Authentic Japanese beef curry with carrots, potatoes and onions, served with rice

Ingredients

1   pound cubed beef
2   tablespoons vegetable oil
2   onions, cut into chunks
3   carrots, cut into chunks
2   potatoes, cut into chunks
2 1/4   cups water
One   3.2-ounce (92 g) box Japanese curry cubes such as S&B Golden Curry

Preparation

Step 1
Preheat a Dutch oven or large pot over medium-high heat

Step 2
Add 2 Tablespoons oil and beef cubes, then brown the beef

Step 3
Transfer beef to a plate and set aside

Step 4
Add onions and stir fry 2-5 minutes

Step 5
Add carrots and potatoes and stir fry another 5 minutes

Step 6
Place beef back into pot, add water and bring to a boil

Step 7
Reduce heat to low, cover pot and simmer 20-30 minutes

Step 8
Turn off heat and add curry cubes

Step 9
Stir 2-3 minutes or until the curry cubes fully dissolve and the curry thickens

Step 10
Serve with steamed rice
