Ren shou

Chinese "ren shou" (灌蛋), also known as stuffed egg yolks, is a traditional snack popular in Shunchang County, Nanping City, Fujian Province. It consists of hard-boiled egg yolks that are carefully removed and then filled with a mixture of seasoned ingredients such as ground pork, shrimp, and sometimes mushrooms. The mixture is carefully packed back into the egg whites or shaped into a ball, and the dish is often steamed or lightly fried.
