Step 1
Heat a cast-iron skillet over medium-high heat on the stove top
Step 2
For each burger, form two 1/4-pound ground brisket patties and place cheese inside. Do not overwork the brisket meat
Step 3
Place the second patty on top of the first patty with the cheese and press the edges of the patties together so they seal well
Step 4
Place the patty in the smoking hot skillet and season with salt and pepper
Step 5
Cook each side 3-4 minutes or until a nice char develops and the meat is cooked through
Step 6
Remove the patty from the skillet and set aside
Step 7
Brown the hamburger buns in the skillet
Step 8
Assemble the Juicy Lucy by first placing the pickles on the bottom bun, then the patty, and lastly the top bun
Step 9
Serve with toppings of your choice, fries, salad, coleslaw, baked beans, potato salad
This is my variation of the popular regional Juicy Lucy burger from Minnesota.
To grind the brisket trimmings, use the medium sized grinding plate.
