Lemon Bars - The World's Food

Time: 1 1/2 hours prep and bake + 3 hours cool down
Citrusy, sweet and delicious lemon bars that embody the spring season

Ingredients

1/2   pound unsalted butter, room temperature
1/2   cup sugar
1 1/2   teaspoons vanilla extract
2   cups all-purpose flour
1/4   teaspoon salt
7   large eggs, room temperature
3   cups sugar
6   large lemons
2   tablespoons lemon zest
1   cup lemon juice, freshly squeezed
1   cup all-purpose flour
1/4   cup powdered sugar

Preparation

Step 1
Preheat oven to 350 F

Step 2
Line a 9 x 13” casserole dish with parchment paper, 2 inches high

Step 3
Blend 1/2 pound unsalted butter and 1/2 cup sugar in a stand mixer

Step 4
Add 1 1/2 teaspoons vanilla extract, 2 cups flour and 1/4 teaspoon salt, mix well

Step 5
Spread the dough evenly in the prepared casserole dish and bake 18-20 minutes at 350 F

Step 6
Add 7 eggs and 3 cups sugar to a stand mixer and whisk well

Step 7
Add 1 cup lemon juice and 2 Tablespoons lemon zest, whisk well

Step 8
Add 1 cup flour and whisk until smooth

Step 9
Pour lemon filling over the warm crust, then bake 30-45 minutes or until the filling is no longer wobbly in the center.  If the filling begins to brown, loosely cover with foil

Step 10
Remove casserole dish from oven and cool 1 hour at room temperature, then place in the refrigerator and cool an additional 2-3 hours

Step 11
Carefully lift up on the parchment paper to remove from casserole dish, then cut into squares

Step 12
Top lemon bars with powdered sugar just prior to serving
