Rompope - The World's Food

Rompope is an eggnog-like drink made with cinnamon, cloves, nutmeg and rum, and is popular during Christmas

Ingredients

1     cup milk
1     cup evaporated milk
1/4     teaspoon ground cinnamon
2     whole cloves
1/2     cup sugar
3     egg yolks
4     ounces (1/2 cup) rum, or to taste. I recommend Ron Centenario (Costa Rica), Ron Abuelo (Panama), Fleur de Caña (Nicaragua)
1/4     teaspoon freshly grated nutmeg

Preparation

Step 1
Heat a medium saucepan over low heat

Step 2
Add 1 cup milk, 1 cup evaporated milk, 1/4 teaspoon cinnamon and 2 whole cloves

Step 3
Slowly heat this milk mixture, stirring often

Step 4
Meanwhile, in medium mixing bowl, add 1/2 cup sugar and 3 egg yolks

Step 5
Mix well, then add egg mixture to the milk mixture

Step 6
Mix well and continue heating over low heat until mixture slightly thickens and bubble subside, about 10-15 minutes. Do not boil

Step 7
Remove from heat, cover and refrigerate 1-2 hours or until completely chilled

Step 8
Remove eggnog from refrigerator, remove and discard the two cloves

Step 9
Add about 1 cup eggnog to each of two glasses

Step 10
Add 2-3 ounces (1/4-1/3 cup) rum to each glass and stir well

Step 11
Top with freshly grated nutmeg to taste, serve cold

My rating: 9/10. The eggnog is creamy and delicious, the spices are well balanced and the rum adds a sweet, toasted sugar profile.
