Youtiao , known in Southern China as Yu Char Kway, is a long golden-brown deep-fried strip of wheat flour dough of Chinese origin and (by a variety of other names) also popular in other East and Southeast Asian cuisines. Conventionally, youtiao are lightly salted and easily separated by hand. Youtiao are normally eaten at breakfast as an accompaniment for rice congee, soy milk or cow's milk blended with sugar. Youtiao may also be known as a Chinese cruller, Chinese oil stick, Chinese donut [sticks], and fried breadstick, among others.

Coffea arabica , also known as the Arabica coffee, is a species of flowering plant in the coffee and madder family Rubiaceae. It is believed to be the first species of coffee to have been cultivated and is the dominant cultivar, representing about 60% of global production. Coffee produced from the less acidic, more bitter, and more highly caffeinated robusta bean (C. canephora) makes up most of the remaining coffee production. The natural populations of Coffea arabica are restricted to the forests of South Ethiopia and Yemen.

The B-52 cocktail is a layered shot composed of coffee liqueur (Kahlúa), Irish cream (Baileys Irish Cream), and Grand Marnier (in later versions replaced with triple sec or Cointreau). When prepared properly, the ingredients separate into three distinctly visible layers (due to their relative densities). The origins of the B-52 are not well documented, but one claim is that the B-52 was invented by Peter Fich, a head bartender at the Banff Springs Hotel in Alberta, Canada. Fich named all of his new drinks after favorite bands, albums, and songs, and he supposedly named the drink after the band of the same name, not directly after the US B-52 Stratofortress bomber or the beehive hairstyle after which the band was named. One of Fich's first customers for a B-52 owned restaurants in various cities in Alberta, and they liked the drink so much that he put it on the menu, leading to the perception that the B-52 originated at the Keg Steakhouse in Calgary, Alberta in 1977. The B-52 is also rumoured [by whom?] to have been created by Adam Honigman, a bartender at New York City's Maxwell's Plum.

'burning liquor'), is a colorless Chinese liquor typically coming in between 35% and 60% alcohol by volume (ABV). Each type of baijiu uses its own type of qū for fermentation to create a distinct and characteristic flavor profile. Baijiu is a clear liquid usually distilled from fermented sorghum, although other grains may be used; some southeastern Chinese styles may employ rice and glutinous rice while other Chinese varieties may use wheat, barley, millet, or Job's tears (Chinese: 薏苡; pinyin: yìyǐ) in their mash bills. The qū starter culture used in the production of baijiu is usually made from pulverized wheat grain or steamed rice.

The Black Russian is a cocktail of vodka and coffee liqueur. It contains 50 ml vodka and 20 ml coffee liqueur, per IBA specified ingredients. The drink is made by pouring the vodka and coffee liqueur over ice cubes or cracked ice in an old-fashioned glass and stirring. The Black Russian is often garnished with a lemon slice and a Luxardo maraschino cherry on a stick. The Black Russian cocktail first appeared in 1949 and is ascribed to Gustave Tops, a Belgian barman, who created it at the Hotel Metropole in Brussels in honor of Perle Mesta, then United States Ambassador to Luxembourg. The cocktail owes its name to the use of vodka, a typical Russian spirit, and the blackness of the coffee liqueur.

A Bloody Mary is a cocktail containing vodka, tomato juice, and other spices and flavorings including Worcestershire sauce, hot sauces, garlic, herbs, horseradish, celery, olives, pickled vegetables, salt, black pepper, lemon juice, lime juice and celery salt. Some versions of the drink, such as the "surf 'n turf" Bloody Mary, include shrimp and bacon as garnishes. In the United States, it is usually consumed in the morning or early afternoon, and is popular as a hangover cure. The Bloody Mary was invented in the 1920s or 1930s. There are various theories as to the origin of the drink and its name. It has many variants, most notably the red snapper, Bloody Maria , and the Virgin Mary. The French bartender Fernand Petiot claimed to have invented the Bloody Mary in 1921, well before any of the later claims, according to his granddaughter.[failed verification] He was working at the New York Bar in Paris at the time, which later became Harry's New York Bar, a frequent Paris hangout for Ernest Hemingway and other American migrants. The cocktail is said to have been created on the spur of the moment, according to the bar's own traditions, consisting only of vodka and tomato juice. It was originally referred to as a "Bucket of Blood". Harry's Bar also claims to have created numerous other classic cocktails, including the White Lady and the Side Car.

Other commonly used spellings are mochaccino and also mochachino. The name is derived from the city of Mokha, Taiz Governorate, Yemen, which was one of the centres of early coffee trade. Like latte, the name is commonly shortened to just mocha. The name "mocha" is derived from the Yemeni port of Mokha, which was a port well-known for its coffee trade from the 15th to 17th century, and where small quantities of fine coffee grown in the hills nearby was exported. When coffee drinking culture spread to Europe, Europeans referred to coffee imports from Arabia as Mochas, even though coffee from Yemen itself was uncommon and frequently mixed with beans from Abyssinia, and later coffee from Malabar or the West Indies were also marketed as Mocha coffee. The coffee drink today called "mocha," however, is made by adding chocolate, and some believe that this is the result of confusion caused by the chocolate flavor that may sometimes be found in Yemeni coffee. Chocolate has been combined with coffee after chocolate drink was introduced to Italy in the 17th century; in Turin, chocolate was mixed with coffee and cream to produce bavareisa, which evolved in the 18th century into bicerin served in small clear glass where its components may be observed as three separate layers. However, prior to 1900s, Mocha referred to Yemeni coffee, and its meaning began to change around the turn of the 20th century, and recipes for food such as cakes that combined chocolate and coffee that referenced mocha began to appear. In 1920, a recipe for a "Chilled Mocha" was published with milk, coffee and cocoa as ingredients.

Among the specified grapes, Ugni blanc, known locally as Saint-Émilion, is most widely used. The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. This results in 60 ml (2.1 imp fl oz; 2.0 US fl oz) of drink, double the amount of a single shot espresso. Doppio is Italian multiplier, meaning 'double'. It is commonly called a standard double, due to its standard in judging the espresso quality in barista competitions, where four single espresso are made using two double portafilters. A single shot of espresso, by contrast, is called a solo ("single") and was developed because it was the maximum amount of ground coffee that could practically be extracted by lever espresso machines. At most cafés outside of Italy, a doppio is the standard shot. Because solos require a smaller portafilter basket, solo shots are often produced by making ("pulling") a doppio in a two-spout portafilter and only serving one of the streams; the other stream may be discarded or used in another drink. Coffee preparation is the process of turning coffee beans into liquid coffee. While the particular steps vary with the type of coffee and with the raw materials, the process includes four basic steps: raw coffee beans must be roasted, the roasted coffee beans must then be ground, and the ground coffee must then be mixed with hot or cold water for a specific time (brewed), the liquid coffee extraction must be separated from the used grounds, and finally, if desired, the extracted coffee is combined with other elements of the desired beverage, such as sweeteners, dairy products, dairy alternatives, or toppings (such as shaved chocolate). Coffee is usually brewed hot, at close to the boiling point of water, immediately before drinking, yielding a hot beverage capable of scalding if splashed or spilled; if not consumed promptly, coffee is often sealed into a vacuum flask or insulated bottle to maintain its temperature. The drink originated in the mid-20th century during the British rule of Hong Kong, and was inspired by the British's afternoon tea. The Hong Kong variant uses a stronger blend of tea leaves, which traditionally is brewed using a unique technique that features a stocking-like cotton bag. These, along with the use of evaporated milk instead of fresh milk, results in a more intense and creamy flavour, differing from the light and diluted taste of British milk tea.

A hot toddy, also known as hot whiskey in Ireland, and occasionally called southern cough syrup within the Southern United States, is typically a mixed drink made of liquor and water with honey , lemon, herbs (such as tea) and spices, and served hot. Recipes vary, and hot toddy is traditionally drunk as a nightcap before retiring for the night, in wet or cold weather, or to relieve the symptoms of the cold and flu. In How to Drink, Victoria Moore describes the drink as "the vitamin C for health, the honey to soothe, the alcohol to numb." A hot toddy is a mixture of a spirit (usually whisky), hot water, and honey (or, in some recipes, sugar). In Canada, maple syrup may be used. Additional ingredients such as cloves, a lemon slice or cinnamon (in stick or ground form) are often also added. The word toddy comes from the toddy drink in India, produced by fermenting the sap of palm trees. Its earliest known use to mean "a beverage made of alcoholic liquor with hot water, sugar, and spices" is from 1786. It is often referred to as a 'Hot Toady'. However, a few other sources credit Robert Bentley Todd for his prescription of a hot drink of brandy, canella (white cinnamon), sugar syrup, and water.

Ipoh white coffee is a popular coffee drink which originated in Ipoh, Perak, Malaysia, resulting in Ipoh being named one of the top three coffee towns by Lonely Planet. The coffee beans are roasted with palm oil margarine, and the resulting coffee is served with condensed milk. The term white coffee originates from the literal translation of its Chinese name, which was introduced in the 19th century by Chinese migrants who came to work in the local tin mines. The coffee beans themselves are not actually white; the colour comes from the milk stirred into the end product. In Malaysia, the original white coffee started in the Ipoh and was a drink made from beans roasted in margarine and served with sweetened condensed milk. This style of coffee continues to be popular throughout the country. However, white coffee in Malaysia often simply refers to how the drink is prepared and presented – with margarine.

Irish coffee is a caffeinated alcoholic drink consisting of Irish whiskey, hot coffee and sugar, which has been stirred and topped with cream (sometimes cream liqueur). The coffee is drunk through the cream. Different variations of coffee cocktails pre-date the now-classic Irish coffee by at least 100 years. From the mid-19th century, the Pharisäer and the Fiaker were served in Viennese coffee houses; both were coffee cocktails served in glass, topped with whipped cream. The former was also known in northern Germany and Denmark around that time. Around 1900, the coffee cocktail menu in the Viennese cafés also included Kaisermelange, Maria Theresia, Biedermeier-Kaffee and a handful of other variations on the theme.[citation needed]

Kopi luwak, also known as civet coffee, is a coffee that consists of partially digested coffee cherries, which have been eaten and defecated by the Asian palm civet . The cherries are fermented as they pass through a civet's intestines, and after being defecated with other fecal matter, they are collected. Asian palm civets are increasingly caught in the wild and traded for this purpose. Kopi luwak is produced mainly on the Indonesian islands of Sumatra, Java, Bali, Sulawesi, and in East Timor. It is also widely gathered in the forest or produced in farms in the islands of the Philippines, where the product is called kape motit in the Cordillera region, kapé alamíd in Tagalog areas, kapé melô or kapé musang in Mindanao, and kahawa kubing in the Sulu Archipelago.

A long black is a style of coffee commonly found in Australia and New Zealand, made by pouring a single shot of espresso into hot water. It is similar to an americano, in which hot water is poured into one shot of espresso. Typically about 100–120 milliliters (3.5–4 ounces) of water is used but the measurement is considered to be flexible to individual taste. The smaller volume of water compared to an Americano is responsible for its stronger taste. Both retain the crema when brewed properly, though in the long black the crema will be more pronounced.

A normal serving of espresso takes from 18 to 30 seconds to pull, and fills 25 to 30 millilitres, while a lungo may take up to a minute to pull, and might fill 50 to 70 millilitres. Extraction time of the dose is determined by the variety of coffee beans (usually a blend of Arabica and Robusta), their grind and the pressure of the machine. It is usually brewed using an espresso machine, but with two times the amount of water to the same weight of coffee, to make a much longer drink.

Mojito is a traditional Cuban punch. The cocktail often consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, soda water, and mint. Its combination of sweetness, citrus, and herbaceous mint flavors is intended to complement the rum, and has made the mojito a popular summer drink. When preparing a mojito, fresh lime juice is added to sugar (or to simple syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded. Then rum is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. Finally, the drink is topped with crushed ice and sparkling soda water. Mint sprigs or lime wedges are used to garnish the glass.

Mulled wine, also known as spiced wine, is an alcoholic drink usually made with red wine, along with various mulling spices and sometimes raisins, served hot or warm. It is a traditional drink during winter, especially around Christmas. It is usually served at Christmas markets in Europe, primarily in Germany, Czech Republic, Austria, Switzerland, Slovenia, Croatia, Hungary, Romania, Nordics, Baltics and eastern France. There are non-alcoholic versions of it. Vodka-spiked mulled wine can be found in Polish Christmas markets, where mulled wine is commonly used as a mixer. The first record of wine being spiced and heated can be found in Plautus' play Curculio, written during the 2nd century BC. The Romans travelled across Europe, conquering much of it and trading with the rest. The legions brought wine and viticulture with them up to the Rhine and Danube rivers and to the Scottish border, along with their recipes. The Forme of Cury, a medieval English cookery book from 1390, which mentioned mulled wine, says: "Pur fait Ypocras ..." grinding together cinnamon, ginger, galangal, cloves, long pepper, nutmeg, marjoram, cardamom, and grains of paradise . This is mixed with red wine and sugar (form and quantity unstated).[citation needed]

Rice milk is a plant milk made from rice. Commercial rice milk is typically manufactured using brown rice and brown rice syrup, and may be sweetened using sugar or sugar substitutes, and flavored by common ingredients, such as vanilla. It is commonly fortified with protein and micronutrients, such as vitamin B12, calcium, iron, or vitamin D. The exact origin of rice milk is uncertain. In 1914, Maria M. Gilbert gave a recipe for rice milk in her book Meatless Cookery, which was the earliest known use of the term. In 1921, the first rice milk factory was built by the Vita Rice Products Co., launching Vita Rice Milk the same year in San Francisco, California. In 1990, Rice Dream was launched by Imagine Foods of Palo Alto, California in Tetra Pak cartons, becoming the first widely popular rice milk. Rice milk is 89% water, 9% carbohydrates, 1% fat, and contains negligible protein (table). A 100 ml reference amount provides 47 calories, and – if purposely fortified during manufacturing – 26% of the Daily Value (DV) for vitamin B12 (table). Ristretto , known in full in Italian as caffè ristretto, is a "short shot" (20 ml (0.7 imp fl oz; 0.7 US fl oz) from a double basket) of a highly concentrated espresso coffee. It is made with the same amount of ground coffee, but extracted (also in from 20 to 30 seconds) using half as much water. A normal short shot might look like a ristretto, but in reality, would only be a weaker, more diluted, shot. The opposite of a ristretto (Italian for 'shortened', 'narrow') is a lungo ('long'), which has double the amount of water. The French call a ristretto café serré. Regardless of whether one uses a hand pressed machine or an automatic, a regular double shot is generally considered to be around 14–18 g (0.49–0.63 oz) of ground coffee extracted into about 40 ml (2 fl oz; two shot glasses). Thus, a "double ristretto" consumes the same amount of coffee beans but fills only a single shot glass.

A screwdriver is a simple and popular alcoholic highball drink made with orange juice and vodka. In the UK, it is referred to as a "vodka and orange". While the basic drink is simply the two ingredients, there are many variations. Many of the variations have different names in different parts of the world. The drink originated during World War II, when Americans in China and Turkey mixed neutral spirits with orange juice. The origin of the name "screwdriver" is less clear, but the name appeared in Ankara, Turkey, in 1943 and 1944 and later in Istanbul. Variations on the recipe were present in 1948 in Turkey and also called screwdrivers, such as a mixture of one-third vodka and two-thirds gin, and another recipe adding gin, cognac, bitters, and other ingredients to orange juice and vodka. An unattributed but popular story for the name is that the Americans lacked a spoon and instead used a screwdriver as a stirring stick. Another unattributed story is that auto workers in the USA used to pour vodka in their breakfast orange juice before starting the shift and used screwdrivers to stir the glass.

The sidecar is a cocktail traditionally made with brandy , orange liqueur (Cointreau, Grand Marnier, dry curaçao, or a triple sec), and lemon juice. It became popular in Paris and London in the early 1920s. Common modifications of the original recipe are a sugar rim, added sugar syrup, and an orange twist or lemon twist. The sidecar is categorized as a daisy: a spirit, citrus juice, and a liqueur as sweetener. Other well-known daisies include the margarita (literally "daisy" in Spanish) and the White Lady. Daisies are variants of the older sour formula, which use sugar for sweetening; daisies are more complex and often drier. Daisies in general and the sidecar in particular are considered more of a challenge for bartenders because the proportion of ingredients is more difficult to balance for liqueurs of variable sweetness. In its ingredients, the drink is perhaps most closely related to the older brandy crusta, which differs both in presentation and in proportions of its components.

Tea is an aromatic beverage prepared by pouring hot or boiling water over cured or fresh leaves of Camellia sinensis, an evergreen shrub native to East Asia which probably originated in the borderlands of southwestern China and northern Myanmar. Tea is also made, but rarely, from the leaves of Camellia taliensis. After plain water, tea is the most widely consumed drink in the world. There are many different types of tea; some have a cooling, slightly bitter, and astringent flavour, while others have profiles that include sweet, nutty, floral, or grassy notes. Tea has a stimulating effect in humans, primarily due to its caffeine content. An early credible record of tea drinking dates to the third century AD, in a medical text written by Chinese physician Hua Tuo. It was popularised as a recreational drink during the Chinese Tang dynasty, and tea drinking subsequently spread to other East Asian countries. Portuguese priests and merchants introduced it to Europe during the 16th century. During the 17th century, drinking tea became fashionable among the English, who started to plant tea on a large scale in British India.

It was founded in 1903 by Germans in Qingdao, Kiautschou Bay Leased Territory. Vietnamese iced coffee is a traditional Vietnamese coffee recipe. It is created using coffee roasted between medium and dark. The drink is made by passing hot water through the grounds into a cup that already contains condensed milk. To serve the drink cold, ice is added to the cup. Variations involve additions of ice, sugar or condensed milk. A popular variation is cà phê sữa đá (or nâu đá in the North), which is iced coffee served with sweetened condensed milk. This is done by putting two to three teaspoons or more of condensed milk into the cup prior to the drip filter process. Other variations include: Coffee was introduced to Vietnam in 1857 by a French Catholic priest in the form of a single Coffea arabica tree. The beverage was adopted with regional variations. Because of limitations on the availability of fresh milk, as the dairy farming industry was still in its infancy, the French and Vietnamese began to use sweetened condensed milk with a dark roast coffee.

Wong Lo Kat originated in 1828 during the Qing Dynasty in Guangdong (Kwangtung) and Guangxi (Kwangsi) provinces of China, founded by a doctor Wong Chat Bong (simplified Chinese: 王泽邦; traditional Chinese: 王澤邦; pinyin: Wáng Zébāng). Because the Wong family was the inventor of herbal tea brewing in southern China, the brand is synonymous with this type of drink. The recipe has been passed down through multiple generations to today's tea culture.

Abalone is a common name for any small to very large marine gastropod mollusc in the family Haliotidae, which once contained six subgenera but now contains only one genus Haliotis. Other common names are ear shells, sea ears, and, now rarely, muttonfish or muttonshells in parts of Australia, ormer in the UK, perlemoen in South Africa, and pāua in New Zealand. The number of abalone species recognized worldwide ranges between 30 and 130 with over 230 species-level taxa described. The most comprehensive treatment of the family considers 56 species valid, with 18 additional subspecies. The shells of abalones have a low, open spiral structure, and are characterized by several open respiratory pores in a row near the shell's outer edge. The thick inner layer of the shell is composed of nacre, which in many species is highly iridescent, giving rise to a range of strong, changeable colors which make the shells attractive to humans as decorative objects, jewelry, and as a source of colorful mother-of-pearl.

Baozi , or simply bao, is a type of yeast-leavened filled bun in various Chinese cuisines. There are many variations in fillings (meat or vegetarian) and preparations, though the buns are most often steamed. They are a variation of mantou from Northern China. Two types are found in most parts of China: Dàbāo (大包, "big bun"), measuring about ten centimetres (four inches) across, served individually, and usually purchased for take-away. The other type, Xiǎobāo (小包, "small bun"), measures approximately five centimetres (two inches) wide, and are most commonly eaten in restaurants, but may also be purchased for take-away. Each order consists of a steamer containing between three and ten pieces. A small ceramic dish for dipping the baozi is provided for vinegar or soy sauce, both of which are available in bottles at the table, along with various types of chili and garlic pastes, oils or infusions, fresh coriander and leeks, sesame oil, and other flavorings. Baozi are popular throughout China and have made their way into the cuisines of many other countries through the Chinese diaspora.

Beef ball is a common food in Cantonese and overseas Chinese communities and originated from the Teochew people. As the name suggests, beef balls are made of pulverized beef. They are similar in form and preparation to fish balls but have a darker color. Nearly all meatballs (made from pork, beef, fish, or other animal flesh) made in Asia differ significantly in texture to their European counterparts. Instead of mincing the meat, which is done for meatballs of European origin, cooks pound the meat until it is pulverized. This process lends itself to the meatballs' smooth texture. Pounding, unlike mincing, uncoils and stretches previously wound protein strands in meat and allows them to cure to a gel with heat in a similar manner as surimi. This technique is also often used for meat fillings in steamed dishes. After the meat is prepared, it is divided into balls, seasoned, and boiled in water. With prolonged cooking, the tiny pieces of tendon from the meat in the balls will dissolve. The result is meatballs with a tender, bouncy texture.

A similar dish using a piece of braised beef with the same garnish is pièce de bœuf à la bourguignonne. "Bourguignon" is, since the mid-nineteenth century, a culinary term applied to various dishes prepared with wine or with a mushroom and onion garnish. It is probably not a regional recipe from Burgundy. When made with whole roasts, the meat was often larded.

A stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients can include any combination of vegetables and may include meat, especially tougher meats suitable for slow-cooking, such as beef, pork, venison, rabbit, lamb, poultry, sausages, and seafood. While water can be used as the stew-cooking liquid, stock is also common. A small amount of red wine or other alcohol is sometimes added for flavour. Seasonings and flavourings may also be added. Stews are typically cooked at a relatively low temperature , allowing flavours to mingle. Stewing is suitable for the least tender cuts of meat that become tender and juicy with the slow, moist heat method. This makes it popular for low-cost cooking. Cuts with a certain amount of marbling and gelatinous connective tissue give moist, juicy stews, while lean meat may easily become dry. Stews are thickened by reduction or with flour, either by coating pieces of meat with flour before searing or by using a roux or beurre manié, a dough consisting of equal parts fat and flour. Thickeners like cornstarch, potato starch, or arrowroot may also be used.

Bicol express, known natively in Bikol as sinilihan , is a popular Filipino dish which was popularized in the district of Malate, Manila, but made in traditional Bicolano style. It is a stew made from long chili peppers (siling haba in Tagalog) or small chili peppers (siling labuyo in Tagalog), coconut milk/coconut cream (kakang gata in Tagalog), shrimp paste (bagoong alamang in Tagalog) or stockfish, onion, pork, ginger and garlic. The dish was termed by Laguna resident, Cely Kalaw, during a cooking competition in the 1970s in Malate, Manila. The name of the dish was inspired by the Bicol Express railway train (Philippine National Railways) that operated from Tutuban, Manila to Legazpi, Albay (regional center of the Bicol region). The widely-known name for this dish in the Bicol Region of the Philippines was identified as gulay na may lada, which is currently one of the vegetarian variants of the Bicol express dish. As time progressed, variants of the Bicol express dish expanded with seafood, beef, pescatarian, vegetarian, vegan, and other versions. The preparations for these dishes vary according to the meat present within the dish. In terms of nutritional value, the original version of the Bicol express dish is beneficial in protein but unhealthy in regards to its high levels of saturated fats and cholesterol. The dish has moved into food processing and commercial production so that it can be sold conveniently and stored for a longer period of time. See Bicol for full etymology. The name derives originally from the spelling systems of Spanish and then integrated with the spelling systems of English. There were three types of Spanish derivatives of Bicol; 'Vicor', 'Vicol', and 'Bico', because the Spanish did not distinguish /b/ and /v/ in their pronunciation.

Bisque is a smooth, creamy, highly seasoned soup of French origin, classically based on a strained broth of crustaceans. It can be made from lobster, langoustine, crab, shrimp, or crayfish. The French bisque is one of the most popular seafood soups around the world. The term "bisque" is also used to refer to cream-based soups that do not contain seafood, in which the pre-cooked ingredients are pureed or processed in a food processor or a food mill. Common varieties include squash, tomato, mushroom, and red pepper. It is thought the name is derived from Biscay, as in Bay of Biscay.

Harpadon nehereus is a species of lizardfish. Adults may reach a maximum length of 40 cm (16 in), but the usual size is around 25 cm (10 in). In the early days Bombay Duck caught in Bombay used to be discarded. However, this fish was considered a delicacy in Bengal. When the railways began their journey in India, this fish was transported from Bombay to Calcutta. Since they used to get transported in a mail train, the fish got its name Bombay Mail fish (shortened to Bombail or Bombil) or Bombay Daak (Daak is mail in Bengali). Some claim that this name was given by a British official (perhaps Robert Clive, mentioned later) who hated the overpowering smell of the fish in the train. According to local Bangladeshi stories,[citation needed] the term Bombay duck was first coined by Robert Clive, after he tasted a piece during his conquest of Bengal. He is said to have associated the pungent smell with that of the newspapers and mail which would come into the cantonments from Bombay. The term was later popularised among the British public by its appearance in Indian restaurants in the UK.

The word is originally a compound of the two Provençal verbs bolhir ('to boil') and abaissar ('to reduce heat', i.e. 'simmer'). Bouillabaisse was originally a dish made by Marseille fishermen, using bony rockfish, which they were unable to sell to restaurants or markets. There are at least three kinds of fish in a traditional bouillabaisse: typically red rascasse (Scorpaena scrofa); sea robin; and European conger. It can also include gilt-head bream, turbot, monkfish, mullet, or European hake. It usually also includes shellfish and other seafood such as sea urchins, mussels, velvet crabs, spider crabs, or octopus. More expensive versions may add langoustine (Dublin Bay prawn; Norway lobster), though this was not part of the traditional dish made by Marseille fishermen. Vegetables such as leeks, onions, tomatoes, celery, and potatoes are simmered together with the broth and served with the fish. The broth is traditionally served with rouille, a mayonnaise made of olive oil, garlic, saffron, and cayenne pepper, on grilled slices of bread. What makes a bouillabaisse different from other fish soups is the selection of Provençal herbs and spices in the broth; the use of bony local Mediterranean fish; the way the fish are added one at a time, and brought to a boil; and the method of serving. In Marseille, the broth is served first in a soup plate with slices of bread and rouille, then the fish is served separately on a large platter (see image at top); or, more simply, as Julia Child suggests, the fish and broth are brought to the table separately and served together in large soup plates.

Brisket is a cut of meat from the breast or lower chest of beef or veal. The beef brisket is one of the nine beef primal cuts, though the definition of the cut differs internationally. The brisket muscles include the superficial and deep pectorals. As cattle do not have collar bones, these muscles support about 60% of the body weight of standing or moving cattle. This requires a significant amount of connective tissue, so the resulting meat must be cooked correctly to tenderise it. According to the Random House Dictionary of the English Language, Second Edition, the term derives from the Middle English brusket which comes from the earlier Old Norse brjósk, meaning cartilage. The cut overlies the sternum, ribs, and connecting costal cartilages. Briskets can be cooked in many ways, including baking, boiling and roasting. Basting of the meat is often done during the cooking. This normally tough cut of meat, due to the collagen fibers that make up the significant connective tissue in the cut, is tenderized when the collagen gelatinises, resulting in a more tender brisket. The fat cap, which is often left attached to the brisket, helps to keep the meat from drying during the prolonged cooking necessary to break down the connective tissue in the meat. Water is necessary for the conversion of collagen to gelatine, which is the hydrolysis product of collagen. Popular methods in the United States include rubbing with a spice rub or marinating the meat, and then cooking slowly over indirect heat from charcoal or wood. This is a form of smoking the meat. A hardwood, such as oak, pecan, hickory or mesquite is sometimes added, alone or in combination with other hardwoods, to the main heat source. Sometimes, they make up all of the heat sources, with chefs often prizing characteristics of certain woods. The smoke from the woods and from burnt dripping juices further enhances the flavor. The finished meat is a variety of barbecue. Smoked brisket done this way is popular in Texas barbecue. Once finished, pieces of brisket can be returned to the smoker to make burnt ends. Burnt ends are most popular in Kansas City-style barbecue, where they are traditionally served open-faced on white bread. The traditional New England boiled dinner features brisket as a main-course option.

Budae-jjigae is a type of spicy jjigae (Korean stew) from South Korea that is made with a variety of ingredients, often canned or processed. Common ingredients include ham, sausage, spam, baked beans, kimchi, instant noodles, gochujang, and American cheese. The dish is now a popular anju (accompaniment to alcoholic drinks) and a comfort food cooked in a large pot for multiple people. It also goes by the English names army stew, army base stew, and spicy sausage stew. The dish has its origins in a predecessor often called kkulkuri-juk (꿀꿀이죽; lit. piggy porridge), that was created around the time of the Korean War, when South Korea was experiencing significant poverty. A prominent ingredient of the dish, Spam, was only made legally available for sale in 1987, around the time that South Korea democratized.

The dish's name is an allusion to the dish's ability to entice the vegetarian Buddhist monks from their temples to partake in the meat-based dish, and implies that even the strictly vegetarian Gautama Buddha would try to jump over a wall to sample it. It is high in protein and calcium. It is one of China's state banquet dishes. Concerns over the sustainability and welfare of sharks limited its consumption and led to various modified versions without the usage of shark fin as ingredient.

Five-spice powder is the primary spice, honey or other sweeteners are used as a glaze, and the characteristic red color comes from the red yeast rice when made traditionally. It is classified as a type of siu mei (燒味), Cantonese roasted meat.

Chicken curry or curry/curried chicken is a South Asian dish originating from the Indian subcontinent. It is common in the cuisine of the Indian subcontinent, Caribbean, Southeast Asia, Great Britain, and Kenya. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, and tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce, and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

Chicken inasal, commonly known simply as inasal, is a variant of the Filipino chicken dish known as lechon manok. Chicken inasal is a grilled chicken part usually breast or leg (Paa) while a lechon manok is a stuffed whole chicken. It is chicken marinated in a mixture of calamansi, pepper, coconut vinegar and annatto, then grilled over hot coals while basted with the marinade. It is served with rice, calamansi, soy sauce, chicken oil and vinegar (often sinamak vinegar, a palm vinegar infused with garlic, chili peppers and langkawas). There are two popular versions of chicken inasal: the Bacolod and the Iloilo. The usual difference between them is that Bacolod's inasal has a slightly sour base flavor, while Iloilo's has a sweeter flavor, because of the addition of lechon sauce.

The name "Buffalo" is now also applied to other spiced fried foods served with dipping sauces, including boneless chicken wings (made from chicken breast meat rather than a chicken wing), chicken fries, chicken nuggets, popcorn chicken, shrimp, and cauliflower. It is also used for other dishes, such as pizza, that are seasoned with the Buffalo-style sauce or a seasoning.

It is native to rivers, estuaries and other coastal habitats of East Asia from Korea in the north to Fujian, China in the south. It has also been introduced to Europe and North America, where it is considered an invasive species. The species features on the list of invasive alien species of Union concern. This means that the import of the species and trade in the species is forbidden in the whole of the European Union. This species' distinguishing features are the dense patches of dark setae on its claws. The crab's body is the size of a human palm. The legs are about twice as long as the 3–10-centimeter-wide (1–4 in) carapace.

Chop suey is a dish from American Chinese cuisine and other forms of overseas Chinese cuisine, generally consisting of meat (usually chicken, pork, beef, shrimp or fish) and eggs, cooked quickly with vegetables such as bean sprouts, cabbage, and celery, and bound in a starch-thickened sauce. It is typically served with rice, but can become the Chinese-American form of chow mein with the substitution of stir-fried noodles for rice. Chop suey has become a prominent part of American Chinese cuisine, British Chinese cuisine, Filipino cuisine, Canadian Chinese cuisine, German Chinese cuisine, Indian Chinese cuisine, and Polynesian cuisine. In Chinese Indonesian cuisine/Dutch Chinese Indonesian cuisine it is known as cap cai (tjap tjoi) (雜菜, "mixed vegetables") and mainly consists of vegetables. Chop suey is widely believed to have been developed in the U.S. by Chinese Americans, but the anthropologist E. N. Anderson, traces the dish to tsap seui (杂碎, "miscellaneous leftovers"), common in Taishan (Toisan), a county in Guangdong province, the home of many early Chinese immigrants to the United States. Hong Kong doctor Li Shu-fan likewise reported that he knew it in Toisan in the 1890s.

'Chow mein' is the Americanization of the Chinese term chaomian (simplified Chinese: 炒面; traditional Chinese: 炒麵; pinyin: Chǎomiàn). Its pronunciation comes from the Cantonese pronunciation "chaomin"; the term first appeared in English (US) in 1906. The term 'chow mein' means 'stir-fried noodles', also loosely translated as "fried noodles" in English, chow (Chinese: 炒; pinyin: chǎo) meaning 'stir-fried' (or "sautéed") and mein (simplified Chinese: 面; traditional Chinese: 麵; pinyin: Miàn) meaning "noodles".

Chuan , especially in the north-east of China referred to as chuan'r (Chinese: 串儿), are small pieces of meat roasted on skewers. Chuan originated in the Xinjiang region of China. It has been spread throughout the rest of the country, most notably in Beijing, Tianjin, Jinan and Jilin, where it is a popular street food. It is a product of the Chinese Islamic cuisine of the Uyghur people and other Chinese Muslims. Chuan are small pieces of meat roasted on skewers over charcoal or sometimes, electric heat. It is also sometimes cooked by deep frying in oil (popular in Beijing). It can be classified as a type of kebab. Chuan was traditionally made from lamb (yáng ròu chuàn, 羊肉串, lamb meat chuan), which is still the most common kind, but now, chicken, pork, beef and various types of seafood can also be used. Especially in some tourist areas, chuan can be found made with various insects, bugs, birds and other exotic animals. In general, chuan may be spiced according to preference, but generally cumin seeds, dried red pepper flakes, salt, black pepper and sesame or sesame oil are sprinkled or brushed onto it. Another popular incarnation is mantou chuan or "steamed bun chuan"; it is commonly brushed with a sweet bean sauce (甜面酱, not to be confused with sweet red bean paste) and its taste serves as a foil to the often spicy meat chuan. In Tianjin and Jinan, chuan is often served with small round breads (馅饼, xiàn bǐng), also grilled with the same spices. Xiàn bǐng technically means "pie" or "filled bread". After cooking the bread and meat, the bread is split open and chuan meat is stuffed inside, then eaten together.

Congee is a form of savoury rice porridge made by boiling rice in a large amount of water until the rice softens. Depending on rice-water ratio, the thickness of congee varies from a Western oatmeal porridge to a gruel. Since the history of rice cultivation in Asia stretches back to the Baiyue-inhabited lower Yangtze circa 10000 BC, congee is unlikely to have appeared before that date. Congee is typically served with side dishes, or it can be topped with meat, fish and pickled vegetables. Vivid experiences of eating or delivering thin congee as wartime or famine food often feature in diaries and chronicles. In some cultures, congee is eaten primarily as a breakfast food or late supper; some may also eat it as a substitute for rice at other meals. In cooking, a consommé is a type of clear soup made from richly flavoured stock or broth that has been clarified, a process that uses egg whites to remove fat and sediment. Consommé has three English pronunciations: traditionally in the UK, the stress is on the middle syllable; in modern UK English, the stress is on the first; and in the US the stress is on the last. A large amount of meat only yields a small amount of consommé; in some recipes, as much as 500 grams of meat can go into a single 250-millilitre (9 imp fl oz; 8+1⁄2 US fl oz) serving. This low yield is part of what has traditionally given consommé its refined reputation as an expensive dish.[citation needed]

Corn soup is a soup made of corn, typically sweetcorn. Initially popular only in corn-producing areas of the world, the dish is now widespread because of greater corn distribution. Typical ingredients are corn cut from the cob, water, butter and flour, with salt and pepper for seasoning. Additional ingredients vary by region, and may include eggs. Corn, being a staple crop for many Native American tribes has led to corn soup being a primary food among them. M. R. Harrington reported that 1908 hulled-corn soup onno'kwǎ' was the most popular dish for the Seneca Indians . He also stated, "[s]eldom do the Indians, pagan or Christian, meet for any function [...] without a kettle of onno'kwǎ', hot and savory, to regale the crowd". The soup was served at religious events, the people getting a ladleful every time they encircled the kettle. Several types of soups are prepared using corn as a primary ingredient.

It is not to be confused with leaves from the curry tree, although some curries do include curry leaves. Curry is prepared in the native cuisines of many Southeast Asian and East Asian countries.

Dandan noodles or dandanmian , literally "carrying-pole noodles", is a noodle dish originating from Chinese Sichuan cuisine. It consists of a spicy sauce usually containing preserved vegetables (often including zha cai, lower enlarged mustard stems, or ya cai, upper mustard stems), chili oil, Sichuan pepper, minced pork, and scallions served over noodles. The dish can either be served dry or as a noodle soup. The dandanmian originated in Chengdu, the capital of Sichuan province. The original dish is served with no soup in a small bowl covered in a mala meat sauce and pickled vegetables, with peanuts and spring onions served on top. The soup variant is from Hong Kong and is more widespread across the rest of China but it is uncommon in Sichuan itself where the traditional style dominates. Sesame paste or peanut butter is sometimes added, and occasionally replaces the spicy sauce, usually in the American Chinese style of the dish. In this case, dandanmian is considered a variation of ma jiang mian (麻醬麵), sesame sauce noodles, although ma jiang mian usually refers to a specific Shanghainese dish.

Dim sum is a large range of small Chinese dishes that are traditionally enjoyed in restaurants for brunch, with a “selection of over 1,000 varieties of small-plate Chinese foods, usually meat or vegetables in dough or a wrapper that is steamed, deep-fried or pan-fried.” Most modern dim sum dishes are commonly associated with Cantonese cuisine, although dim sum dishes also exist in other Chinese cuisines. In the tenth century, when the city of Canton (Guangzhou) began to experience an increase in commercial travel, many frequented teahouses for small-portion meals with tea called "yum cha" (brunch). "Yum cha" includes two related concepts. The first is "jat zung loeng gin" (Chinese: 一盅兩件), which translates literally as "one cup, two pieces". This refers to the custom of serving teahouse customers two delicately made food items, savory or sweet, to complement their tea. The second is dim sum, which translates literally to "touch the heart", the term used to designate the small food items that accompanied the tea. Teahouse owners gradually added various snacks called dim sum to their offerings. The practice of having tea with dim sum eventually evolved into the modern "yum cha". Cantonese dim sum culture developed rapidly during the latter half of the nineteenth century in Guangzhou. Cantonese dim sum was originally based on local foods. As dim sum continued to develop, chefs introduced influences and traditions from other regions of China. Cantonese dim sum has a very broad range of flavors, textures, cooking styles, and ingredients and can be classified into regular items, seasonal offerings, weekly specials, banquet dishes, holiday dishes, house signature dishes, and travel-friendly items, as well as breakfast or lunch foods and late-night snacks.

Dongpo pork , also known as Dongpo meat, is a Hangzhou dish made by pan-frying and then red-cooking pork belly. The pork is typically cut into thick, approximately 5 centimeter (2.0 inch) squares, with an even distribution of fat and lean meat, while retaining the skin. The texture is tender and juicy without being excessively greasy, accompanied by a fragrant aroma of wine. The dish is named in honor of Su Dongpo (Su Shi), a distinguished Song Dynasty poet and gastronome. While facing financial hardship during his exile in Huangzhou following the Crow Terrace Poetry Trial, Su Dongpo innovated upon the conventional method of preparing pork. He marinated the pork in a mixture of huangjiu (yellow wine), rock sugar, and soy sauce, and simmered it on low heat for long hours. He composed a poem titled "An Ode to Pork", where he described that pork was a most affordable meat source locally, and by a slowing cooking method, he obtained both a delicacy and a survival food for the families. The recipe was subsequently adopted and developed by people in the Hangzhou area, the capital city of South Song Dynasty. In Chinese Gastronomy, Lin Hsiang Ju and Lin Tsuifeng included the recipe "The Fragrance of Pork: Tungpo Pork", and remarked that the "square of fat is named after Su Tungpo, the poet, for unknown reasons. Perhaps it is just because he would have liked it."

An egg sandwich is a sandwich with some kind of cooked egg filling. Fried eggs, scrambled eggs, omelette, sliced boiled eggs and egg salad are popular options. In the last case, it may be called an egg salad sandwich. Beyond the basic model of fried egg between slices of bread, many common sandwiches have variations that include a fried egg in addition to bacon, sausage, cheese, black pudding, cold cuts, or as another topping to a hamburger. A popular breakfast sandwich in New Jersey consists of a fried egg, pork roll, and American cheese on a roll. The Southern egg sandwich is an egg and cheese sandwich, with bacon and avocado as additions. A popular filling snack with British troops since at least World War I, the "egg banjo" is a sandwich of a runny fried egg between two thick slices of bread (if possible, buttered or with margarine), often accompanied by a mug of "gunfire" (a drink of tea and rum). A popular account of the term's origins is the act of cleaning spilt egg off one's body, the sandwich held out to the side with one hand whilst the other wipes at the drips, giving the impression of playing an invisible banjo.
