Beef tallow creates perfectly crispy, incredibly delicious French fries.

Ingredients

2     large russet potatoes
2     cups hot water
1/4     cup white sugar
2     Tablespoons corn syrup
24-48     ounces beef tallow, depending on the size of your deep-fryer or Dutch oven
24-48     ounces vegetable shortening
1/8     teaspoon sea salt, or to taste

Preparation

Step 1
In a loaf pan or large bowl, add the hot water, sugar and corn syrup. Mix well

Step 2
Peel the potatoes, if desired

Step 3
Cut potatoes into 1/4-5/16” shoestrings

Step 4
Add potatoes to loaf pan, gently agitate, then refrigerate 30 minutes

Step 5
During this time, preheat 50/50 beef tallow/shortening to 350 F

Step 6
Remove potatoes from refrigerate and drain

Step 7
Fry step #1: Carefully lower potatoes into hot oil and fry 1 1/2 minutes, carefully agitating to prevent clumping

Step 8
Remove potatoes from hot oil and place on a paper towel-lined plate

Step 9
Cool in refrigerator 10 minutes

Step 10
Fry step #2: Add potatoes to hot oil and fry until golden brown and cooked through, about 4 min, gently agitating as needed

Step 11
Remove fries from hot oil, gently shake to remove excess oil, and place in a large bowl

Step 12
Salt to taste and toss fries to coat evenly

Serve hot and enjoy!
