Funny name but a heavenly cheesy potato casserole topped with crispy panko

Ingredients

2     sticks (1 cup) butter, divided
3/4     cup diced onion, about one-half of a large onion
1     can (10.5 oz) cream of chicken condensed soup
2     cups (16 oz) sour cream
1     cup (4 oz) shredded sharp cheddar cheese
1     cup (4 oz) shredded Monterey Jack cheese
1/2     teaspoon kosher salt
1/4     teaspoon freshly ground black pepper
30     oz frozen shredded hash browns
1     cup panko bread crumbs

Preparation

Step 1
Preheat oven to 350 F 

Step 2
Melt 1 stick butter in a Dutch oven over medium heat

Step 3
Add onion and sauté until translucent

Step 4
Remove from heat

Step 5
Add soup, sour cream, cheddar cheese, Monterey Jack cheese, salt and pepper

Step 6
Stir until blended well

Step 7
Add hash browns and mix again

Step 8
In a separate small bowl, melt 1 stick of butter using a microwave, then add panko and mix

Step 9
Spread panko topping evenly over the top of the casserole, cover with lid and bake 40 min

Step 10
Remove lid and bake an additional 5-10 min, or until the topping is golden brown

Step 11
Rest at room temperature 10 minutes before serving
