Red Iguana’s original recipe for their famed Tacos Don Ramon! White corn tortillas are fried in chorizo oil, giving them incredible flavor, then filled with top sirloin tips and pork chorizo, and topped with lettuce, avocado sauce and cotija cheese. Tacos Don Ramon is a signature dish at Red Iguana in Salt Lake City, a local favorite for authentic moles and more.

Ingredients

12     white corn tortillas
1 1/2     pounds top sirloin tips, diced
1/2     pound pork chorizo, store bought or homemade (see recipe links)
1/2     shredded iceberg lettuce
4     ounces cotija cheese
8     ounces pico de gallo
12     lime wedges
2     avocados
1/2     cup cilantro, stemmed
1     jalapeño chile
1     large Anaheim chile
1/4     medium white onion
2     cloves garlic
3/4     to 1 cup water, or as needed
1     teaspoon salt
1/4     teaspoon black pepper

Preparation

Step 1
In a blender, combine avocados, cilantro, jalapeno chile, Anaheim chile, onion, garlic, water, salt and pepper

Step 2
Puree until smooth, adding water as needed to reach a smooth consistency similar to an emulsified dressing

Step 3
Set avocado sauce aside

Step 4
Brown top sirloin and chorizo on a flat-top over medium heat

Step 5
Crisp tortillas in the chorizo oil

Step 6
Add meat to tortillas and top with lettuce, avocado sauce and cotija cheese

Step 7
Serve with pico de gallo and lime wedges
