Biscuits and Gravy - The World's Food

Buttermilk biscuits topped with sausage gravy, a stick-to-your-ribs classic that satisfies even the hungriest of appetites

Ingredients

4   cups all-purpose flour
2   teaspoons salt
1   teaspoon baking soda
1   teaspoon cream of tartar
4   teaspoons baking powder
1   cup butter (2 sticks), grated and chilled
2   cups buttermilk
16   ounce (1 pound) pork sausage
4   tablespoons flour, or as needed
3   cups milk
2   teaspoons salt, or to taste
1/2   teaspoon pepper, or to taste

Preparation

Biscuits
Step 1
Preheat oven to 450 degrees F

Step 2
Using a stand mixer, mix flour, salt, baking soda, cream of tartar and baking powder

Step 3
Mix in buttermilk, adjust with a little buttermilk if too dry

Step 4
Cut butter into flour mixture. Do not overmix

Step 5
On a floured surface, roll dough until 1 inch thick

Step 6
Cut dough into round biscuits and place on an ungreased baking sheet

Step 7
Bake for 12-15 minutes, or until tops are golden


Sausage Gravy
Step 1
Brown sausage in a large skillet or Dutch oven over medium-high heat

Step 2
Remove sausage to a separate bowl while keeping the fat drippings in the skillet

Step 3
Add flour to the fat and whisk to make a roux, cook over medium heat for 2-3 minutes

Step 4
Add milk to the roux very slowly while continuously whisking to prevent lumps.  Take your time.

Step 5
Simmer over medium heat until thickened, about 5 minutes

Step 6
Add sausage back to gravy, stir and heat for 2 minutes

Step 7
Adjust seasonings with salt and pepper, if desired

Step 8
Split a biscuit in half then ladle gravy on top
