Thai Sticky Rice (khao niao) - The World's Food

Time: 5 minutes prep + 30 minutes cook
Thai sticky rice made in a rice cooker. The easiest way to cook sweet/glutinous rice!

Ingredients

2   cups Thai sweet rice (for example, Three Rings Sweet Rice Sanpatong)
1   gallon water for rinsing, or as needed
1 1/3   cups water for cooking

Preparation

Step 1
Add 2 cups Thai sweet rice to a large bowl

Step 2
Rinse and drain rice several times using plenty of water until water runs clear.  These rinse steps begin to rehydrate the rice and remove starchy residue

Step 3
After the last rinse step, drain the water thoroughly from the rice

Step 4
Add the 2 cups rinsed rice to a rice cooker with a Sweet Rice function

Step 5
Add 1 1/3 cups water.  You want a 1 part rice to 2/3 part water ratio for cooking. 
Note: Do not use the sweet rice line in the rice cooker as a measuring guide

Step 6
Use the Sweet Rice function on the rice cooker

Step 7
Immediately after the rice cooker has completed cooking the sticky rice, turn the power off.  Do not keep the rice cooker in Keep Warm mode

Step 8
Fluff rice and serve

Notes:
1. Sticky rice, sweet rice and glutinous rice all refer to the same type of rice.  Just be sure to get the rice from Thailand or Laos.  Sanpatong rice is from San Pa Tong District in Thailand and is highly regarded.  
2. I use a Tiger JAG-S (made in Japan) multifunction rice cooker
