Arctic char

The arctic char or arctic charr (salvelinus alpinus) is a cold-water fish in the family salmonidae, native to alpine lakes and arctic and subarctic coastal waters. its distribution is circumpolar north. it spawns in freshwater and populations can be lacustrine, riverine, or anadromous, where they return from the ocean to their fresh water birth rivers to spawn. no other freshwater fish is found as far north; it is, for instance, the only fish species in lake hazen on ellesmere island in the canadian arctic. it is one of the rarest fish species in great britain and ireland, found mainly in deep, cold, glacial lakes, and is at risk from acidification. in other parts of its range, such as the nordic countries, it is much more common, and is fished extensively. in siberia, it is known as golets (russian: голец) and it has been introduced in lakes where it sometimes threatens less hardy endemic species, such as the small-mouth char and the long-finned char in elgygytgyn lake. the arctic char is closely related to both salmon and lake trout, and has many characteristics of both. the fish is highly variable in colour, depending on the time of year and the environmental conditions of the lake where it lives. the appearance of arctic char differs between populations. the dorsal side of the arctic char is dark in its colour while the ventral varies from red, yellow, and white.arctic char has a distinct size dimorphism, dwarf and giant. dwarf arctic char weigh between 0.2 and 2.3 kg (7 oz and 5 lb 1 oz) and average a length of 8 cm (3 in), while giant arctic char weigh between 2.3 and 4.5 kg (5 lb 1 oz and 9 lb 15 oz) and average 40 cm (16 in) in length. individual fish can weigh 9 kg (20 lb) or more with record-sized fish having been taken by anglers in northern canada, where it is known as iqaluk or tariungmiutaq in inuktitut. generally, whole market-sized fish are between 1 and 2.5 kg (2 lb 3 oz and 5 lb 8 oz). male and female arctic char are the same size.the flesh colour can range from a bright red to a pale pink.

Beef

Beef is the culinary name for meat from cattle (bos taurus). in prehistoric times, humans hunted aurochs and later domesticated them. since that time, numerous breeds of cattle have been bred specifically for the quality or quantity of their meat. today, beef is the third most widely consumed meat in the world, after pork and poultry. as of 2018, the united states, brazil, and china were the largest producers of beef. beef can be prepared in various ways; cuts are often used for steak, which can be cooked to varying degrees of doneness, while trimmings are often ground or minced, as found in most hamburgers. beef contains protein, iron, and vitamin b12. along with other kinds of red meat, high consumption is associated with an increased risk of colorectal cancer and coronary heart disease, especially when processed. beef has a high environmental impact, being a primary driver of deforestation with the highest greenhouse gas emissions of any agricultural product.

Drink

Beer

Beer is one of the oldest and most widely consumed alcoholic drinks in the world, and the third most popular drink overall after water and tea. it is produced by the brewing and fermentation of starches, mainly derived from cereal grains—most commonly from malted barley, though wheat, maize (corn), rice, and oats are also used. during the brewing process, fermentation of the starch sugars in the wort produces ethanol and carbonation in the resulting beer. most modern beer is brewed with hops, which add bitterness and other flavours and act as a natural preservative and stabilizing agent. other flavouring agents such as gruit, herbs, or fruits may be included or used instead of hops. in commercial brewing, the natural carbonation effect is often removed during processing and replaced with forced carbonation.some of humanity's earliest known writings refer to the production and distribution of beer: the code of hammurabi included laws regulating beer and beer parlours, and "the hymn to ninkasi", a prayer to the mesopotamian goddess of beer, served as both a prayer and as a method of remembering the recipe for beer in a culture with few literate people.beer is distributed in bottles and cans and is also commonly available on draught, particularly in pubs and bars. the brewing industry is a global business, consisting of several dominant multinational companies and many thousands of smaller producers ranging from brewpubs to regional breweries. the strength of modern beer is usually around 4% to 6% alcohol by volume (abv), although it may vary between 0.5% and 20%, with some breweries creating examples of 40% abv and above.beer forms part of the culture of many nations and is associated with social traditions such as beer festivals, as well as a rich pub culture involving activities like pub crawling, pub quizzes and pub games. when beer is distilled, the resulting liquor is a form of whisky.

Bison

Bison are large bovines in the genus bison within the tribe bovini. two extant species and numerous extinct species are recognised. of the two surviving species, the american bison, b. bison, found only in north america, is the more numerous. although colloquially referred to as a buffalo in the united states and canada, it is only distantly related to the true buffalo. the north american species is composed of two subspecies, the plains bison, b. b. bison, and the wood bison, b. b. athabascae, which is the namesake of wood buffalo national park in canada. a third subspecies, the eastern bison (b. b. pennsylvanicus) is no longer considered a valid taxon, being a junior synonym of b. b. bison. references to "woods bison" or "wood bison" from the eastern united states refer to this subspecies, not b. b. athabascae, which was not found in the region. the european bison, b. bonasus, or wisent, or zubr, is found in europe and the caucasus, reintroduced after being extinct in the wild. while bison species have been traditionally classified in their own genus, modern genetics indicates that they are nested within the genus bos, which includes, among others, cattle, yaks and gaur, being most closely related to yaks. bison are sometimes bred with domestic cattle and produce offspring called beefalo or żubroń.

Chicken and dumplings

Chicken and dumplings is a soup that consists of a chicken cooked in water, with the resulting chicken broth being used to cook the dumplings by boiling. a dumpling—in this context—is a biscuit dough, which is a mixture of flour, shortening, and liquid (water, milk, buttermilk, or chicken stock). the dumplings are either rolled out flat, dropped, or formed into a ball. it is a popular comfort food dish, commonly found in the southern and midwestern united states, that is also attributed to being a french canadian meal that originated during the great depression. some sources say that chicken and dumplings originated in the southern united states during the antebellum era and was considered a mainstay during harsh economic times. one of the earliest versions of the recipe was cornmeal dumplings cooked with turnip greens. chicken and dumplings as a dish is prepared with a combination of simmered chicken meat, broth produced by simmering the chicken, multiple dumplings, and salt and pepper for seasoning. sometimes finely chopped vegetables, such as carrots and celery, are added to the broth, and herbs such as dill, parsley, thyme, or chives are added to the dumpling dough.

Chicken marsala

Chicken marsala (italian: scaloppine di pollo al marsala) is an italian-american dish of chicken escalopes in a marsala wine sauce. it is a variation of traditional italian scaloppina dishes, of which there are many varieties throughout italy. the dish dates to the 19th century, when it may have originated with english families who lived in western sicily, where marsala wine is produced.slices of chicken breast are coated in flour, briefly sautéed, and then removed from the pan, which is then used to make a marsala reduction sauce. the sauce is made by reducing the wine to nearly the consistency of a syrup while adding garlic. the sauce is then poured over the chicken, which has been kept in a warming oven, and served immediately.as an alternative method, the chicken breasts may be braised in a mixture of marsala wine and butter.

Honey

Honey is a sweet, viscous food substance made by honey bees and some other bees. bees produce honey from the sugary secretions of plants (floral nectar) or from secretions of other insects (such as honeydew), by regurgitation, enzymatic activity, and water evaporation. honey bees store honey in wax structures called honeycombs, whereas stingless bees store honey in pots made of wax and resin. the variety of honey produced by honey bees (the genus apis) is the best-known, due to its worldwide commercial production and human consumption. honey is collected from wild bee colonies, or from hives of domesticated bees, a practice known as beekeeping or apiculture (meliponiculture in the case of stingless bees). honey gets its sweetness from the monosaccharides fructose and glucose, and has about the same relative sweetness as sucrose (table sugar). fifteen millilitres (1 us tablespoon) of honey provides around 190 kilojoules (46 kilocalories) of food energy. it has attractive chemical properties for baking and a distinctive flavor when used as a sweetener. most microorganisms do not grow in honey, so sealed honey does not spoil, even after thousands of years. honey use and production have a long and varied history as an ancient activity. several cave paintings in cuevas de la araña in spain depict humans foraging for honey at least 8,000 years ago. large-scale meliponiculture has been practiced by the mayans since pre-columbian times.

Spruce

Spruce beer is a beverage flavored with the buds, needles, or essence of spruce trees. spruce beer can refer to either alcoholic or non-alcoholic beverages. a number of flavors are associated with spruce-flavored beverages, ranging from floral, citrus, and fruity, to cola-like flavors to resinous and piney. this diversity in flavor likely comes from the choice of spruce species, the season in which the needles are harvested, and the manner of preparation. using evergreen needles to create beverages originated with the indigenous peoples of north america who used the drink as a cure for scurvy during the winter months when fresh fruits were not available, as the fresh shoots of many spruces and pines are a natural source of vitamin c. it may also have been brewed in scandinavia prior to european contact with the americas, but most french and british explorers were ignorant of its use as a treatment for scurvy when they arrived in north america. the first nations people were probably first to brew it and it was used to prevent scurvy by jacques cartier and his explorers when they arrived in stadacona in what is now quebec in 1535. european sailors adopted the practice and subsequently spread it across the world.

Drink

Wine

Wine is an alcoholic drink typically made from fermented grapes. yeast consumes the sugar in the grapes and converts it to ethanol and carbon dioxide, releasing heat in the process. different varieties of grapes and strains of yeasts are major factors in different styles of wine. these differences result from the complex interactions between the biochemical development of the grape, the reactions involved in fermentation, the grape's growing environment (terroir), and the wine production process. many countries enact legal appellations intended to define styles and qualities of wine. these typically restrict the geographical origin and permitted varieties of grapes, as well as other aspects of wine production. wines not made from grapes involve fermentation of other crops including rice wine and other fruit wines such as plum, cherry, pomegranate, currant and elderberry. wine has been produced for thousands of years. the earliest evidence of wine is from the caucasus region in today's georgia (6000 bce), persia (5000 bce), and italy (4000 bce). new world wine has some connection to alcoholic beverages made by the indigenous peoples of the americas, but is mainly connected to later spanish traditions in new spain. later, as old world wine further developed viticulture techniques, europe would encompass three of the largest wine-producing regions. today, the five countries with the largest wine-producing regions are in italy, spain, france, the united states, and china.wine has long played an important role in religion. red wine was associated with blood by the ancient egyptians and was used by both the greek cult of dionysus and the romans in their bacchanalia; judaism also incorporates it in the kiddush, and christianity in the eucharist. egyptian, greek, roman, and israeli wine cultures are still connected to these ancient roots. similarly the largest wine regions in italy, spain, and france have heritages in connection to sacramental wine, likewise, viticulture traditions in the southwestern united states started within new spain as catholic friars and monks first produced wines in new mexico and california.
