Horchata de Chufa - The World's Food
The World's Food
Yield: 4
Time: 15 minutes + overnight soak
Authentic Spanish horchata made with chufa (tiger nuts), cinnamon and lemon zest. Refreshing!
Ingredients
2 cups (about 12 ounces) raw and dried chufa (also known as tiger nuts)4 1/2 cups water
1/2 teaspoon cinnamon
1 teaspoon lemon zest
2 tablespoons sugar
Preparation
Step 1
Add 2 cups chufa to a large bowl and cover with cold water
Step 2
Soak overnight
Step 3
Drain water from bowl and rinse chufa with cold water
Step 4
Add half of the chufa and 2 ¼ cups cold water to a blender
Step 5
Blend well
Step 6
Add remainder of chufa, an additional 2 ¼ cups cold water, ½ teaspoon cinnamon and 1 teaspoon lemon zest to a blender
Step 7
Blend well
Step 8
Strain out chufa solids using a sieve/strainer, keeping liquid horchata. Press down on the solids in the sieve to save as much of the liquid as possible. It may require several straining steps, depending on the size of the sieve.
Step 9
Add 2 tablespoons sugar to liquid horchata and stir well
Step 10
Place horchata in a refrigerator and rest for 4 hours for flavors to combine
Step 11
Stir well just prior to serving. Serve cold
