Maple syrup is a sweet syrup made from the sap of maple trees. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup. Maple syrup was first made by the Indigenous peoples of Northeastern North America. The practice was adopted by European settlers, who gradually changed production methods. Technological improvements in the 1970s further refined syrup processing. Almost all of the world's maple syrup is produced in Canada and the United States.

An apple dumpling is a baked or boiled pastry-wrapped apple. To prepare apple dumplings, apples are peeled, cored and sometimes quartered and placed on a portion of dough. The hole from the core may be filled with cinnamon, butter and sugar and sometimes dried fruit such as raisins, sultanas, or currants. The dough is folded over the apples and sealed. Sometimes a spiced sauce is poured over the dumplings which are then baked until tender; the sugar and butter create a sweet sauce. Apple dumplings can be served hot, cold, or room temperature for breakfast, dessert, or as a main dish. Boiled apple dumplings are among the earliest of fruit puddings.: 65  They were eaten "at all social levels". In 1726 Nicholas Amhurst complained about apple dumplings at Oxford, saying "nothing can be expected from only rot-gut small beer, and heavy apple-dumplings, but stupidity, sleepiness, and indolence.": 75  Two recipes for apple dumplings were published in Hannah Glasse's 1747 cookbook. In 1749–1750, when botanist Pehr Kalm traveled from New Jersey to Quebec, he reported having apple dumplings at every meal.: 75  In 1754 English agriculturalist William Ellis called them one of the most common foods among farmers, along with bacon and pickled pork. A print called Lesson in apple dumplings or Learning to make apple dumplings, variously attributed to British caricaturists James Gillray in 1792 or Richard Newton in 1797, shows a woman making apple dumplings, watched by a man, possibly King George III. The 1801 domestic encyclopedia Oeconomische Encyclopädie oder Allgemeines System der Land-, Haus- und Staats-Wirthschaft includes instructions for making Apfelklöße, "small apple dumplings." In 1810 English caricaturist Thomas Rowlandson created a colored etching called Puff Paste which shows a footman and cook cuddling while the cook makes apple dumplings. In 1838 American physician William Alcott in his book of advice for young wives The Young House-keeper: Or, Thoughts on Food and Cookery said that "apple dumplings are not very objectionable, except for the crust" as long as no spices were added, but goes on to say, "But why should we have the apple dumpling at all? Few would prepare it, or eat it after it was prepared, were it not for the crust, and above all, for the butter, the sauce, or the sugar added to it; but all of these are objectionable." American cookbook author Eliza Leslie included a recipe for baked apple dumplings in the 1851 edition of her cookbook, in a section called "New Receipts.": 76  In 1870 an apple dumpling dinner was given by the Bethel A.M.E. church in San Francisco. In 1879 Mark Twain included baked apple dumplings on a list of American foods "unmatched by European hotel cuisine".: 76  In 1946 George Orwell was commissioned to write an essay on British Cuisine for an overseas audience, later rejected by the British Council "amid anxiety about postwar austerity", and called out boiled apple dumplings as an example of the "greatest glories of British cookery."

Blueberry cake is a delicious dessert that typically features fresh or frozen blueberries mixed into a moist cake batter. It can be made in various styles, such as a simple cake, a breakfast cake, or even a lemon blueberry cake, often topped with a glaze or powdered sugar.

Cobbler is a dessert consisting of a fruit filling poured into a large baking dish and covered with a batter, biscuit, or dumpling (in the United Kingdom) before being baked. Cobbler is part of the cuisine of the United Kingdom and United States, and is similar to a crumble or a crisp. However, traditional cobbler differs from both of these by the presence of a leavening agent such as baking powder or baking soda. Cobblers made in this way can be viewed as a hybrid of pie and cake. Some cobbler recipes, especially in the American South, resemble a thick-crusted, deep-dish pie with both a top and bottom crust that lack leavening and are less cake-like. Cobblers originated in the British American colonies. English settlers were unable to make traditional suet puddings due to lack of suitable ingredients and cooking equipment, so instead covered a stewed filling with a layer of uncooked plain biscuits, scone batter or dumplings, fitted together. The origin of the name cobbler, recorded from 1859, is uncertain: it may be related to the archaic word cobeler, meaning "wooden bowl", or the term may be due to the topping having the visual appearance of a 'cobbled' stone pathway. The verb cobble means to assemble from available parts, which can be used to describe using scraps of pie crust or leftover scone or biscuit to combine with whatever filling or fruit was readily available.[citation needed] Note that crisp and crumble differ from the cobbler in that the former's top layers may also include rolled oats made with oatmeal.

A date square is a Canadian dessert or bar cookie made of cooked dates with an oatmeal crumb topping. In the western provinces and states it is known as matrimonial cake. In Eastern Canada it can also be known as date crumbles. It is often found in coffee shops as a sweet snack food. Sometimes nuts are added to the base layer or crumb topping, or other alterations. There can also be candied peel added to the date stuffing for a contrasting texture. The date square is known as a traditional dish of Newfoundland.

Figgy duff is a traditional bag pudding from the province of Newfoundland and Labrador most commonly served as a part of a Jiggs dinner. It is sometimes called a raisin duff. The word 'Figgy' is an old Cornish term for raisin; perhaps indicating the origin of the settlers who brought this dish to the area. It is very similar to the Scottish clootie dumpling. One traditional recipe lists the ingredients as breadcrumbs, raisins, brown sugar, molasses, butter, flour, and spices. These are mixed and put in a pudding bag, wrapped in cheesecloth, or stuffed into an empty can and then boiled, usually along with the cooking vegetables of the Jiggs dinner.

Maple sugar is a traditional sweetener in Canada and the northeastern United States, prepared from the sap of the maple tree . Three species of maple trees in the genus Acer are predominantly used to produce maple sugar: the sugar maple (A. saccharum), the black maple (A. nigrum), and the red maple (A. rubrum),[full citation needed] because of the high sugar content (roughly two to five percent) in the sap of these species.[full citation needed] The black maple is included as a subspecies or variety in a more broadly viewed concept of A. saccharum, the sugar maple, by some botanists. Of these, the red maple has a shorter season because it buds earlier than sugar and black maples, which alters the flavor of the sap. A few other species of maple are also sometimes used as sources of sap for producing maple sugar, including the box elder (or Manitoba maple, A. negundo), the silver maple (A. saccharinum), and the bigleaf maple (A. macrophyllum). Similar sugars may also be produced from birch or palm trees, among other sources.

A mince pie is a sweet pie of English origin filled with mincemeat, being a mixture of fruit, spices and suet.[a] The pies are traditionally served during the Christmas season in much of the English-speaking world. Its ingredients are traceable to the 13th century, when returning European crusaders brought with them Middle Eastern recipes containing meats, fruits, and spices; these contained the Christian symbolism of representing the gifts delivered to Jesus by the Biblical Magi. Mince pies, at Christmas time, were traditionally shaped in an oblong shape, to resemble a manger and were often topped with a depiction of the Christ Child. The early mince pie was known by several names, including "mutton pie", "shrid pie" and "Christmas pie". Typically, its ingredients were a mixture of minced meat, suet, a range of fruits, and spices, such as cinnamon, cloves, and nutmeg. Served around Christmas, the savoury Christmas pie (as it became known) was associated with supposed Catholic "idolatry", and during the English Civil War was frowned on by the Puritan authorities. Nevertheless, the tradition of eating Christmas pie in December continued through to the Victorian era, although by then its recipe had become sweeter and its size markedly reduced from its once large oblong shape. Today, the mince pie, usually made without meat (but often including suet or other animal fat), remains a popular seasonal treat enjoyed by many across the United Kingdom and Ireland. The ingredients for the modern mince pie can be traced to the return of European crusaders from the Holy Land. Middle Eastern methods of cooking, which sometimes combined meats, fruits and spices, were popular at the time. Pies were created from such mixtures of sweet and savoury foods; in Tudor England, shrid pies (as they were known then) were formed from shredded meat, suet and dried fruit. The addition of spices such as cinnamon, cloves and nutmeg was, according to the English antiquary John Timbs, "in token of the offerings of the Eastern Magi." Several authors, including Timbs, viewed the pie as being derived from an old Roman custom practised during Saturnalia, where Roman fathers in the Vatican were presented with sweetmeats. Early pies were much larger than those consumed today, and oblong shaped; the jurist John Selden presumed that "the coffin of our Christmas-Pies, in shape long, is in Imitation of the Cratch [Jesus's crib]", although writer T. F. Thistleton-Dyer thought Selden's explanation unlikely, as "in old English cookery books the crust of a pie is generally called 'the coffin'."

Molasses cookies are soft and chewy cookies made primarily with molasses, sugar, butter, and spices like ginger and cinnamon. They are often enjoyed during the holidays and are known for their rich, sweet flavor and crackly tops.

An oatcake is a type of flatbread similar to a cracker or biscuit, or in some versions takes the form of a pancake. They are prepared with oatmeal as the primary ingredient, and sometimes include plain or wholemeal flour as well. Oatcakes are cooked on a griddle or baked in an oven. Oatcakes have been documented as existing in Caledonia (subsequently Scotland after the 9th century) since at least the time of the Roman conquest of Britain in AD 43, and likely before then.[unreliable source?] Oatcakes have also been described as being the "mainstay of Scottish breads for centuries".[unreliable source?] Jean Le Bel, around AD 1357–1360 describes the Beguine nuns making "little pancakes rather like communion wafers". This is thought to be an early description of a Scottish oatcake.

Alexander Keith's is a brewery in Halifax, Nova Scotia, Canada. It is part of Anheuser-Busch InBev, a holdings company based in Leuven, Belgium, which owns over 400 beer brands globally. The brewery was founded in 1820 by Alexander Keith who had immigrated from Scotland three years previously. In 1928, the business was sold to Oland Brewery, which was in turn sold to the Labatt Brewing Company. Following a number of mergers and acquisitions, Labatt's is now part of Anheuser-Busch InBev. Since 1928, parent companies kept the brand alive, and by the 1990s Alexander Keith's India Pale Ale was the most popular beer in Nova Scotia. A number of other styles is also marketed. Although Alexander Keith products were originally produced in the Halifax brewery only for sale in the Maritimes, they are now produced at Anheuser-Busch InBev plants across Canada and America.

Glenora Distillers is a distiller based in Glenville, Nova Scotia, Canada, on Cape Breton Island. Their most prominent product is Glen Breton Rare whisky, made in the Scottish-style[further explanation needed] in that it is a single malt Canadian whisky, not a rye, as is traditional in Canada. The distillery also makes several specialty whiskies and rum, and operates the Glenora Inn & Distillery as a tourist attraction and bed and breakfast. Glen Breton Rare is the signature whisky brand of Glenora Distillers. The 10-year-old whisky is aged in American oak casks. It was featured in the book, 101 Whiskies to Try Before You Die. In November 2000, an 8-year-old version of the Glen Breton Rare was released. By 2018, it offered a wide range of whiskies up to 25 years old. Glenora Distillery produces a single malt whisky aged in oak barrels used for Jost Vineyard's Ortega Ice Wine. The Glen Breton Rare Ice is available in 10, 15 and 17-year-old versions.

Moose milk is a traditional Canadian alcoholic mixed drink with roots in the historic celebratory events of the Canadian Armed Forces. It is also served at the levée, a New Year's Day celebration held all levels of the Canadian governmental administrations to honour the member of the armed forces, from the federal level to municipalities. The term was first recorded used to describe the cocktail in the 1915–1920. The Royal Canadian Navy, Royal Canadian Air Force, and Canadian Army all claim as the originator of the drink. Events or parties held in the Royal Canadian Navy serving moose milk, are known as "moosers". The navy also serves the drink on-board on Sundays while the ships are in port, the phrase "moose is loose" is used to refer to the presence of the drink at various locations .

Red Rose Tea is a beverage company established by Theodore Harding Estabrooks in 1890 in Saint John, New Brunswick, Canada. Estabrooks began his career in trade imports and exports, and soon moved specifically to the tea trade. Realizing the inconsistency in loose leaf servings, Estabrooks began packaging his tea leaves into single-serving bags to ensure quality and consistency in every teacup. Red Rose's older advertisements introduced the catchphrase, "Only in Canada, you say? Pity..." However, as their brand expanded, these slogans became less relevant to their market audience. Instead, they opted for more general slogans such as: "Red Rose Tea is Good Tea." and "A cup'll do you good." The brand is owned by Lipton Teas and Infusions in Canada and by Redco Foods, a subsidiary of Teekanne in the US. Since 2018, Red Rose tea in the US has been produced under license by Harris Tea Company.

Spruce beer is a beverage flavored with the buds, needles, or essence of spruce trees. Spruce beer can refer to either alcoholic or non-alcoholic beverages. A number of flavors are associated with spruce-flavored beverages, ranging from floral, citrus, and fruity, to cola-like flavors to resinous and piney. This diversity in flavor likely comes from the choice of spruce species, the season in which the spruce ingredients are harvested, and the manner of preparation. Using evergreen needles to create beverages was practiced in both Northern Europe and North America. Certain Indigenous peoples of North America used the drink as a cure for scurvy during the winter months when fresh fruits were not available, as the fresh shoots of many spruces and pines are a natural source of vitamin C. It may also have been brewed in Scandinavia prior to European contact with the Americas, but most French and British explorers were ignorant of its use as a treatment for scurvy when they arrived in North America. Jacques Cartier and his explorers were exposed to it as a tea when they arrived in Stadacona in what is now Quebec in 1535. European sailors adopted the practice and subsequently spread it across the world.

Chicken curry or curry/curried chicken is a South Asian dish originating from the Indian subcontinent. It is common in the cuisine of the Indian subcontinent, Caribbean, Southeast Asia, Great Britain, and South Africa. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce, and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

New England clam chowder, occasionally referred to as Boston or Boston-style clam chowder, is a milk or cream-based chowder, and is often of a thicker consistency than other regional styles. It is commonly made with milk, butter, potatoes, salt pork, onion, and clams. Flour or, historically, crushed hard tack may be added as a thickener. New England clam chowder is usually accompanied by oyster crackers. Crackers may be crushed and mixed into the soup for thickener, or used as a garnish.

Corned beef, bully beef, or salted beef in some Commonwealth countries, is a salt-cured brisket of beef. The term comes from the treatment of the meat with large-grained rock salt, also called "corns" of salt. Sometimes, sugar and spices are added to corned beef recipes. Corned beef is featured as an ingredient in many cuisines. Most recipes include nitrates, which convert the natural myoglobin in beef to nitrosomyoglobin, giving it a pink color. Nitrates and nitrites reduce the risk of dangerous botulism during curing by inhibiting the growth of Clostridium botulinum bacteria spores, but have been linked to increased cancer risk in mice. Beef cured without nitrates or nitrites has a gray color, and is sometimes called "New England corned beef".

They are popular comfort foods and can be served as appetizers or main dishes, often enjoyed during special occasions or family gatherings.

Chowder is a thick soup prepared with milk or cream, a roux, and seafood or vegetables. Oyster crackers or saltines may accompany chowders as a side item, and cracker pieces may be dropped atop the dish. Clam chowder from New England is typically made with chopped clams and diced potatoes, in a mixed cream and milk base, often with a small amount of butter. Other common chowders include seafood chowder, which often consists of fish, clams, and other types of shellfish; lamb or veal chowder made with barley; corn chowder, which uses corn instead of clams; various fish chowders; and potato chowder, which is often made with cheese. Fish, corn, and clam chowders are popular in North America, especially Atlantic Canada and New England.

Fricot is a traditional Acadian dish. Fricot is such an important part of Acadian food culture that the call to eat in Acadian French is "Au fricot!" The main ingredients consist of potatoes, onions, and whatever meat was available, cooked in a stew and topped with dumplings. The common meats used were chicken , clams (fricot aux coques), rabbit (fricot au lapin des bois), beef, or pork. When chicken was used, it was traditionally an older chicken, since an egg-laying chicken would have been too precious to cook. This accounts for the long cooking time, as an older chicken would have had tougher meat. In lean times, a meatless fricot would be made. Fricot a la belette was one term for this, which means "weasel stew". The reference being made is that the cook is as sly as a weasel for leaving out the meat. In the opposite vein, Prince Edward Island Acadians use the term fricot a la bazette which means "stupid cook's stew", implying that the meat was forgotten.

Fried clams are clams dipped in milk, floured, and deep-fried. Fried clams are an iconic food, "to New England, what barbecue is to the South". They tend to be served at seaside clam shacks . Clam rolls are fried clams served in a New England–style hot dog bun.[full citation needed] They are usually served with Tartar sauce. The clams are dipped in evaporated milk, then coated with some combination of regular, corn, and pastry flour. The coated clams are fried in canola oil, soybean oil, or lard.

Hodge-podge or hotch potch is a soup or stew, usually based on diced mutton or other meat, with green and root vegetables. It is familiar in different versions in Britain and North America and is particularly associated with Scotland. The Oxford English Dictionary definition is: "A dish made of a mixture of various kinds of meat, vegetables, etc., stewed together" and "esp in Scottish = Hotchpotch – A dish containing a mixture of many ingredients; spec. a thick soup of barley, peas, and other vegetables, and sometimes meat". The word derives from the Anglo-Norman and Middle French hochepot, "a dish containing a mixture of many ingredients, especially a kind of stew made with minced beef or goose and various vegetables". The dish was familiar in medieval times. In The Forme of Cury (c. 1390) a recipe is given for a hotch-potch of goose:[n 1]

Jiggs dinner, also called boiled dinner or cooked dinner, is a traditional meal commonly prepared and eaten on Sundays in Newfoundland. Corned beef and cabbage was the favourite meal of Jiggs, the central character in the popular, long-running comic strip Bringing Up Father by George McManus and Zeke Zekley. The name of the dish is also occasionally rendered as Jigs dinner or Jigg's dinner, and it may be referred to colloquially as JD.[citation needed] The meal most typically consists of salt beef , boiled together with potatoes, carrot, cabbage, turnip, and greens. Pease pudding and figgy duff are cooked in pudding bags immersed in the rich broth that the meat and vegetables create. Condiments are likely to include mustard pickles, pickled beets, cranberry sauce, butter, and a thin gravy made from the cooking broth.

Lobsters are malacostracans of the family Nephropidae or its synonym Homaridae. They have long bodies with muscular tails and live in crevices or burrows on the sea floor. Three of their five pairs of legs have claws, including the first pair, which are usually much larger than the others. Highly prized as seafood, lobsters are economically important and are often one of the most profitable commodities in the coastal areas they populate. Commercially important species include two species of Homarus from the northern Atlantic Ocean and scampi —the Northern Hemisphere genus Nephrops and the Southern Hemisphere genus Metanephrops.[citation needed]

Lobster Newberg is an American seafood dish made from lobster, butter, cream, cognac, sherry and eggs, with a secret ingredient found to be Cayenne pepper. A modern legend with no primary or early sources states that the dish was invented by Ben Wenberg, a sea captain in the fruit trade. He was said to have demonstrated the dish at Delmonico's Restaurant in New York City to the manager, Charles Delmonico, in 1876. After refinements by the chef, Charles Ranhofer, the creation was added to the restaurant's menu as Lobster à la Wenberg and it soon became very popular. The legend says that an argument between Wenberg and Charles Delmonico caused the dish to be removed from the menu. To satisfy patrons’ continued requests for it, the name was rendered in anagram as Lobster à la Newberg or Lobster Newberg. However, as culinary historian Jan Whitaker has written, lobster Newberg is merely the addition of lobster to a French-inspired sauce of a type already common in 1870s American cuisine. No clear process of invention took place. Early mentions of the dish in American periodicals spell it both "Newberg" and "Newburg," without referring to any specific person or location for which it had been named. Among the many surviving Delmonico's menus from the late nineteenth century, none include a dish described as "Lobster Wenberg."

A lobster roll is a North American dish comprising lobster meat served on a grilled hot dog–style bun. The filling may also contain butter, lemon juice, salt, and black pepper, with variants made in some parts of New England replacing the butter with mayonnaise. Other versions may contain diced celery or scallion. Potato chips or French fries are the typical side dishes. According to the "Encyclopedia of American Food and Drink" the lobster roll originated as a hot dish at a restaurant named Perry's in Milford, Connecticut, as early as 1929. Its popularity then spread along he Connecticut coast. In Connecticut, the sandwich served warm is called a "lobster roll"; served cold, a "lobster salad roll."[citation needed] As far back as 1970, chopped lobster meat heated in drawn butter was served on a hot dog bun at roadside stands such as Red's Eats in Maine. Lobster rolls in the U.S. are associated with the state of Maine,[citation needed] but are also commonly available at seafood restaurants in the other New England states and on Eastern Long Island, where lobster fishing is common.

Lobster Thermidor is a French dish of lobster meat cooked in a rich wine sauce, stuffed into a lobster shell and browned. The sauce is often a mixture of egg yolks and brandy , served with an oven-browned cheese crust, typically Gruyère. The sauce originally contained mustard, typically powdered. In January 1891, the play Thermidor by Victorien Sardou opened in the Comédie-Française theatre. The recipe of lobster Thermidor was possibly created at Café de Paris by Leopold Mourier, a former assistant to Auguste Escoffier, or possibly it was created in 1894 at Chez Marie. Another source says it was created at Maison Maire, whose owner Mlle. Paillard sold the restaurant to Mourier. Maison Maire was a Parisian restaurant near the Théâtre de la Porte Saint-Martin. According to that account, Paillard created the name of the recipe due to the play's notoriety. The play was highly controversial and was closed by the authorities, re-opening in March 1896. The lobster Thermidor at Maison Maire was served like homard Américain, which was made with tomatoes, cayenne, and brandy, but with the addition of English mustard. An early London recipe for Homard à l'Américaine referred to à la Thermidor as a version with the addition of English mustard, while an early American recipe for lobster Thermidor left out the tomatoes, cayenne, and mustard and added cream sauce thickened with Béarnaise sauce and a sprinkling of grated cheese. It can be served with Newberg sauce but is differentiated from lobster Newberg by the addition of tomatoes.

Mussel is the common name used for members of several families of bivalve molluscs, from saltwater and freshwater habitats. These groups have in common a shell whose outline is elongated and asymmetrical compared with other edible clams, which are often more or less rounded or oval. The word "mussel" is frequently used to mean the bivalves of the marine family Mytilidae, most of which live on exposed shores in the intertidal zone, attached by means of their strong byssal threads ("beard") to a firm substrate. A few species (in the genus Bathymodiolus) have colonised hydrothermal vents associated with deep ocean ridges.

Rappie pie is a traditional Acadian dish from southwest Nova Scotia, New Brunswick and areas of Prince Edward Island. It is sometimes referred to as rapure pie, râpée, or râpure. Its name is derived from the French patates râpées meaning 'grated potatoes'. It is a casserole-like dish formed by grating potatoes, then squeezing them through cheesecloth to remove some of the water from the potato solids. The removed liquid is replaced by adding hot broth made from chicken, pork or seafood along with meat and onions, and layering additional grated potatoes over the top. Common meat fillings include beef, chicken, or bar clams. It is thought[who?] that rappie pie has its origins in the Acadian Expulsion, among Acadians who lived out their exile in Massachusetts. This opportunity to meet and interact with other immigrant groups would naturally encourage a sharing of cultural recipes. It may have been German or Swiss immigrants who taught the Acadians their technique for using grated potatoes in their recipes, but whoever it was, this proved to be an important tip for those that returned to Nova Scotia and the Maritimes when the expulsion was lifted. When they returned, they found that their fertile land had been given to Loyalist New Englanders lured north by the promise of farmland. The harsh, rocky land that remained was excellent for growing potatoes, if little else, so the Acadians used them to fill out dishes made with what game was available.

Salmon is the common name for several commercially important species of euryhaline ray-finned fish from the genera Salmo and Oncorhynchus of the family Salmonidae, native to tributaries of the North Atlantic (Salmo) and North Pacific (Oncorhynchus) basins. Scallop [a] is a common name that encompasses various species of marine bivalve mollusks in the taxonomic family Pectinidae, the scallops. However, the common name "scallop" is also sometimes applied to species in other closely related families within the superfamily Pectinoidea, which also includes the thorny oysters. Scallops are a cosmopolitan family of bivalves found in all of the world's oceans, although never in fresh water. They are one of the very few groups of bivalves to be primarily "free-living", with many species capable of rapidly swimming short distances and even migrating some distance across the ocean floor. A small minority of scallop species live cemented to rocky substrates as adults, while others attach themselves to stationary or rooted objects such as seagrass at some point in their lives by means of a filament they secrete called a byssal thread. The majority of species, however, live recumbent on sandy substrates, and when they sense the presence of a predator such as a starfish, they may attempt to escape by swimming swiftly but erratically through the water using jet propulsion created by repeatedly clapping their shells together. Scallops have a well-developed nervous system, and unlike most other bivalves all scallops have a ring of numerous simple eyes situated around the edge of their mantles.

Seafood is any form of sea life regarded as food by humans, prominently including fish and shellfish. Shellfish include various species of molluscs , crustaceans (e.g. shrimp, crabs, and lobster), and echinoderms (e.g. sea cucumbers and sea urchins). Historically, marine mammals such as cetaceans (whales and dolphins) as well as seals have been eaten as food, though that happens to a lesser extent in modern times. Edible sea plants such as some seaweeds and microalgae are widely eaten as sea vegetables around the world, especially in Asia. Seafood is an important source of (animal) protein in many diets around the world, especially in coastal areas. Semi-vegetarians who consume seafood as the only source of meat are said to adhere to pescetarianism.

Chowder is a thick soup prepared with milk or cream, a roux, and seafood or vegetables. Oyster crackers or saltines may accompany chowders as a side item, and cracker pieces may be dropped atop the dish. Clam chowder from New England is typically made with chopped clams and diced potatoes, in a mixed cream and milk base, often with a small amount of butter. Other common chowders include seafood chowder, which often consists of fish, clams, and other types of shellfish; lamb or veal chowder made with barley; corn chowder, which uses corn instead of clams; various fish chowders; and potato chowder, which is often made with cheese. Fish, corn, and clam chowders are popular in North America, especially Atlantic Canada and New England.

Pea soup or split pea soup is soup made typically from dried peas, such as the split pea. It is, with variations, a part of the cuisine of many cultures. It is most often greyish-green or yellow in color depending on the regional variety of peas used; all are cultivars of Pisum sativum. Pea soup has been eaten since antiquity; it is mentioned in Aristophanes' The Birds, and according to one source "the Greeks and Romans were cultivating this legume about 500 BC to 400 BC. During that era, vendors in the streets of Athens were selling hot pea soup." Eating fresh "garden" peas before they were matured was a luxurious innovation of the Early Modern period: by contrast with the coarse, traditional peasant fare of pease pottage , Potage Saint-Germain, made of fresh peas and other fresh greens braised in light stock and puréed, was an innovation sufficiently refined that it could be served to Louis XIV of France, after whose court at Château de Saint-Germain-en-Laye it was named (c. 1660–1680).[clarification needed]

Baked beans is a dish traditionally containing white common beans that are parboiled and then baked in sauce at low temperature for a lengthy period. Canned baked beans are not baked, but are cooked through a steam process. Baked beans originated in Native American cuisine, and are made from beans indigenous to the Americas. The dish was adopted and adapted by English colonists in New England in the 17th century and, through cookbooks published in the 19th century, spread to other regions of the United States and into Canada. Today, in the New England region of the United States, a variety of indigenous legumes are used in restaurants or in the home, such as Jacob's cattle, soldier beans, yellow-eyed beans, and navy beans .

Brown bread is bread made with significant amounts of whole grain flours, usually wheat sometimes with corn and or rye flours. Brown breads often get their characteristic dark color from ingredients such as molasses or coffee. In Canada, Ireland and South Africa, it is whole wheat bread; in New England and the Maritimes, it is bread sweetened with molasses. In some regions of the US, brown bread is called wheat bread to complement white bread. Whole wheat flours that contain raw wheat germ, instead of toasted germ, have higher levels of glutathione, and thus result in lower loaf volumes. In Ireland, during the Famine, prior to 1848, brown bread was handed out to the poor. In England, brown bread was made from brown meal. Around and prior to the year 1845, brown meal was considered a less desirable grain product, and was priced accordingly. However, by 1865, due to recently discovered health benefits of bran, brown meal's London price had increased to a point often greater than that of fine flour.

Palmaria palmata, also called dulse, dillisk or dilsk , red dulse, sea lettuce flakes, or creathnach, is a red alga (Rhodophyta) previously referred to as Rhodymenia palmata. It grows on the northern coasts of the Atlantic and Pacific Oceans. It is a well-known snack food. In Iceland, where it is known as söl [ˈsœːl̥], it has been an important source of dietary fiber throughout the centuries. The earliest record of this species is on the island of Iona, Scotland where Christian monks harvested it over 1,400 years ago.

Fiddleheads or fiddlehead greens are the furled fronds from a fledgling fern, harvested for use as a vegetable. Left on the plant, each fiddlehead would unroll into a new frond . As fiddleheads are harvested early in the season, before the frond has opened and reached its full height, they are cut fairly close to the ground. Fiddleheads from brackens contain ptaquiloside, a compound associated with bracken toxicity, and thiaminase. Not all species contain ptaquiloside, such as Diplazium esculentum, a fern with fiddleheads regularly consumed in parts of East Asia, which differs from bracken (Pteridium aquilinum).
