One 19th century source suggests that muffin may be related to the Greek bread maphula, a 'cake baked on a hearth or griddle', or from Old French mou-pain 'soft bread', which may have been altered into mouffin. The word is first found in print in 1703, spelled moofin; it is of uncertain origin but possibly derived from the Low German Muffen, the plural of Muffe, meaning 'small cake', or possibly with some connection to the Old French moufflet meaning 'soft', as said of bread. The expression muffin-man, meaning a street seller of muffins, is attested in a 1754 poem, which includes the line: "Hark! the shrill Muffin-Man his Carol plies."

The pronunciation of the word within the English-speaking world varies, with some pronouncing it /skɒn/ (rhymes with "gone"), and others /skoʊn/ (rhymes with "tone"). The dominant pronunciation differs by area. Pronunciation rhyming with "tone" is strongest in the English Midlands and Ireland, though it seems to have less prominent patches in Cornwall and Essex. The bottom crust may be baked separately ("blind") to prevent it from getting soggy. Tarte Tatin is baked with the crust on top, but served with it on the bottom. Originating in the 14th century in England, apple pie recipes are now a standard part of cuisines in many countries where apples grow. Apple pies are an unofficial symbol of the United States and one of its signature comfort foods.

Apple cider is the name used in the United States and Canada for an unfiltered, unsweetened, non-alcoholic beverage made from apples. Though typically referred to simply as "cider" in North America, it is not to be confused with the alcoholic beverage known as cider in other places, which is called "hard cider" in the US. Outside of the United States and Canada, it is commonly referred to as cloudy apple juice to distinguish it from clearer, filtered apple juice and hard cider. Fresh liquid cider is extracted from the whole apple itself, including the apple core, trimmings from apples, and oddly sized or shaped “imperfect” apples, or apple culls. Fresh cider is opaque due to fine apple particles in suspension and generally tangier than commercially cooked and filtered apple juice, but this depends somewhat on the variety of apples used. Cider is sometimes pasteurized or exposed to UV light to kill bacteria and extend its shelf life, but traditional raw untreated cider is still common. Some companies have begun adding preservatives and boiling cider, so that it can be shelf stable and stored without refrigeration. In either form, apple cider is seasonally produced in autumn. It is traditionally served on Halloween, Thanksgiving, Christmas, and New Year's Eve, sometimes heated and mulled. Although the term "cider" is used for the fermented alcoholic drink in much of the world, it often refers to fresh "apple cider" in North America; hard cider is used there instead when referring to the alcoholic drink. In much of the U.S. and Canada, the fresh variety is often referred to as "apple cider" with "cider" alone referring to the alcoholic variety.

Yukon Brewing is a trademark owned by the Chilkoot Brewing Co. Ltd brewery in Whitehorse, Yukon, Canada. When entering the American market, Chilkoot Brewing Company Ltd. faced trademark issues and decided to call itself the Cheechako Brewing Company. In 1999, however, the name changed again to Yukon Brewing Company. In February 2010 the Company portion of the name was dropped. The brewery is now known as Yukon Brewing. In September 2009 Yukon Red, the brewery's Amber Ale was awarded the 2009 Canadian Beer of the Year at the Canadian Brewing Awards, finishing with gold in the Amber Ale category. In 2009 regulatory changes in Yukon where the brewery is based allowed for distilling. Yukon Brewing distilled and barreled what became a single malt whiskey. The whiskey is marketed under the brand name Two Brewers.

Yukon Shine Distillery, located in Whitehorse, Yukon, Canada, produces craft spirits like Yukon Winter Vodka and AuraGin, using locally sourced ingredients such as Yukon Gold potatoes. The distillery emphasizes small-batch production and unique flavor profiles, gaining recognition after appearing on the show "Dragons' Den."

A bison is a large bovine in the genus Bison (Greek: "wild ox" (bison)) within the tribe Bovini. Two extant and numerous extinct species are recognised. Of the two surviving species, the American bison, B. bison, found only in North America, is the more numerous. Although colloquially referred to as a buffalo in the United States and Canada, it is only distantly related to the true buffalo. The North American species is composed of two subspecies, the Plains bison, B. b. bison, and the generally more northern wood bison, B. b. athabascae. A third subspecies, the eastern bison (B. b. pennsylvanicus) is no longer considered a valid taxon, being a junior synonym of B. b. bison. Historical references to "woods bison" or "wood bison" from the Eastern United States refer to this synonym animal (and to their eastern woodland habitat), not to B. b. athabascae, which was not found in the region. Its European kind B. bonasus or wisent —also 'zubr' or colloquially 'European buffalo'— is found in Europe and the Caucasus, reintroduced after being extinct in the wild.

The reindeer or caribou[a] is a species of deer with circumpolar distribution, native to Arctic, subarctic, tundra, boreal, and mountainous regions of Northern Europe, Siberia, and North America. It is the only representative of the genus Rangifer. More recent studies suggest the splitting of reindeer and caribou into six distinct species over their range. Reindeer occur in both migratory and sedentary populations, and their herd sizes vary greatly in different regions. The tundra subspecies are adapted for extreme cold, and some are adapted for long-distance migration.

Ovis dalli, also known as the Dall sheep or thinhorn sheep, is a species of wild sheep native to northwestern North America. Ovis dalli contains two subspecies: Ovis dalli dalli and Ovis dalli stonei. O. dalli live in mountainous alpine habitats distributed across northwestern British Columbia, the Yukon, Northwest Territories and Alaska. They browse a variety of plants, such as grasses, sedges and even shrubs, such as willow, during different times of the year. They also acquire minerals to supplement their diet from mineral licks. Like other Ovis species, the rams engage in dominance contests with their horns. The specific name dalli, is derived from William Healey Dall , an American naturalist. The common name, Dall's sheep or Dall sheep is often used to refer to the nominate subspecies, O. d. dalli. The other subspecies, O. d. stonei, is called the Stone sheep.

The elk or wapiti, is the second largest species within the deer family, Cervidae, and one of the largest terrestrial mammals in its native range of North America and Central and East Asia. The word "elk" originally referred to the European variety of the moose, Alces alces, but was transferred to Cervus canadensis by North American colonists. The name "wapiti" is derived from a Shawnee and Cree word meaning "white rump", after the distinctive light fur around the tail region which the animals may fluff-up or raise to signal their agitation or distress to one another, when fleeing perceived threats, or among males courting females and sparring for dominance. A similar trait is seen in other artiodactyl species, like the bighorn sheep, pronghorn and the white-tailed deer, to varying degrees.

Fettuccine Alfredo is a pasta dish consisting of fettuccine tossed with butter and Parmesan cheese, which melt and emulsify to form a rich cheese sauce coating the pasta. Originating in Rome in the early 20th century, the recipe is now popular in the United States and other countries. Outside of Italy, cream is sometimes used to thicken the sauce, and ingredients such as chicken, shrimp, salmon or broccoli may also be added when it is served as a main course. The dish is named after Alfredo Di Lelio, a Roman restaurateur who is credited with its invention and popularisation. Di Lelio's tableside service was an integral part of the recipe's success. Fettuccine Alfredo is a variant of standard Italian fettuccine al burro ('fettuccine with butter') or pasta burro e parmigiano ('pasta with butter and Parmesan cheese'). It is a kind of pasta in bianco, that is, without added sauce. Italian recipes do not include cream and are not topped with other ingredients, nor is the dish generally called "Alfredo" in Italy.

Fish and chips is a hot dish consisting of battered and fried fish, served with chips. Often considered the national dish of the United Kingdom, fish and chips originated in England in the 19th century. Today, the dish is a common takeaway food in numerous other countries, particularly English-speaking and Commonwealth nations. Fish and chip shops first appeared in the UK in the 1860s, and by 1910 there were over 25,000 of them across the UK. This increased to over 35,000 by the 1930s, but eventually decreased to approximately 10,000 by 2009. The British government safeguarded the supply of fish and chips during the First World War and again in the Second World War. The Arctic grayling is a species of freshwater fish in the salmon family Salmonidae. T. arcticus is widespread throughout the Arctic and Pacific drainages in Canada, Alaska, and Siberia, as well as the upper Missouri River drainage in Montana. In the U.S. state of Arizona, an introduced population is found in the Lee Valley and other lakes in the White Mountains. They were also stocked at Toppings Lake by the Teton Range and in lakes in the high Uinta Mountains in Utah, as well as alpine lakes of the Boulder Mountains (Idaho) in central Idaho. The scientific name of the Arctic grayling is Thymallus arcticus. It was named in 1776 by German zoologist Peter Simon Pallas from specimens collected in Russia. The name of the genus Thymallus first given to grayling (T. thymallus) described in the 1758 edition of Systema Naturae by Swedish zoologist Carl Linnaeus originates from the faint smell of the herb thyme, which emanates from the flesh.

Halibut is the common name for three species of flatfish in the family of right-eye flounders. In some regions, and less commonly, other species of large flatfish are also referred to as halibut. The word is derived from haly and butte (flat fish), for its popularity on Catholic holy days. Halibut are demersal fish and are highly regarded as a food fish as well as a sport fish.

A hamburger, or simply a burger, is a dish consisting of fillings—usually a patty of ground meat, typically beef—placed inside a sliced bun or bread roll. The patties are often served with cheese, lettuce, tomato, onion, pickles, bacon, or chilis with condiments such as ketchup, mustard, mayonnaise, relish or a "special sauce", often a variation of Thousand Island dressing, and are frequently placed on sesame seed buns. A hamburger patty topped with cheese is called a cheeseburger. Under some definitions, and in some cultures, a burger is considered a sandwich. Hamburgers are typically associated with fast-food restaurants and diners but are also sold at other restaurants, including high-end establishments. There are many international and regional variations of hamburgers. Some of the largest multinational fast-food chains feature burgers as one of their core products: McDonald's Big Mac and Burger King's Whopper have become global icons of American culture.

King crabs are decapod crustaceans of the family Lithodidae[b] that are chiefly found in deep waters and are adapted to cold environments. They are composed of two subfamilies: Lithodinae, which tend to inhabit deep waters, are globally distributed, and comprise the majority of the family's species diversity; and Hapalogastrinae, which are endemic to the North Pacific and inhabit exclusively shallow waters. King crabs superficially resemble true crabs but are generally understood to be closest to the pagurid hermit crabs. This placement of king crabs among the hermit crabs is supported by several anatomical peculiarities which are present only in king crabs and hermit crabs, making them a prominent example of carcinisation among decapods. Several species of king crabs, especially in Alaskan and southern South American waters, are targeted by commercial fisheries and have been subject to overfishing. The phylogeny of king crabs as hermit crabs who underwent secondary calcification and left their shell has been suspected since the late 1800s. They are believed to have originated during the Early Miocene in shallow North Pacific waters, where most king crab genera – including all Hapalogastrinae – are distributed and where they exhibit a high amount of morphological diversity.

The moose or elk (pl.: 'elk' or 'elks'; used in Eurasia) (Alces alces) is the world's tallest, largest and heaviest extant species of deer and the only species in the genus Alces. It is also the tallest, and the second-largest, land animal in North America, falling short only of the American bison in body mass. Moose inhabit the circumpolar boreal forests or temperate broadleaf and mixed forests of the Northern Hemisphere, thriving in cooler, temperate areas as well as subarctic climates. Hunting shaped the relationship between moose and humans, both in Eurasia and North America. Prior to the colonial era (around 1600–1700 CE), moose were one of many valuable sources of sustenance for certain tribal groups and First Nations. Hunting and habitat loss have reduced the moose's range; this fragmentation has led to sightings of "urban moose" in some areas.

Mountain goats in the Yukon are a species known for their impressive climbing abilities and are typically found in high-altitude, rugged mountainous areas. They are not true goats but belong to the genus Oreamnos and are closely related to other bovids like antelopes and sheep.

Muktuk is a traditional food of Inuit and other circumpolar peoples, consisting of whale skin and blubber. A part of Inuit cuisine, it is most often made from the bowhead whale, although the beluga and the narwhal are also used. It is usually consumed raw, but can also be eaten frozen, cooked, or pickled. In Greenland, muktuk (mattak) is sold commercially to fish factories, and in Canada (muktaaq) to other communities.

The muskox [a][b] is a hoofed mammal of the family Bovidae. Native to the Arctic, it is noted for its thick coat and for the strong odor emitted by males during the seasonal rut, from which its name derives. This musky odor has the effect of attracting females during mating season. Its Inuktitut name "umingmak" translates to "the bearded one". Its Woods Cree names "mâthi-môs" and "mâthi-mostos" translate to "ugly moose" and "ugly bison", respectively. In historic times, muskoxen primarily lived in Greenland and the Canadian Arctic of the Northwest Territories and Nunavut. They were formerly present in Eurasia, with their youngest natural records in the region dating to around 2,700 years ago, with reintroduced populations in the American state of Alaska, the Canadian territory of Yukon, and Siberia, and an introduced population in Norway, part of which emigrated to Sweden, where a small population now lives.

Porcupines are large rodents with coats of sharp spines, or quills, that protect them against predation. The term covers two families of animals: the Old World porcupines of the family Hystricidae, and the New World porcupines of the family Erethizontidae. Both families belong to the infraorder Hystricognathi within the profoundly diverse order Rodentia and display superficially similar coats of rigid or semi-rigid quills, which are modified hairs composed of keratin. Despite this, the two groups are distinct from one another and are not closely related to each other within the Hystricognathi. The largest species of porcupine is the third-largest living rodent in the world, after the capybara and beaver. The Old World porcupines live in Italy, Asia (western and southern), and most of Africa. They are large, terrestrial, and strictly nocturnal.

Quiche is a French tart consisting of a pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. A well-known variant is quiche lorraine, which includes lardons or bacon. Quiche may be served hot, warm or cold. The word is first attested in French in 1805, and in 1605 in Lorrain patois. The first English usage — "quiche lorraine" — was recorded in 1925. The further etymology is uncertain, but it may be related to the German Kuchen meaning "cake" or "tart".

Salmon is the common name for several commercially important species of euryhaline ray-finned fish from the genera Salmo and Oncorhynchus of the family Salmonidae, native to tributaries of the North Atlantic (Salmo) and North Pacific (Oncorhynchus) basins. Other closely related fish in the same family include trout, char, grayling, whitefish, lenok and taimen, all coldwater fish of the subarctic and cooler temperate regions with some sporadic endorheic populations in Central Asia.

Smoked salmon is a preparation of salmon, typically a fillet that has been cured and hot or cold smoked. Due to its moderately high price in some regions, smoked salmon is considered a delicacy. Although the term lox is sometimes applied to smoked salmon, they are different products. Smoked salmon is a popular ingredient in canapés, often combined with cream cheese and lemon juice.[citation needed]

Trout is a generic common name for numerous species of carnivorous freshwater ray-finned fishes belonging to the genera Oncorhynchus, Salmo and Salvelinus, all of which are members of the subfamily Salmoninae in the family Salmonidae. The word trout is also used for some similar-shaped but non-salmonid fish, such as the spotted seatrout/speckled trout (Cynoscion nebulosus, which is actually a croaker).

Beta vulgaris is a species of flowering plant in the subfamily Betoideae of the family Amaranthaceae. Economically, it is the most important crop of the large order Caryophyllales. It has several cultivar groups: the sugar beet, of greatest importance to produce table sugar; the root vegetable known as the beetroot or garden beet; the leaf vegetable known as chard or spinach beet or silverbeet; and mangelwurzel, which is a fodder crop. Three subspecies are typically recognised. All cultivars, despite their quite different morphologies, fall into the subspecies Beta vulgaris subsp. vulgaris. The wild ancestor of the cultivated beets is the sea beet (Beta vulgaris subsp. maritima). Beta vulgaris is a herbaceous biennial or, rarely, perennial plant up to 120 centimetres (47 in) in height, rarely 200 cm; cultivated forms are mostly biennial. The roots of cultivated forms are dark red, white, or yellow and moderately to strongly swollen and fleshy (subsp. vulgaris); they are brown, fibrous, sometimes swollen, and woody in the wild subspecies. A Caesar salad is a green salad of romaine lettuce and croutons dressed with lemon juice (or lime juice), olive oil, eggs, Worcestershire sauce, anchovies, garlic, Dijon mustard, Parmesan and black pepper. The salad was created on July 4, 1924, by Caesar Cardini at Caesar's in Tijuana, Mexico, when the kitchen was overwhelmed and short on ingredients. It was originally prepared tableside, and it is still prepared tableside at the original venue.

The carrot is a root vegetable, typically orange in colour, though heirloom variants including purple, black, red, white, and yellow cultivars exist, all of which are domesticated forms of the wild carrot, Daucus carota, native to Europe and Southwestern Asia. The plant probably originated in Iran and was originally cultivated for its leaves and seeds. The carrot is a biennial plant in the umbellifer family, Apiaceae. World production of carrots (combined with turnips) for 2022 was 42 million tonnes, led by China producing 44% of the total.

Coleslaw or cole slaw , also known simply as slaw, is a side dish consisting primarily of finely shredded raw cabbage with a salad dressing or condiment, commonly either vinaigrette or mayonnaise. This dish originated in the Netherlands in the 18th century. Coleslaw prepared with vinaigrette may benefit from the long lifespan granted by pickling. Coleslaw has evolved into various forms globally. The only consistent ingredient in coleslaw is raw cabbage, while other ingredients and dressings vary widely. Some popular variations include adding red cabbage, pepper, shredded carrots, onions, grated cheese, pineapple, pears, or apples, and using dressings like mayonnaise or cream. The term "coleslaw" arose in the 18th century as an anglicisation of the Dutch term koolsla ("kool" in Dutch sounds like "cole") meaning "cabbage salad". The "cole" part of the word ultimately derives from the Latin caulis, meaning cabbage.

The Eskimo potato is a type of edible plant that grows in the northern areas of Canada and Alaska. The plant's scientific name is variously given as either Claytonia tuberosa or Hedysarum alpinum (Inuit: mashu). The species has a range in the northern area of North America, has edible roots, and has been documented to have been used as a food source by Inuit. Because of its nutritional qualities, the eskimo potato is one of many edible foods listed in survival guides, such as the US Army's field manual Survival, and people still use it to subsist in nature. Christopher McCandless used the plant as a food source in the Alaska wilderness.

Hummus , is a Middle Eastern dip, spread, or savory dish made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic. The standard garnish in the Middle East includes olive oil, a few whole chickpeas, parsley, and paprika. The earliest mention of hummus was in a 13th century cookbook attributed to the historian Ibn al-Adim from Aleppo in present-day Syria.

Morchella, the true morels, is a genus of edible sac fungi closely related to anatomically simpler cup fungi in the order Pezizales . These distinctive fungi have a honeycomb appearance due to the network of ridges with pits composing their caps. Typified by Morchella esculenta in 1794, the genus has been the source of considerable taxonomical controversy throughout the years, mostly with regard to the number of species involved, with some mycologists recognising as few as three species and others over thirty. Current molecular phylogenetics suggest there might be over seventy species of Morchella worldwide, most of them exhibiting high continental endemism and provincialism.

Potato salad is a salad dish made from boiled potatoes, usually containing a dressing and a variety of other ingredients such as boiled eggs and raw vegetables. It is usually served as a side. Potato salad is found in several countries in Europe. The German Kartoffelsalat is one of the most famous that spread largely throughout Europe, North America, and later Asia. American potato salad most likely originated from recipes brought to the U.S. by way of German and other European immigrants during the nineteenth century.

The raspberry is the edible fruit of several plant species in the genus Rubus of the rose family, most of which are in the subgenus Idaeobatus. The name also applies to these plants themselves. Raspberries are perennial with woody stems. World production of raspberries in 2022 was 947,852 tonnes, led by Russia with 22% of the total. Raspberries are cultivated across northern Europe and North America and are consumed in various ways, including as whole fruit and in preserves, cakes, ice cream, and liqueurs. Raspberries are a rich source of vitamin C, manganese, and dietary fiber.

Gratin is a culinary technique in which a dish is topped with a browned crust, often using breadcrumbs, grated cheese, egg or cheese. The term may be applied to any dish made using this method such as Potato Bake. Gratin is usually prepared in a shallow dish of some kind. A gratin is baked or cooked under an overhead grill or broiler to form a golden crust on top and is often served in its baking dish. A gratin dish is a shallow oven-proof container that is commonly used to prepare gratins and similar dishes. The etymology of gratin is from the French language words gratter, meaning "to scrape" (from having to scrape the food out of the dish it was cooked in). The technique predates the current name, which did not appear in English until 1846 (OED, s.v. "gratin").

A Scotch egg is a boiled egg wrapped in sausage meat, coated in breadcrumbs and baked or deep-fried. Various origin stories exist. The Oxford Companion to Food gives the first instance of the name as of 1809, in an edition of Maria Rundell's A New System of Domestic Cookery. They did not, at that time, have a breadcrumb layer, although by 1861 Isabella Beeton suggested this as an option. According to the Oxford Companion to Food, food historian Annette Hope speculated in 1987 that the inspiration may have been Indian koftas such as the Mughlai dish called nargisi kofta , in which a boiled egg is encased in a seasoned ground-meat mixture and then fried. Other claims include the item having been invented at Fortnum & Mason at Piccadilly in 1738. According to Culinary Delights of Yorkshire, they originated in Whitby, Yorkshire, England, in the 19th century, and were originally covered in fish paste rather than sausage meat. They were supposedly named after William J. Scott & Sons, a well-known eatery which sold them.

Sourdough or sourdough bread is a bread made by allowing the dough to ferment using naturally occurring lactobacillaceae and yeast before baking. The fermentation process produces lactic acid, which gives the bread a sour taste and improves its keeping-qualities. Sourdough is one of the most ancient forms of bread, and it was the standard method of breadmaking for most of human history. It was replaced by barm during the Middle Ages, which was then replaced by industrially produced baker's yeast in the late 19th and early 20th centuries. In the Encyclopedia of Food Microbiology, Michael Gaenzle writes: "One of the oldest sourdough breads dates from 3700 BCE and was excavated in Switzerland, but the origin of sourdough fermentation likely relates to the origin of agriculture in the Fertile Crescent and Egypt several thousand years earlier", and "Bread production relied on the use of sourdough as a leavening agent for most of human history; the use of baker's yeast as a leavening agent dates back less than 150 years". Sourdough remained the usual form of leavening down into the European Middle Ages until being replaced by barm from the beer brewing process, and after 1871 by purpose-cultured yeast.
