Giant Chewy Ginger Cookies - The World's Food

These chewy ginger cookies are made with molasses, ginger, cinnamon and cloves, and are a Christmas tradition around the world.

Ingredients

   cups (660 grams) all-purpose flour
2   teaspoons baking soda
4   teaspoons ground ginger
   teaspoons ground cinnamon
1   teaspoon ground cloves
¼   teaspoon salt
   cups vegetable shortening
2   cups granulated sugar
2   eggs
½   cup molasses
1   cup coarse or granulated sugar

Preparation

Step 1
In a medium-sized mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves and salt, then set aside

Step 2
Using a stand mixer, beat shortening until softened

Step 3
Gradually add 2 cups sugar and mix until fluffy

Step 4
Slowly add the flour mixture and carefully mix until fully incorporated.  The dough will be dense once all the flour has been added

Step 5
Using a 2-inch ice cream scoop, portion the dough into balls

Step 6
Roll each ball of dough with your hands, then roll in the coarse or granulated sugar

Step 7
Place each ball of dough on an ungreased baking sheet about 2 inches apart

Step 8
Bake at 350 F for 12-14 minutes, or until cookies are light brown and puffed.  Do not overbake or the cookies will not be chewy

Step 9
Let stand 5 minutes before transferring to a wire rack to cool at room temperature
