Mashed Potatoes - The World's Food

Homemade rustic skin-on mashed russet potatoes. Made creamy or chunky, this classic is a definite crowd pleaser.
Ingredients
6 large russet potatoes, cut into 2-inch pieces with skin on1 stick (1/2 cup) butter
1 cup milk
2 teaspoons salt, or to taste
1/2 teaspoon pepper, or to taste
Preparation
Step 1
Place potatoes in salted water and bring to a boil
Step 2
Reduce heat, cover pot with lid and simmer potatoes until tender, about 20 minutes
Step 3
Drain potatoes and return to the pot
Step 4
Turn heat to high and dry potatoes for 30 seconds or until any remaining water in the bottom of the pot evaporates. Turn heat off.
Step 5
Mash potatoes twice around the pot using a potato masher
Step 6
Add butter and milk to the potatoes and mash twice more around the pot
Step 7
Add salt and pepper to taste and whisk until desired consistency is reached
