Avocado Toast - The World's Food

Crusty bread topped with ripe avocados, perfectly poached eggs, cherry tomatoes, mozzarella balls, Everything But The Bagel Seasoning and chives. It is a delicious and healthy way to start the day. Enjoy!

Ingredients

1-2     slices bread (boule, whole wheat, sourdough)
1-2     avocados, cut into large chunks
2     eggs, poached
8     petite tomatoes, cut into sections
6     small mozzarella balls
1     teaspoon chives, diced
1     teaspoon Everything But The Bagel Seasoning, or to taste
1     teaspoon balsamic vinegar glaze, if desired

Preparation

Step 1
Butter and toast sliced bread in a panini press until golden brown, or toast unbuttered bread in a toaster

Step 2
Heat 3-inch-deep water in a pot until gently simmering

Step 3
Mix 1 cup vinegar with 1 cup water in a bowl

Step 4
Add eggs to the vinegar and water solution

Step 5
Soak eggs for 12 minutes or until eggs become opaque

Step 6
Carefully remove eggs from the vinegar and water solution and gently ladle them into the pot of hot water

Step 7
Poach eggs 3 minutes or until they reach desired consistency

Step 8
Assemble avocado bruschetta by topping toasted bread with avocado chunks, poached eggs, Everything But The Bagel seasoning, tomatoes, mozzarella and chives
