Mamie Eisenhower’s Fudge - The World's Food

Time: 45 minutes prep + overnight cool down

Mamie Eisenhower’s famous chocolate fudge made four ways: Fudge only, with walnuts, candy canes or caramel. So many choices!

Ingredients

12     ounces semi-sweet chocolate chips
12     ounces milk chocolate chips
2     cups marshmallow crème
12     ounces evaporated milk
4 1/2     cups sugar
2     tablespoons butter
1/8     teaspoon salt
1/2     cup toppings or add-ins such as nuts, candy cane pieces, marshmallows

Preparation

Step 1
Add chocolate chips and marshmallow crème to a large bowl and mix well

Step 2
To a saucepan over medium-high heat add evaporated milk, sugar, butter and salt

Step 3
Bring to a boil, then boil for 1 minute

Step 4
Reduce heat and simmer 7 minutes while stirring continuously

Step 5
Pour the hot syrup over the chocolate mixture and very carefully stir until smooth

Step 6
Spray a 9x13 inch casserole dish with nonstick cooking spray, or coat using butter

Step 7
Add half of the warm chocolate mixture to the casserole dish and spread evenly

Step 8
Top this chocolate layer with nuts, candy cane pieces, caramel or any ingredients of your choice in separate areas of the casserole dish

Step 9
Pour the remainder of the chocolate mixture over the add-ins and spread evenly

Step 10
Top this upper chocolate layer with ingredients of your choice

Step 11
Cool fudge at room temperature until firm, preferably overnight

Step 12
Cut into small squares and serve.  Store in an airtight container for up to two weeks.
