Iitat
Iitat is a type of nutritious mouse food, long and dark in color, traditionally consumed by both mice and the Yupik people who clean, boil, and incorporate them into dishes like akutaq with salmon berries or soups with seal meat and tomcod livers. Harvested in late September and early October from the tundra by Yupik women, who dig them up and collect them in grass baskets, Iitat are prepared for meals by boiling, often served as a part of a delicious soup for lunch and supper.
