Chinese cuisine, Thai Chinese cuisine, Indian Chinese cuisine, and Polynesian cuisine. In Chinese Indonesian cuisine it is known as cap cai (tjap tjoi) (雜菜, "mixed vegetables") and mainly consists of vegetables. Chop suey is widely believed to have been developed in the U.S. by Chinese Americans. However, the anthropologist E. N. Anderson traces the dish to tsap seui (杂碎, "miscellaneous leftovers"), common in Taishan, Guangdong (Toisan) – the home of many early Chinese immigrants to the United States. Hong Kong doctor Li Shu-fan likewise reported that he knew it in Toisan in the 1890s.

Curry is a dish with a sauce or gravy seasoned with spices, mainly derived from the interchange of Indian cuisine with European taste in food, starting with the Portuguese, followed by the Dutch and British, and then thoroughly internationalised. Many dishes that would be described as curries in English are found in the native cuisines of countries in Southeast Asia and East Asia. The English word is derived indirectly from some combination of Dravidian words such as the Tamil kaṟi meaning 'sauce' or 'relish for rice'.

Dal makhani is a dish originating in Punjab region. A relatively modern variation of traditional lentil dishes, it is made with urad dal (black beans) and other pulses, and includes butter and cream (makhani is a Punjabi word for butter). Dal means lentils or pulses. Makhan is the Hindi word for butter. Makhani means buttery.

Daube is a French slow-cooked stew, usually of beef, but other meat is sometimes used. The best-known is the bœuf en daube à la provençale, a Provençal stew made with cheaper cuts of beef braised in wine, with vegetables, garlic and herbs, and traditionally cooked in a daubière–a braising pot. The Oxford English Dictionary defines a daube as "A braised meat (usually beef) stew with wine, spices, etc". In The Oxford Companion to Food, Philip and Mary Hyman note that the word is a French culinary term indicating both a method of cooking and a type of dish. The Dictionnaire de l'Académie française dates the word to the 16th century, and says that it derives from the Occitan dobba, a marinade. In the 18th century, daubes were a specialty of the French town of Saint-Malo. The Hymans comment that there were many different types: "artichokes en daube, celery, pork cutlets, goose— all these and many other foodstuffs besides were prepared en daube". Most were made to be eaten cold. Daubes remained popular in 19th-century France, but by then, they were nearly always meat dishes, usually beef, eaten hot. By the end of the 20th century, the term was largely confined to bœuf en daube. The dish came to be seen as rustic and old-fashioned, and the copper pots—daubières—in which it was traditionally cooked became "a curiosity in antique markets".

Duck à l'orange, orange duck, or canard à l'orange is a French dish in cuisine bourgeoise consisting of a roast duck with a bigarade sauce. Another dish called canard à l'orange is braised rather than roasted. In that case, it is cooked until spoon-tender. Duck à l'orange is an English interpretation of the French dish, made popular in the UK and US in the 1960s.
