Pionono describes different sweet or savory pastries from Granada, Spain, the Philippines, South America, and the Caribbean. They are named after Pope Pius IX's name in Italian, Pío Nono. Spanish Piononos are small pastries traditional in Santa Fe, a small town adjacent to the city of Granada, Spain, which is otherwise known primarily for the Capitulations of Santa Fe between Columbus and the Catholic Monarchs. A pionono has two parts: a thin layer of pastry rolled into a cylinder, drenched with different kinds of syrup which give the pionono a sweet and pleasant texture, and crowned with toasted cream. It is typically eaten in one or two bites. In the Philippines, pionono is more commonly spelled as pianono. It is a rolled sponge cake and is more accurately a type of jelly roll. It consists of a layer of pastry made from eggs, sugar, and sifted flour baked in a sheet. Once cooled, jelly or other types of filling is spread over the pastry. Unlike the American snow cone which is round and resembles a snowball, the piragua is pointy and shaped like a pyramid. Polvorones are popular holiday delicacies in all of Spain, Hispanic America, the Philippines, and other Spanish-influenced countries around the world. Traditionally, they were prepared from September to January, but they are now available all year round. Mantecado is a name for a variety of Spanish shortbreads that includes the polvorón. The B-52 cocktail is a layered shot composed of coffee liqueur (Kahlúa), Irish cream (Baileys Irish Cream), and Grand Marnier (in later versions replaced with triple sec or Cointreau). When prepared properly, the ingredients separate into three distinctly visible layers (due to their relative densities). The origins of the B-52 are not well documented, but one claim is that the B-52 was invented by Peter Fich, a head bartender at the Banff Springs Hotel in Alberta, Canada. Fich named all of his new drinks after favorite bands, albums, and songs, and he supposedly named the drink after the band of the same name, not directly after the US B-52 Stratofortress bomber or the beehive hairstyle after which the band was named. One of Fich's first customers for a B-52 owned restaurants in various cities in Alberta, and they liked the drink so much that he put it on the menu, leading to the perception that the B-52 originated at the Keg Steakhouse in Calgary, Alberta in 1977. Coquito is a traditional Christmas drink that originated in Puerto Rico. The coconut-based alcoholic beverage is similar to eggnog, and is sometimes referred to as Puerto Rican Eggnog. The mixed drink is made with Puerto Rican rum, coconut milk, cream of coconut, sweetened condensed milk, vanilla, nutmeg, clove, and cinnamon. Coquito was originally found in Puerto Rico, and drinks similar to coquito are found throughout the Caribbean. The drink was inspired by the British/American Eggnog and the Spanish made their own version of eggnog and combined it with the coconut milk and local rum, creating coquito. The variations are very similar to what they considered the original recipe: milk and sugar. Although this was seen as the original ingredient, Puerto Rico altered it by adding coconut. The recipe has five main ingredients but is not limited to these:

A cosmopolitan, or, informally, a cosmo, is a cocktail made with vodka, Cointreau, cranberry juice, and freshly squeezed or sweetened lime juice. The cosmopolitan is a member of the Gimlet family of cocktails. Though often presented far differently, the cosmopolitan also bears a likeness in composition to the kamikaze shooter. The International Bartenders Association recipe is based on citron vodka, lemon-flavored vodka. The use of citrus-flavored vodka as the basis for this cocktail appears to have been widely popularized in the mid-1990s by cocktail expert Dale DeGroff and is used in the IBA-approved recipe. Many bartenders, however, continue to use a standard unflavored vodka — this alternative would undoubtedly be historically consistent with any of the supposed predecessors of this drink that were popular in Ohio, Provincetown, or Minneapolis during the 1970s, or in San Francisco during the 1980s. Don Q is a Puerto Rican rum, distilled, manufactured, bottled, and distributed by Destilería Serrallés from its corporate facility in Ponce, Puerto Rico. Don Q, "Puerto Rico's best-known rum", is the top-selling rum in Puerto Rico, where over 70% of the rum consumed in the United States is produced. The rum derives its name from Don Quixote, the protagonist in Miguel de Cervantes' classic Spanish novel. The rum is sold internationally, competing against Bacardi for market share. Available in the continental United States since June 2009, Don Q continues to outsell Bacardi in Puerto Rico. The Serrallés family migrated from Catalonia to Puerto Rico in the mid-1830s, and established a sugar cane plantation in the outskirts of Ponce. [citation needed] They were successful in harvesting and refining cane sugar and exporting it to the United States, the United Kingdom and France. The plantation became very prosperous, and virtually became a company town, with its own rail line, workers' housing, transportation fleet, commissary, and private—later public—airport . In Spain, it is made with soaked, ground, and sweetened tiger nuts. In some parts of the Americas it is known as an agua fresca, and the base can be either jicaro (morro), melon seeds, sesame seeds, or white rice, along with spices. The name probably derives from a Latin word for barley, the term hordeata, which in turn comes from hordeum (barley), related to a Mediterranean tradition of grain-based beverages. The Italian and Maltese orzata, the French and English orgeat have the same origin, although the beverages themselves have diverged, and are generally no longer made from barley. A barley drink originated in ancient Egypt, where the Romans got to know it as hordeata. It was brought to the Iberian peninsula in the 8th century, during muslim rule. The main ingredient then changed to tiger nuts, a staple in the area of Valencia, and it is estimated that during the 11th century, it began to spread throughout Hispania (now Spain and Portugal). There are 13th-century records of an horchata-like beverage made near Valencia, where it remains a common drink.

The drink was invented sometime in the 1970s by Norman Jay Hobday, the founder and proprietor of Henry Africa's bar in San Francisco, California. Variations of the drink exist, such as blueberry and raspberry lemon drops, and some recipes that call for simple syrup. It is served at some bars and restaurants in the United States, and in such establishments in other areas of the world.

Most bars serve margaritas in a stepped-diameter variant of a cocktail glass or champagne coupe called a margarita glass. The margarita is one of the world's most popular cocktails and the most popular tequila-based cocktail. The history of the margarita is shrouded in mystery and folklore due to its numerous origin stories. According to cocktail historian David Wondrich, the margarita is related to the brandy daisy (margarita is Spanish for "daisy"), remade with tequila instead of brandy. (Daisies are a family of cocktails that include a base spirit, liqueur, and citrus. A sidecar and gin daisy are other related drinks.) There is an account from 1936 of Iowa newspaper editor James Graham finding such a cocktail in Tijuana, years before any of the other margarita "creation myths". The Cafe Royal Cocktail Book, published in the UK in 1937, contains a recipe for a Picador using the same concentrations of tequila, triple sec, and lime juice as a margarita. One of the earliest stories is of the margarita being invented in 1938 by Carlos "Danny" Herrera at his restaurant Rancho La Gloria, halfway between Tijuana and Rosarito, Baja California, created for customer and former Ziegfeld dancer Marjorie King, who was allergic to many spirits, but not to tequila. Recipes usually include other ingredients as well, spices such as aniseed being very common. Mauby was traditionally a fermented beverage made in small batches, but is now predominantly a commercial non-fermented soft drink. Haiti and the Dominican Republic are two of the largest Caribbean exporters of the bark and leaves. Often the drink is fermented using a portion of the previous batch, while sometimes it is consumed unfermented. Mauby is often bought as a pre-made syrup and then mixed with water to the consumer's taste, but many make it themselves at home or purchase it from neighbourhood producers or street sellers. Its taste is initially sweet, somewhat like root beer, but changes to a prolonged, but not astringent bitter aftertaste. To many, it is an acquired taste, and has been known to cause an initial laxative reaction unexpected to many first-time drinkers. In Puerto Rico the drink is also called mavi champán (champagne mauby) because the drink is fermented, causing it to foam. This process is made by mixing an older batch with a new batch. Mauby bark and leaves are boiled with ginger, avocado leaves, brown sugar and other spices. The drink is then placed in a tight sealed bottle and left out in the sun for 6-8 hours. The drink is then placed in a dark cool place left to ferment up to a week. Ginger has a significant role in the fermentation process.

The Compañía Cervecera de Puerto Rico is a large brewery in Puerto Rico. It is located in Mayagüez, Puerto Rico. The company's main brand is Medalla Light. The company was founded on November 2, 1937, by the brothers Valdés Cobián: Alfonso, Sabino and Ramón Valdés Cobián, in Mayagüez, the largest city on the west coast of Puerto Rico. The Valdés brothers were following the example of their father, Don Ramon Valdés, who had founded the Mayagüez Light, Power and Ice Company in 1910. In 1938, their first beer, Cerveza India, was released to the public. The company competed with two other native beer breweries, "Real" and "Cerveceria Corona" (Cerveceria Corona de Puerto Rico "subsequently sold its trademark rights to Cervecería Modelo de México, which then launched Cerveza Corona as Modelo's Corona Extra)." Alfonso, as chairman and president, successfully led his company converting it into Puerto Rico's largest beer brewery and manufacturer of canned and bottled soft drinks. In the late 70s, the brewery was forced to expand its portfolio and produce a lighter beer with less calories than their Cerveza India. Until that time, India was the only alcoholic beverage producing plant in Mayagüez.

A mimosa cocktail consists of champagne and chilled citrus juice, usually orange juice. It is often served in a tall champagne flute at festive occasions such as brunch, weddings, or as part of business or first class service on some passenger railways and airlines. The mixing ratio varies. The cocktail is named after the bright yellow, fragrant flowers of the mimosa Acacia dealbata. The origin of the cocktail is unclear, and was originally called a "champagne orange". Some credit the Paris Ritz's bartender and cocktail writer Frank Meier for making the mimosa cocktail; however, Meier's 1934 book on mixing drinks, which has a special symbol for his inventions, does not use it for the mimosa. The mimosa can be considered as a variant of the cocktail Buck's Fizz, or vice-versa; Buck's Fizz appears to date from 1921. The International Bartenders Association simply says the mimosa is "Also known as Buck's Fizz". The mimosa became popular in the United States in the 1960s. A news article published in the Sydney Morning Herald wrote about Queen Elizabeth II drinking a mimosa, introduced to her by Earl Mountbatten of Burma after his visit to the south of France. Buck's Fizz is essentially the same cocktail, said to have been invented in 1921 in London. Some sources draw a distinction, saying the Buck's Fizz specifically uses twice as much champagne as orange juice while the mimosa should use equal proportions, that a Buck's Fizz should be served without ice and a mimosa should include ice, or that a Buck's Fizz should be served in a flute or coupe and a mimosa should be served in an ordinary wine glass. However, some sources give instructions for making mimosas that clearly do not fit these characterizations.

Mojito is a traditional Cuban punch. The cocktail often consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, soda water, and mint. Its combination of sweetness, citrus, and herbaceous mint flavors is intended to complement the rum, and has made the mojito a popular summer drink. When preparing a mojito, fresh lime juice is added to sugar (or to simple syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded. Then rum is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. Finally, the drink is topped with crushed ice and sparkling soda water. Mint sprigs or lime wedges are used to garnish the glass.

Pitorro is a distilled spirit from Puerto Rico, referred to as "moonshine rum". Pitorro is usually much stronger than commercial rum. At times its alcohol content surpasses 100 proof. It is often homemade and a part of traditional Puerto Rican holiday celebrations, and used in Coquito.[citation needed] Other terms are pitrinche or pitriche, cañita , lágrima de monte (mountain tears), and lágrima de mangle ("mangrove's tears" since many artisan distillers refine their product near coastal mangroves, to conceal it from police). Cañita is a common term so popular that at least two legal brands of rum have used the name, including the current brand, "Cañita Cura'o". Pitorro is an integral part of Puerto Rican culture, and musical odes to it or its production (such as the plena "Los Contrabandistas", popularized by Puerto Rican singer Daniel Santos) are part of local folklore. Pitorro is usually much stronger than commercial rum. At times its alcohol content surpasses the common 80- or 90-proof (40% or 45% alcohol per volume) mark. Some raids have led to confiscation of rum that is up to 80% alcohol per volume (160 proof). Recipes abound, but common practices include "curing" the distilled product by burying jugs of pitorro in the ground, as well as placing grapes, prunes, raisins, dates, mango, grapefruit, pineapple, coconut and other fruits in them.

Coffee drinks are made by brewing water with ground coffee beans. When put under the pressure of an espresso machine, the coffee is termed espresso, while slow-brewed coffees are generally termed brewed coffee. The term punch refers to a wide assortment of drinks, both non-alcoholic and alcoholic, generally containing fruits or fruit juice. The drink was introduced from the Indian subcontinent to England by employees of the East India Company in the late 17th century. Punch is usually served at parties in large, wide bowls, known as punch bowls. In the United States, federal regulations provide the word "punch" to describe commercial beverage products that do not contain fruit or fruit juice. The term is used to label artificially flavored beverages, with or without natural flavorings, which do not contain fruit juice or concentrate in significant proportions. Thus a product labeled as "fruit punch" may contain no fruit ingredients at all. The word is commonly said to come from from Hindi पाँच , meaning "five", as the drink was frequently made with five ingredients: alcohol, sugar, juice from either a lime or a lemon, water, and spices, or milk, curd, butter, honey, sugar. That etymology traces to John Fryer's A New Account of East India and Persia, in Eight Letters (1698), but there is no evidence of a drink called pāñch in India, or elsewhere, before the English word. Besides, the English word is now known to have been in use before the British became regulars to India.

Ron del Barrilito is the oldest Puerto Rican rum brand still in production. Since 1880, it has been made by the Fernández family at Hacienda Santa Ana in Bayamón, Puerto Rico. Hacienda Santa Ana's origins date back to Fernando Fernández. A native of Santander, Spain, Fernández came to Puerto Rico in 1787. He was bestowed large tracts of farmland located along Puerto Rico's northern coast, mostly used for growing sugarcane, one of the island's largest crops in that era. Fernando Fernández had two sons: José Ramón and Manuel. José Ramón, the oldest, inherited Hacienda La Esperanza in the town of Manatí, Puerto Rico. Manuel, the youngest, was left in charge of Hacienda Santa Ana in Bayamón.
