Step 1
Preheat oven to 400 F
Step 2
Wash and dry potatoes, prick several times with a fork, place on a baking sheet and bake in oven until cooked thoroughly and soft in the center, about 1 hour
Step 3
Cut potatoes into large chunks, then place in an oiled skillet
Step 4Layer the cheddar cheese, pulled pork (
recipe) and BBQ sauce on top of the potatoes
Step 5
Bake in the oven for 25 minutes, or until the cheese is bubbly and everything is hot throughout
Step 6
Serve with sour cream and topped with green onions, if desired
