Bajadera pralines are decadent Croatian no-bake bite-sized bars made with chocolate, walnuts and butter cookies

Ingredients

7   ounces butter cookies (Lorna Doone, Petite Beurre)
1 1/2   cups walnuts or blanched and peeled almonds
1 1/4   cups sugar
4   ounces (1 stick) butter
1/4   cup water
3   ounces bittersweet or semisweet chocolate
3 1/2   ounces bittersweet or semisweet chocolate
3   Tablespoons sugar
3   Tablespoons water
3   ounces butter

Preparation

Step 1
To make the filling, blend cookies and nuts together in a food processor until finely ground

Step 2
Transfer mixture to a large bowl

Step 3
In a separate bowl, add sugar, butter and water

Step 4
Microwave, whisk well, add to cookie-nut mixture and mix well

Step 5
Take two-thirds of this mixture and put it in a separate bowl

Step 6
Melt 3 ounces chocolate in microwave, add to the two-thirds cookie-nut mixture and mix

Step 7
Take half of the chocolate cookie-nut mixture and spread in the bottom of an 8x8” pan using dampened fingers or a small flat spatula

Step 8
Add the plain cookie-nut mixture to the pan and spread evenly

Step 9
Take the second half of the chocolate cookie-nut mixture and spread evenly in the pan, thus creating three distinct layers

Step 10
To make the glaze, melt chocolate, sugar and water in a bowl using a microwave, mix well

Step 11
Gradually add butter and whisk until all butter is melted and glaze is mixed well

Step 12
Pour glaze over torta 

Step 13
Chill in refrigerator and cut into small squares using a sharp knife

Step 14
Serve with espresso
