Drożdżówka - The World's Food

The World's Food

Yield: 12 buns
Time: 3 hours
Delicious buns or pastries filled with sweet cheese, fruit, poppy seeds or cinnamon

Ingredients

1   cup lukewarm milk
3   Tablespoons granulated sugar
1   Tablespoon instant yeast
3 1/4   cups all-purpose flour, plus some more for the working surface
2   eggs, whisked
2   Tablespoons butter, melted
12   ounces cream cheese
1/4   cup granulated sugar
1   Tablespoon vanilla extract
1   Tablespoon rice or potato flour
1   egg yolk
2   egg whites, whipped until stiff
1/2   cup all-purpose flour
1/4   cup granulated sugar
1/4   teaspoon baking powder
3   Tablespoons butter, softened
1   egg yolk
1   teaspoon water

Preparation

Step 1
To a large bowl, add 1 cup lukewarm milk, 3 Tablespoons sugar and 1 Tablespoon yeast

Step 2
Whisk well, then rest for 15 minutes at room temperature

Step 3
To a stand mixer, add 3 1/4 cups all-purpose flour, 2 whisked eggs and 2 Tablespoons melted butter, blend well

Step 4
Add the yeasted milk mixture and blend/knead for 2 minutes, or until the dough is smooth, not sticky

Cover bowl with a towel and let the dough rise 30 minutes at room temperature

Dust a working surface with flour and cut the dough into 12 equal-sized pieces

Roll each piece into a ball, then flatten with your fingers or a rolling pin

Rest 30 minutes at room temperature

Make the cheese filling by adding 12 ounces cream cheese to a large bowl, then add 1/4 cup sugar, 1 Tablespoon vanilla extract, 1 Tablespoon rice or potato flour, 1 egg yolk and 2 egg whites that have been whipped until stiff

Mix ingredients until smooth and place in the refrigerator until ready to use

For the crumb topping, add 1/2 cup all-purpose flour to a medium bowl, then add ¼ cup granulated sugar and 1/4 teaspoon baking powder, whisk well

Add 3 Tablespoons softened butter and mix together with your fingers until the mixture has a crumb consistency

For the egg wash, whisk 1 egg yolk with 1 teaspoon water

Use a small glass or cup to create a well in each bun for the cheese filling

Place buns on two baking sheets and fill each bun with the cheese filling, taking care not to overfill or the filling will spill over during baking

Sprinkle the crumb topping over each bun

Place baking sheets in a pre-heated 230 F oven and bake for 15 minutes initially

Remove buns from the oven, brush the dough part of the buns with egg wash, and return to the oven for an additional 12-15 minutes, or until golden brown
