Cornmeal fritters perfect with fried catfish, seafood and southern BBQ

Ingredients

1 1/2     cups cornmeal
1/2     cup self-rising flour
1 1/2     Tablespoons baking powder
1/2     teaspoon baking soda
1     teaspoon salt
1     small onion, chopped
1     egg, beaten
1     cup buttermilk

Preparation

Step 1
Preheat oil in deep-fryer or large skillet to 350 F

Step 2
In a large bowl, mix together cornmeal, flour, baking powder, baking soda and salt

Step 3
Add onion and mix

Step 4
In a small bowl, stir together buttermilk and egg, then add to dry ingredients and mix well

Step 5
Shape batter into small 1-inch balls and carefully drop into the hot oil

Step 6
Fry until golden brown and cooked through, about 3 minutes

Step 7
Rest hush puppies on a paper towel-lined plate and serve hot
