Chocolate Haupia Pie - The World's Food

A Hawaiian favorite! Coconut pudding pie topped with chocolate!

Ingredients

1   unbaked pie crust (homemade* or store bought)
1   cup milk
1   can coconut milk (13.5 fluid ounces)
1   teaspoon coconut extract
1   cup sugar
1   cup water
1/2   cup cornstarch
1   cup milk chocolate chips
1 1/2   cups heavy cream
1/4   cup sugar

Preparation

Step 1
Preheat oven and bake crust according to recipe or instructions

Step 2
Remove crust from oven and cool at room temperature

Step 3
In a medium saucepan over medium heat, whisk together milk, coconut milk, coconut extract and sugar

Step 4
Bring to a boil, whisking as needed, then reduce heat and slowly simmer

Step 5
In a separate bowl, dissolve cornstarch in water, then slowly whisk into hot coconut mixture

Step 6
Continue stirring over low heat until thickened, about 3 minutes

Step 7
Add half of the coconut pudding to the pie crust, spread evenly and let sit ________min

Step 8
Microwave chocolate chips in a medium bowl until melted

Step 9
Add the other half of the hot coconut pudding to the melted chocolate and whisk, then pour on top of the first layer of coconut pudding, being careful not to mix the two layers

Step 10
Refrigerate pie for 2 hours

Step 11
Whip the heavy cream and 1/4 cup sugar on medium speed until stiff

Step 12
Layer the whipped cream on top of the chilled pie

Step 13
Garnish with toasted coconut and/or chocolate shavings
