Hungarian mushroom soup. Creamy and hearty, this mushroom soup is flavored with dill, paprika and a bit of lemon juice. Perfect as an appetizer or main. Serve with warm crusty bread.

Ingredients
4 Tablespoons butter1 large onion, diced
1 pound mushrooms, sliced
2 teaspoons dried dill
1 Tablespoon paprika
1 Tablespoon soy sauce
2 cups chicken broth
1 cup warm milk
3 Tablespoons AP flour
1 teaspoon salt
1/4 black pepper
2 teaspoons fresh lemon juice
Preparation
Step 1
Melt the butter in a large pot over medium heat

Sauté the onions in the butter for 5 minutes
Sauté the onions in the butter for 5 minutes

Add the mushrooms and sauté for 5 more minutes

Stir in the broth, dill, paprika and soy sauce

Reduce heat to low, cover and simmer for 15 minutes, stirring occasionally

In a separate small bowl, whisk the milk and flour together, pour into soup and stir well

Cover and simmer for 15 more minutes, stirring occasionally
Step 8
Add salt, ground black pepper and lemon juice
Step 9
Blend well and allow to heat through over low heat, about 3 to 5 minutes (do not boil)
Step 10
Garnish with sour cream and parsley, if desired. Serve with crusty bread
