Caciotta Vaccina Frentana, also known locally as "casce d’ vacc," is a semi-cooked, semi-hard cheese made from raw cow's milk in the lowland and mid-hill areas of the Frentano and Medio Vastese territories in Abruzzo, Italy. It features a thin, straw-yellow rind when aged, with a compact, white paste that's soft and elastic when fresh, offering flavors influenced by the aromatic herbs and forages of the local pastures.
