Blueberry Cobbler - The World's Food

Time: 1 1/2 hours
Old fashioned cobbler made with fresh blueberries, just like grandmother used to make.
Ingredients
6 cups fresh blueberries3/4 cup sugar
1/4 cup water
3 tablespoons corn starch
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2/3 cup self-rising flour
1/3 cup Krusteaz or Bisquick pancake mix
1 cup sugar
2/3 cup melted butter
1 egg, beaten
1 teaspoon vanilla extract
Preparation
Step 1
Preheat oven to 350 F
Step 2
To make the blueberry filling, first heat a saucepan over medium heat
Step 3
Add water and corn starch and mix well
Step 4
Add lemon juice, blueberries, sugar, cinnamon and nutmeg, then mix ingredients well
Step 5
Bring blueberry filling to a boil, then simmer for 5 minutes or until thickened
Step 6
Pour filling into a 9x13-inch baking dish, then continue by making the topping
Step 7
Add flour, pancake mix and sugar to a large bowl and whisk dry ingredients together
Step 8
Pour in melted butter, 1 beaten egg and vanilla, then mix well with a spatula
Step 9
Using a small ice cream scoop or large spoon, scoop eight balls of batter on top of the blueberry filling. The batter topping will flatten while cooking in the oven
Step 10
Bake at 350 F for 30-45 minutes, or until the topping is nicely browned and the filling is bubbling
Step 11
Serve warm with vanilla ice cream
