Pulled Pork - The World's Food

Smoky, tender and delicious! Southern style pulled pork on a pellet grill.

Ingredients

9     pound pork shoulder (Boston butt)
1/2     cup dry rub (Lambert's, Killer Hogs...), or to taste
1     pellet grill (Traeger, Green Mountain Grill...)
10     pounds wood pellets (pecan, competition, post oak, cherry...), or as needed
2     raised grill racks

Preparation

Step 1
Score the fat side with a crosshatch pattern. This helps render the fat during cooking

Step 2
Generously season pork on all sides and rest 30 minutes

Step 3
Place raised grill racks in pellet smoker and preheat smoker to 250 F

Step 4
Place seasoned pork fat side up on upper rack and smoke 3 hours

Step 5
After this first 3-hour cook step, begin by spraying all sides with a 50% apple cider solution. Do not spray the fat side since that cools the fat and slows the rendering process

Step 6
Spray every 30-45 minutes until internal temperature reaches 170 F (about 5-6 hrs total)

Step 7
Wrap pork tightly in two layers of heavy duty aluminum foil and place in a 300 F oven

Step 8
Cook until the internal temp reaches 203 F (about 2-3 hours) and it feels like the temperature probe is being inserted in butter

Step 9
Place wrapped pork in a cooler and rest at room temp 2 hours

Step 10
Remove the bone and shred the pork

Step 11
Serve on hamburger buns with coleslaw (on top or on the side), BBQ beans, hush puppies
