Mafé: West African Beef and Vegetable Stew - The World's Food

Senegalese peanut stew with beef, vegetables and seasoned with authentic Maggi cubes, the secret to this delicious, satisfying meal

Ingredients

2   pounds beef chuck, cut into 2-inch pieces
1   onion, cut into large chunks
6   Roma tomatoes, cut into large chunks
2   tablespoons tomato paste
   liters water
4   tablespoons creamy peanut butter
1   sweet potato, cut into large chunks
2   potatoes, cut into large chunks
1   eggplant, cut into large chunks
3   carrots, cut into large chunks
1   dried red chili pepper
2   bay leaves
4   Maggi cubes
4   tablespoons oil, or as needed
   tablespoons salt, or to taste
2   teaspoons ground black pepper, or to taste

Preparation

Step 1
Heat a Dutch oven over medium heat, add 2 Tablespoons oil and brown beef on all sides in batches, then set aside

Step 2
Add onions and cook until slightly browned and transparent

Step 3
Add tomatoes and tomato paste and stir until tomato paste is incorporated, cook 3 minutes

Step 4
Add browned beef chunks back to Dutch oven and add enough water to cover the vegetables and beef

Step 5
Add peanut butter and stir until incorporated

Step 6
Add sweet potato, potatoes, eggplant, carrots, red chili pepper, bay leaves and Maggi cubes

Step 7
Bring to a gentle simmer and cook uncovered until sauce thickens, about 2 hours, stirring occasionally

Step 8
Season with salt and pepper to taste just prior to serving

Step 9
Serve maafe on top of steamed rice
